NUTTY ORANGE BISCOTTI

Steps:
- In a large bowl, beat the eggs and sugar together at high speed with an electric mixer until foamy, about 5 minutes. Add the orange zest and juice, oil, almond extract and vanilla extract, beating until blended. Sift the flour and baking powder together and add to the egg mixture, beating well. Fold in the almonds by hand. Remove the dough to plastic wrap, wrap and freeze until firm, about 30 minutes.
- Meanwhile, preheat the oven to 325 degrees F. Spray a baking sheet with nonstick cooking spray. Divide the dough in half. Spray your hands lightly with nonstick cooking spray and shape each portion into a 5-by-8-inch log on the baking sheet. Bake until firm, about 25 minutes. Cool the logs on the baking sheet for 5 minutes, then transfer to wire racks to cool completely, about 15 minutes.
- Using a serrated knife, cut each log diagonally into 1/2-inch slices. Return the biscotti to the baking sheets and bake for 15 minutes. Turn the cookies over and bake for 15 more minutes. Cool on wire racks.
PISTACHIO BISCOTTI
Steps:
- Preheat the oven to 350 degrees F.
- Lay the pistachios on a cookie sheet in a single layer. Bake for 10 minutes or until the nuts are lightly toasted. Remove from the oven.
- In an electric mixer, beat the butter until light and fluffy. With the mixer running, gradually add the eggs, sugar, and vanilla; mix until creamed. Add the flour, baking powder, and salt. Mix the dough until smooth. Using a wooden spoon, mix in the pistachios until evenly distributed.
- Put the dough on a lightly floured surface and cut in half. Roll each half into a log, each 12 inches long by 1-inch high. Place the logs on an ungreased cookie sheet and bake for 35 minutes or until the bottoms are lightly brown. Let the logs cool for 5 minutes and then place on a cutting board. Slice each log on a diagonal into 12 1-inch thick pieces. Put the cookies back on the cookie sheet and bake 5 minutes. Turn the cookies over and bake the other side for another 5 minutes. Store cookies in an airtight container.
CINNAMON BISCOTTI WITH PISTACHIOS
Delicious cinnamon biscotti that go great with coffee or tea. Cinnamon chips (found next to chocolate chips) give it an extra burst of cinnamon. Co-workers request that I make these regularly and bring to work for the morning coffee break.

- Preheat oven to 350 degrees F (175 degrees C). Line a large baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking powder, salt, cinnamon, and cloves until well mixed. With an electric mixer on medium speed, beat the butter and sugar together in a separate large bowl until light and fluffy; beat in the eggs, one at a time. Mix in the vanilla extract. Stir in the flour mixture just until incorporated, and mix in the cinnamon chips and pistachio nuts.
- Divide the dough in half. With floured hands, shape each half into a log about 9 inches long, and place on the prepared baking sheet. Brush the logs with beaten egg white.
- Bake in the preheated oven until the logs are golden brown, 30 to 35 minutes. Remove from oven and let cool until easy to handle. Reduce oven heat to 325 degrees F (165 degrees C). Remove parchment paper from baking sheet.
- Using a serrated knife with a light sawing motion, cut the logs apart into 1/2-inch thick biscotti. Place the biscotti onto the baking sheet, and return to oven.
- Bake in the oven until the biscotti are lightly toasted, about 10 minutes; remove from oven, turn the biscotti over, and toast the other sides for an additional 10 minutes. Allow to cool on wire racks.

This is yet another wonderful, fabulous, delightful recipe from Alice Medrich ("Cookies and Brownies"). It took me a lot of work to track down this cookbook, which is out of print -- everything I've made from it has been first-rate. They need to bring this back into print!

- Preheat oven to 300. Position rack in the middle of oven.
- Combine flour, baking soda, and salt; mix thoroughly with fork.
- Whisk together the eggs, sugar, vanilla and orange extracts, and orange zest in a medium bowl.
- Mix in the orange juice.
- Using a rubber spatula, stir in dry ingredients until just combined.
- Stir in chocolate chips.
- The batter will be thick and sticky (typical biscotti batter). Scrape the batter onto a baking sheet. (I cover my baking sheet with aluminum foil, then spray it with baking spray.) Using two spatulas, divide batter into two loaves, about 14" long and about 2.5" wide. Try to put at least 2.5" between the loaves; straighten the edges of the loaves with spatulas.
- Bake for 35 minutes, or until firm but springy when pressed with fingers.
- Cool for ten minutes in the pan. Then move loaves to a cutting board, and with a sharp knife (serrated is best), slice loaves on teh diagonal in 1/2" slices.
- Lay the biscotti on the baking sheet, cut side down, and bake for another 12 minutes.
- Take the biscotti out of the oven, turn them over, and bake another 12-15 minutes, or until golden brown.
- Note: If you don't want the biscotti to pick up a darker color, handle the second baking this way: Rather than laying the slices cut-side down, stand them upright, and bake them for a total of 24-30 minutes.
- Remove the biscotti from the oven and cool on a cooling rack.
- Medrich notes that the flavor will become stronger, and the biscotti will become more tender, after being stored for 2-3 days in an airtight container.
PISTACHIO AND ORANGE BISCOTTI
The ideal biscuit to dunk into your flat white.. or a cute festive gift. Alter the flavours to your fancy, retaining the liquid to nut ratio all combinations are delicious, hazelnut and baileys is a favourite!

- Preheat oven to 180C. Line a large baking sheet with baking paper. Separate your eggs, retaining 1 yolk and 3 whites. Discard remaining 2 yolks.
- Combine the flour, sugar, ground almonds, bicarb and baking powder and sieve into a mixing bowl. Add the egg yolk, egg whites and orange juice to the dry ingredients, hand mix until well combined, should be a sticky consistency. Now add in your pistachios and orange zest, again hand mix to make sure they're well distributed throughout the dough.
- Half the mixture and shape into two logs, on your prepared baking tray. Bake for 30 minutes.
- Remove from the oven and let cool until you can handle it. Cut each log into 1cm diagonal slices. Lay each slice on the baking tray and return to the oven for a further 8-10 minutes. They should be browned around the outside but still pale in the centre (reference picture), but throughly dried out for that classic biscotti *SNAP*

- Heat oven to 325 degrees.
- Position rack in center of oven.
- Combine flour, baking powder and salt in a medium bowl and set aside.
- Whisk eggs, sugar, butter, oil, vanilla and almond extracts and lemon peel in a large bowl.
- Gradually stir in dry ingredients until smooth.
- Stir in nuts.
- Form dough into a 15x4 ½-inch log or prepared sheet.
- Bake 30 minutes until edges are lightly browned and toothpick inserted comes out clean.
- Cool for 15 minutes.
- Keep oven on.
- With serrated knife, cut log on angle into 18 ½" thick slices.
- Lay slices flat on cookie sheet and bake until bottom of cookie turn golden about 10-12 minutes.
- Turn cookies over and bake 10-12 minutes more.
- Cool cookies on wire racks.
- Note: if you can't find pistachio, you can substitute almonds.

- Make the biscotti dough. In a stand mixer with a paddle attachment, cream the butter, sugar, orange zest, and vanilla extract together until it is light and fluffy. Add one egg at a time, making sure each egg is well incorporated before adding the next. In a separate bowl, combine the all purpose flour, baking powder, and salt. Whisk the mixture together until it is well combined. Gradually add the flour mixture to the egg mixture. Mix until it's combined, but do not over mix. Use a rubber spatula to stir in the pistachio nuts.
- Shape the dough into logs. Preheat the oven to 325 degrees and line a baking sheet with parchment paper. Flour your work surface, then dump the dough out onto it and divide it in half. Flour your hands before shaping the dough. Divide the biscotti dough in half if you want smaller biscotti cookies, or you can shape it into one large log so it makes larger biscottis.One log: Shape the biscotti dough into a 12-inch long, 4-inch wide log, then flatten the edges to the pan.Two logs: Divide the biscotti dough in half. Shape the logs into 10 inches long, 3-4 inch wide logs.
- Make the egg wash. Combine the egg white and water, then whisk until little bubbles form. Use a pastry brush to brush the egg wash onto the top of the biscotti logs. Sprinkle the tops with sugar.
- First bake. Place the pan in the oven and bake the biscotti log for 30 minutes if you are making two logs, or 40 minutes if you are making one large log. Remove the pan from the oven and let it cool for 10 minutes. Cut the biscotti diagonally with a serrated knife so they are 1 1/2 inch thick. Place the biscottis on their sides back on the pan.
