HOMEMADE CHEESE BREAD - EXTRA SOFT
You only need a handful of basic ingredients to make homemade cheese bread. This soft buttery yeasted bread is twisted up with cheddar cheese, but you can use any cheese variety you love. Bake the bread in a loaf pan, then slice it to reveal the 2 cups of swirled cheese inside. See recipe notes for make ahead and freezing instructions.

Steps:
- Whisk the warm buttermilk, warm water, yeast, and sugar together in the bowl of your stand mixer fitted with a dough hook or paddle attachment. Cover and allow to sit for 5 minutes.
- Add the butter, egg, salt, garlic powder, and 1 cup flour. Beat on low speed for 30 seconds, scrape down the sides of the bowl with a rubber spatula, then add the remaining flour. Beat on low speed until the dough comes together and pulls away from the sides of the bowl, about 2 minutes. *If you do not own a mixer, you can mix this dough with a large wooden spoon or rubber spatula. It will take a bit of arm muscle!*
- Keep the dough in the mixer and beat on low speed for an additional 2 minutes or knead by hand on a lightly floured surface for 2 minutes. (See video tutorial above if you need a visual of kneading dough by hand.)
- Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise in a relatively warm environment for 1.5-2 hours or until double in size. (I always let it rise on the counter. Takes about 2 hours. For a tiny reduction in rise time, see my answer to Where Should Dough Rise? in my Baking with Yeast Guide.)
- Grease a 9×5 inch loaf pan.
- Punch down the dough to release the air. Place dough on a lightly floured work surface and with a floured rolling pin, roll the dough out into a 9×15 inch rectangle (approximately). Sprinkle cheese all over the top, leaving a 1/2 inch border uncovered.
- Watch the video above to see exactly how I do this step. Tightly roll the dough into a 15-inch log. Place the log on its seam. Using a sharp knife, cut the log in half lengthwise. I find a serrated knife works best. Criss-cross one half, cut side down, on top of the other half- forming an X. Tightly twist the two together. Pinch the outer edges to seal as best you can. If you have any leftover cheese, cut a few small squares and tuck into the dough as shown in the video above. This is optional and simply for extra cheesy pockets! Place in prepared loaf pan and cover with aluminum foil, plastic wrap, or a clean kitchen towel. (This step can get a little messy.)
- Allow the covered loaf to rest for 30 minutes. It will slightly rise during this time.
- Adjust the oven rack to the lower third position. Place a baking sheet on the lower rack to catch any cheese or butter that may drip down. Preheat the oven to 350°F (177°C).
- Whisk the melted butter, herbs, and garlic powder together. Drizzle or brush on top of dough.
- Bake until golden brown and, when gently tapped, the top of the loaf sounds hollow, about 45-55 minutes. If you find the top of the loaf is browning too quickly as it bakes, tent with aluminum foil. (I usually place foil on top after about 25 minutes.) Remove bread the oven and place on a wire rack. Cool for 10 minutes in the pan, then remove from the pan and cool loaf on the wire rack.
- Slice and serve. Cover and store leftovers at room temperature for 2 days or in the refrigerator for up to 1 week. Leftover slices taste delicious when warmed in the microwave for 10 seconds.
SPINACH CHEDDAR HOLIDAY ROLLS
We layer spinach, sharp Cheddar and scallions on a sheet of refrigerated crescent dough, and stud it with roasted red peppers for a festive pop of color. Rolled into a log, sliced into rounds and baked until golden, these pinwheels resemble holiday wreaths, and will be a welcome addition to your holiday breadbasket without laboring over time-consuming dough.

- Preheat the oven to 350 degrees F and line an 18-by-13-inch baking sheet with parchment paper.
- Unroll the crescent dough (do not separate into individual pieces) and pat into an 8-by-12-inch rectangle, gently pressing the seams closed. Brush evenly with the mustard and then then top with the spinach, Cheddar, scallions and peppers, leaving a 1/2-inch border all the way around. Sprinkle with 1/2 teaspoon salt.
- Starting with a short side, roll the dough sheet into a log. Slice into 8 pinwheels and transfer to the prepared baking sheet. Bake until golden, 18 to 20 minutes.

- In a large bowl, combine 2 cups flour, sugar, salt and yeast. In a saucepan, heat milk and butter to 120°-130°. Add to dry ingredients; beat until smooth. Stir in cheese and enough remaining flour to make a soft dough. Do not knead. Cover and let rise in a warm place until doubled, about 45 minutes (dough will be soft)., Punch dough down; divide into 3 portions. Shape each portion into 12 balls. Place in 3 greased 9-in. round baking pans. Cover and let rise in a warm place until nearly doubled, about 30 minutes. Brush with egg white. Bake at 350° for 20-25 minutes or until golden brown.

- Set oven to 375 degrees F.
- Grease a large cookie sheet.
- Separate dough at the perforations.
- Seal together two triangles at the perforations firmly to make 8 squares total.
- In a small bowl, combine cheese and onions; mix well.
- Spoon a "scant" 1/4 cup cheese/onion mixture in a 1-inch strip down the center of each rectangle to within 1/4-inch of each end.
- Fold dough in half lenghwise to form a long strip.
- Firmly press edges to seal.
- Twist strip 4-5 times.
- Bring ends together to form a ring shape; pinch to seal.
- Place on a greased cookie sheet.
- In a small bowl using a fork or small whisk, mix the egg with 1 teaspoon water and brush over the dough.
- Sprinkle with sesame seeds and garlic salt (if using).
- Bake for 15-20 minutes or until golden brown.
- Immediately remove from cookie sheet.
- Cool 5 minutes on wire rack.
- Serve warm.

- Separate crescent roll dough into eight rectangles. press seams to seal. Combine cheese and onions; spoon about 3 rounded tablespoonsfuls lengthwise down the center of each rectangle to within 1/4 inch of each end. Fold dough in half lengthwise and firmly press edges together to form a seal. Twist each strip 4-5 times then bring ends together to form a ring. Pinch to seal. Place on a greased baking sheet.
- In a small bowl, beat egg and water. Brush over dough. Combine the sesame seeds, garlic salt and parsley and sprinkle over rings.
- Bake at 375° for 14-16 minutes or until golden brown. Remove to wire racks. Serve warm.

- Grate 6 oz. cheese on the medium holes of a box grater. Line 2 baking sheets with parchment paper. Arrange racks in upper and lower thirds of oven; preheat to 400°.
- Dust work surface lightly with flour and unfold or unroll puff pastry on surface. Roll out lightly with a rolling pin to smooth creases, then cut pastry in half crosswise.
- Mix 1 egg yolk and 1 tsp. water with pastry brush in a small bowl. Lightly brush egg wash across surface of 1 piece of pastry.
- Using your fingertips and holding your hand at least 8" above the surface, sprinkle ½ tsp. paprika, then ⅛ tsp. cayenne over cheese. Season with salt (go easy if you’re already using a salty cheese like Parm), then very generously season with black pepper.
- Place second sheet of puff pastry over top, aligning edges, and press gently to flatten. Lightly brush surface of second sheet with more egg wash.
- Sprinkle with remaining cheese, paprika, and cayenne; season with salt and pepper.
- Dust rolling pin with a bit more flour. Gently roll over top of pastry (yes, you’re rolling directly over the cheese). If bottom layer of pastry starts to stick, dust underneath with more flour, or if rolling pin starts to stick to cheese, dust pin with more flour.
- Using your knife, cut rectangle into ½"-thick strips. For fewer straws that are longer, cut lengthwise. For more straws that are shorter (and easier to handle), cut crosswise.
- Working one strip at a time, transfer to prepared sheets and twist 2 ends in opposite directions several times. Repeat, spacing twists about 1" apart, until you’ve used all the pastry and filled both sheets.
