CIDER VINEGAR BARBECUE SAUCE
I'm from the south where barbecue sauces are vinegar based, I now live in CO where it is ketchup based... which I really don't care for. This sauce goes with everything from chicken to pulled pork. This is what I make when I want a taste of home.

- Mix all ingredients in saucepan over med. heat.
- Simmer 8-10 minute or until sugar is fully dissolved.

APPLE CIDER BARBECUE SAUCE
Use this easy homemade sauce when making our Smoked Pulled-Pork Sandwiches.

Steps:
- Place peppercorns in a square of cheesecloth, and tie securely with kitchen twine. In a small stockpot, combine all the ingredients, and bring to a boil over medium-high heat.
- Reduce heat to medium low, and simmer sauce until thickened, about 1 1/2 hours. Pass sauce through a strainer, and discard solids.
SLOW COOKER BBQ APPLE CIDER PULLED PORK
Pulled pork made in a slow cooker with apple cider. One of the best and easiest pulled pork recipes I've ever used. Serve in a sandwich, or as desired.

Steps:
- Place pork into the bottom of a slow cooker and pour cider over the meat until it is covered. Add brown sugar and cinnamon, making sure they're in the cider and not on the sides of the slow cooker.
- Cover and cook on Low until pork shreds easily, 7 to 12 hours.
- Transfer pork carefully to a plate or bowl, being careful it doesn't fall apart in the cider. Shred using 2 forks. Stir in barbecue sauce.

APPLE BARBECUE SAUCE!
Adapted from a recipe by Mike Mills. This sauce is smooth and on the thin side, and it seeps down into the meat. Mike Mills is the only person to win three Grand World Champion titles at the Memphis in May International Barbecue Festival. He is also barbecue guru and partner at Danny Meyer's Blue Smoke restaurant in New York City and owner of six notable barbecue joints, two in Southern Illinois and four in Las Vegas. - Mix together the ketchup, rice vinegar, apple juice or cider, cider vinegar, brown sugar, soy sauce, Worcestershire sauce, mustard, garlic powder, white pepper, cayenne, and bacon bits in a large saucepan.
- Bring to a boil over medium-high heat. Stir in apple, onion, and bell pepper. Reduce the heat and simmer, uncovered, 10 to 15 minutes or until it thickens slightly. Stir it often.
- Allow to cool, then pour into sterilized glass jars. Refrigerate for up to 2 weeks.
- VARIATION: To make this sauce a little hotter, add more cayenne pepper to taste, approximately another 1/4 to 1/2 teaspoon. Be careful; a little cayenne goes a long way.

Steps:
- Add the ketchup, sugar, applesauce, vinegar, apple juice, garlic powder, ground ginger, liquid smoke, onion powder, salt and apples to a medium saucepot and set over medium heat. Stir and bring to a simmer. Simmer for 15 to 20 minutes to reduce, then remove from the heat. Puree the sauce until smooth. Serve warm or cool and store refrigerated in an airtight container.
