Steps:
- In the bowl of an electric mixer fitted with the whisk attachment, combine the heavy cream, mascarpone, sugar, coffee liqueur, cocoa powder, espresso powder, and vanilla. Mix on low speed to combine and then slowly raise the speed, until it forms firm peaks.
- To assemble the cake, arrange chocolate chip cookies flat in an 8-inch springform pan, covering the bottom as much as possible. (I break some cookies to fill in the spaces.) Spread a fifth of the mocha whipped cream evenly over the cookies. Place another layer of cookies on top, lying flat and touching, followed by another fifth of the cream. Continue layering cookies and cream until there are 5 layers of each, ending with a layer of cream. Smooth the top, cover with plastic wrap, and refrigerate overnight.
- Run a small sharp knife around the outside of the cake and remove the sides of the pan. Sprinkle the top with the chocolate, cut in wedges, and serve cold.

FOUR-LAYER MOCHA CREAM CAKE
A mocha whipped cream filling rests between four layers of rich, moist chocolate cake. This lovely, decadent dessert is much easier to prepare than it sounds! You can eat it right away, but it tastes better chilled. Decorate with shaved chocolate if desired. Enjoy!

MOCHA CAKE III
A friend made this for our group and we have been hooked on it ever since. Try it. It's so rich, moist, and easy, you'll be hooked too! Note: I have replaced the sour cream with 16 ounces of plain yogurt, (not fat-free!), with great success. The taste is just as good to me with a lot less fat. However, do not use low-fat or fat-free sour cream, as it will NOT turn out well!

- Meanwhile, using electric mixer, beat whites in large bowl to soft peaks.
- Gradually beat hot syrup into whites. Continue beating until medium-stiff peaks form, about 3 minutes. Fold 1/3 of meringue into lukewarm chocolate mixture to lighten. Fold in remaining meringue. Set chocolate meringue aside.
- Combine 1/4 cup cream and 5 teaspoons coffee powder in large bowl; stir to dissolve. Add 2 1/2 cups cream, powdered sugar and cinnamon and beat until firm peaks form. Fold 1 1/2 cups coffee whipped cream into chocolate meringue, forming mocha mousse.
- Spoon half of mocha mousse over bottom of crust. Sprinkle 3 tablespoons reserved crumb mixture over mousse. Spoon half of coffee whipped cream over crumbs. Sprinkle with 3 tablespoons crumbs. Repeat layering with remaining mocha mousse, crumbs, coffee whipped cream and crumbs. Cover and refrigerate until set, about 4 hours. (Can be made 2 days ahead; keep refrigerated.) Run knife around pan sides to loosen torte. Remove pan sides and serve.

- Have cake layers and buttercream ready to assemble. Brush the two cake layers with Low FODMAP Coffee Liqueur. Toss together the toffee bits and morsels in a small bowl; set aside.
- Fill and frost cake somewhat smoothly with buttercream (have the bottom cake layer on a cardboard round as it will make the next step very easy). Press toffee bit/morsel mixture all over sides (you can just pick up the cake on the cardboard and hold over bowl of morsel mixture with one hand and apply morsel mixture with other hand). Use star tip to make a complete ring of shells or rosettes around top outer edge of cake; it is very important that you make a full ring of large, tall shapes as it will hold in the ganache that you will be pouring on top later (see photo). Chill cake until buttercream is firm, at least 2 hours.
- Have Chocolate Ganache fluid, but not hot. Pour it over the center top of the cake and flood the entire top within the boundaries of the decorative buttercream rim; a small, offset icing spatula works very well here to help push the ganache up against the border. Chill cake until ganache is firm, at least 2 hours. Bring to room temperature before serving. Cake may be served immediately or refrigerated overnight in covered container. Cake is best served within a day or 2 but will last a few days longer.
