SHOOFLY PIE
My grandmother made the best shoofly pie in the tradition of the Pennsylvania Dutch. Shoofly pie is to the Pennsylvania Dutch as pecan pie is to a Southerner. -Mark Morgan, Waterford, Wisconsin

TRADITIONAL SHOOFLY PIE
It's gooey sweet and unadorned by a top crust. What better invitation to come join the party does a hungry insect need? It should be called "molasses pie," but it's whimsically named shoofly because its "open" structure lures flies that must be shooed away. Shoofly Pie is thought to be a Pennsylvania Dutch creation, and may be a direct descendant of "Centennial Cake" introduced at the first World's Fair -- the 1876 Philadelphia Centennial Exposition.

BONNIE'S GRANDMA'S CHICKEN NOODLE SOUP
This old-fashioned chicken noodle soup is the best we have ever tasted. It is also a snap to make with the ingredients you have right in your own pantry. Great served with grilled golden brown swiss cheese sandwiches on French bread. This recipe makes a lot. Freeze some and enjoy it later on! Happy Cooking! The photo is my own...

Steps:
- 1. DAY BEFORE Boil the drumsticks in the water until done. Save the water to make the soup. Refrigerate.
- 2. THE NEXT DAY... PREPARE GRANDMA'S NOODLES (These are NOT the regular wide curly kind) Follow the instructions on the package that say to slit the plastic and microwave 1 minute. Remove and separate the noodles and spread them out on a cookie sheet.
- 3. MAKE THE SOUP Remove skin and bones from the drumsticks and discard. Save the chicken and the broth. Chop the onions, celery and carrots and saute in a large dutch oven in a little olive oil. When the vegetables are tender, add the minced garlic and stir a couple of times. Add the chicken stock, chicken granules, pepper, marjoram, and the chicken to the pot. Simmer covered over low heat until the vegetables are done. Add Grandma's noodles and bring soup to a low boil and cook until noodles are tender and to your preference. Add frozen peas. Check seasoning. Cook until peas are done.
- 4. COOK'S TIP Do you like a lot of broth or a little broth in your soup? If you don't have enough broth to suit you, you can add a can of chicken broth,a teaspoon of chicken granules, a half can of water and a teaspoon of marjoram and add it to the broth to thin it.
AUTHENTIC SHOO FLY PIE (STRAIGHT FROM LANCASTER CO.)
Born, raised & still residing in Lancaster County Amish/PA Dutch Country this is as authentic as it gets. This recipe is from the Mennonite Community Cookbook that's older than me & given to me by my mother. I saw a few other versions posted, but none were like this one. You could use 9 inch pre-pared pie crust but for the real deal you may want to start from scratch (see my recipe #163245 for the crust that goes with).

Steps:
- First line pie plates with pastry as you would for a custard. (Recipe makes four medium-size pies.) Mix baking soda and molasses, and let work while you make the crumbs of the flour, sugar and lard. When the molasses/soda is ready, add 1-3/4 cups boiling water to the molasses, mixing well and pouring into pie plates. Sprinkle crumb mixture on top of the liquid and bake. This makes the pies nice and moist on the bottom -- not so dry.
