GREEN BEANS WITH GARLIC AND ALMONDS

Steps:
- In a large pot with salted boiling water, cook the green beans for 3 minutes.
- Immediately drain and transfer them to a bowl with iced water to stop the cooking process.
- In a large skillet, heat 2 Tbsp of olive oil and sauté 1 clove of minced garlic. Add the almonds and cook until golden brown, about 5 minutes. Reserve.
- In that same skillet, heat the remaining 2 Tbsp of olive oil with the butter and sauté the other 2 cloves of garlic. Add the green beans and toss them with the garlic/butter mixture and let them fry lightly until crisp, bright green and maybe even lightly browned in some spots.
- Season with salt and pepper.
- Transfer the green beans to a serving dish and sprinkle the almonds.
- Serve while still warm.

- Bring a 6- to 7-quart pot of water to a boil. Add the beans and cook until bright green and barely crisp-tender, about 2 minutes. Drain in a colander and rinse under cold running water until completely cool. Spread the beans on a clean kitchen towel and dry thoroughly. In a 12-inch skillet, heat the butter and oil over medium-low heat until the butter melts and the foam subsides. Add the almonds and cook, stirring occasionally, until golden-brown all over, about 3 minutes. Using a slotted spoon, transfer the almonds to a plate. Reduce the heat to low and add the garlic to the skillet. Cook, stirring constantly, until fragrant, about 30 seconds. Add the beans, increase the heat to medium, and cook, tossing occasionally, until crisp-tender and lightly browned in some places, 5 to 8 minutes. Stir in the lemon juice and season to taste with salt and pepper. Transfer to a serving platter, sprinkle with the almonds, and serve. - Chop beans into 2-inch pieces. Place beans in a skillet and add boiling water to cover. Cook beans in boiling water 3 to 4 minutes, add raisins to pan and cook 2 minutes more to plump up the raisins. Drain beans and raisins. Place skillet back on the stove over medium high heat. Add extra-virgin olive oil to skillet then drained beans and raisins. Add olives to the pan and warm them through. Toss beans, raisins and olives with almonds and turn off heat.
