GREEN BEANS WITH GARLIC AND ALMONDS



Green Beans with Garlic and Almonds image

Number Of Ingredients 5

1.5 lbs green beans, washed, with ends trimmed
3 cloves of garlic, minced
1 cup slivered almonds
4 Tbsp olive oil
1 Tbsp butter

Steps:

  • In a large pot with salted boiling water, cook the green beans for 3 minutes.
  • Immediately drain and transfer them to a bowl with iced water to stop the cooking process.
  • In a large skillet, heat 2 Tbsp of olive oil and sauté 1 clove of minced garlic. Add the almonds and cook until golden brown, about 5 minutes. Reserve.
  • In that same skillet, heat the remaining 2 Tbsp of olive oil with the butter and sauté the other 2 cloves of garlic. Add the green beans and toss them with the garlic/butter mixture and let them fry lightly until crisp, bright green and maybe even lightly browned in some spots.
  • Season with salt and pepper.
  • Transfer the green beans to a serving dish and sprinkle the almonds.
  • Serve while still warm.

1/2 cup slivered almonds

1 Tbs. fresh lemon juice (from 1 small lemon)
Kosher salt and freshly ground black pepper

Steps:

  • Bring a 6- to 7-quart pot of water to a boil. Add the beans and cook until bright green and barely crisp-tender, about 2 minutes. Drain in a colander and rinse under cold running water until completely cool. Spread the beans on a clean kitchen towel and dry thoroughly. In a 12-inch skillet, heat the butter and oil over medium-low heat until the butter melts and the foam subsides. Add the almonds and cook, stirring occasionally, until golden-brown all over, about 3 minutes. Using a slotted spoon, transfer the almonds to a plate. Reduce the heat to low and add the garlic to the skillet. Cook, stirring constantly, until fragrant, about 30 seconds. 1/4 cup golden raisins, a generous handful
2 tablespoons extra-virgin olive oil
12 jumbo pimento stuffed olives, coarsely chopped
1/2 cup chopped smoked almonds

  • Chop beans into 2-inch pieces. Place beans in a skillet and add boiling water to cover. Cook beans in boiling water 3 to 4 minutes, add raisins to pan and cook 2 minutes more to plump up the raisins. Drain beans and raisins. Place skillet back on the stove over medium high heat.
