Ranch Pasta Salad With Bacon image

A delightful pasta salad with the great taste of bacon, cheddar cheese and a creamy sauce made from a packet of ranch dressing. My coworkers ask me to bring this to covered luncheons often. Time does not include chill time.

1 (12 ounce) package uncooked tri-colored rotini pasta
10 slices bacon
1 cup mayonnaise
1 (1 ounce) packet dry ranch dressing mix
1/4 teaspoon garlic powder
1/2 cup milk (more, if needed)
1 large tomatoes, chopped or 15 grape tomatoes, cut in half
1 (3 ounce) can sliced black olives
1 cup sharp cheddar cheese, shredded
salt and pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Stir in rotini pasta and cook for 10 to 12 minutes or until al dente, drain.
  • Place bacon in a skillet over medium-high heat and cook until evenly brown. Drain and chop.
  • In a large bowl, mix mayonnaise, ranch dressing mix and garlic powder. Stir in milk until smooth. Add bacon, tomato, black olives and cheese and toss to coat with dressing. Season with salt and pepper to taste.
  • Cover and chill at least 1 hour in the refrigerator. Toss with additional milk if the salad seems a little dry.

1 box (12 oz.) elbow macaroni
1 packet Hidden Valley® Original Ranch Salad® Dressing & Seasoning Mix
½ cup mayonnaise
½ cup sour cream
½ cup milk
½ teaspoon garlic powder
2 cups grape tomatoes
1 package (8 or 9 slices) bacon
2 small cans olives
½ cup Parmesan cheese
1 cup cheddar cheese

Steps:

  • Boil your pasta according to package instructions. You want the pasta to be al dente so it's not overcooked.
  • While your pasta is boiling, gather all your other ingredients.
  • In a medium bowl, mix up your Hidden Valley® Original Ranch® Seasoning, Salad Dressing & Recipe Mix Packet with the mayo, sour cream, milk and garlic powder and set aside.
  • Place all other ingredients in a large bowl.
  • Once your pasta is finished, rinse under a cool stream of water until all the pasta is cool.
  • Place the pasta in with the other ingredients, add the dressing and toss until well-coated.
  • Chill or serve right away.

1 1/2 cups mayonnaise
1/2 cup sour cream
2 (1-ounce) packets Ranch dressing dry mix (about 6 tablespoons)
1/4 teaspoon ground black pepper
10 strips thick bacon (diced)
1 pound rotini (or a similar short pasta shape )
1 pint grape tomatoes (halved)
1 1/2 cups diced celery
2 cans sliced ripe olives (drained)
Optional: 1 to 2 cups grated cheddar cheese

Steps:

  • Gather the ingredients.
  • Combine mayonnaise, sour cream, ranch dressing mix, and pepper in a medium bowl. Cover bowl and refrigerate until it is time to make salad.
  • Put diced bacon in a large skillet and place over medium-low heat. Cook, stirring frequently, until browned and beginning to crisp. Use a slotted spatula to remove bacon to paper towels to drain. Let bacon drippings cool slightly and then pour into a container to use in future dishes.
  • Bring a large pot of salted water to a boil; add rotini and turn heat down to maintain a gentle boil and cook according to package directions, usually about 7 to 9 minutes. Drain pasta and let cool.
  • Put cooled pasta in a large bowl and add cooked, drained bacon, halved tomatoes, diced celery, and olives to the bowl, along with cheese, if using. Toss gently to combine.

A great side dish for the summer picnic. I made this on accident when I put some soup ingredients into the bowl instead of the stock pot. I doctored it up and added other ingredients, and voila! Use your favorite pasta shape.

1 (16 ounce) package farfalle (bow tie) pasta
1 cup prepared ranch dressing
6 slices bacon
½ cup shredded Parmesan cheese
1 carrot, peeled and diced
1 stalk celery, diced
1 red onion, diced

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the bow tie pasta and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink. Transfer to a bowl, and refrigerate until cool, at least 30 minutes.
  • Meanwhile, place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate, let cool, and chop.
  • In a large salad bowl, stir together the ranch dressing, bacon, Parmesan cheese, carrot, celery, and red onion until well combined. Lightly stir in the cooled pasta to coat with dressing, and refrigerate 2 hours to blend flavors before serving.
