Making this easy, no-cook freezer jam is a great way to preserve sweet, ripe mangos for year-round enjoyment.

Yield about 6 (1-cup) containers or 96 servings, 1 Tbsp. each

Number Of Ingredients 5

3 cups prepared fruit (buy about 4 fully ripe mangos)
1/4 cup fresh lemon juice
5 cups sugar, measured into separate bowl
3/4 cup water
1 box SURE-JELL Fruit Pectin

Steps:

  • Rinse 6 clean plastic containers and lids with boiling water. Dry thoroughly.
  • Peel and pit mangos. Mash fruit. Measure exactly 3 cups prepared fruit into large bowl. Add lemon juice and sugar; mix well. Let stand 10 min., stirring occasionally.
  • Mix water and pectin in small saucepan. Bring to boil on high heat, stirring constantly. Cook and stir 1 min. Add to fruit mixture; stir 3 min. (A few sugar crystals may remain.)
  • Fill all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Refrigerate up to 3 weeks or freeze up to 1 year. (If frozen, thaw in refrigerator before using.)

IT'S THAT TIME OF THE YEAR! fOR A recipe I found in the newspaper. A.... SURE-JELL FREEZER JAM. If you have never made your own jam. Then this quickie is for you! This will make 7=1 cup containers. O.K...... now let's get started. I promise you will love this recipe. Once you make you're own,you will never go back to store bought.... Only the one jam picture & recipe is from SURE-JELL.

1-1/2 cup(s) crushed strawberries
1/2 cup(s) each= crushed blueberries and raspberries
4-1/2 cup(s) sugar
3/4 cup(s) water
1 box(es) sure-jell fruit pectin

Steps:

  • Rince clean plastic containers and lids with boiling water. Let dry throughly.
  • Mix fruit and sugar until well blended. Let stand 10 minutes,stirring occasionally.
  • Add water to pectin in a saucepan, stir, bring to a boil on high heat, stirring constantly. Boil and stir for 1 minute. Add to fruit mixture, stir 3 minutes, or until sugar is disssolved and no longer grainy.
  • Pour immediately into containers, filling each to within 1/2 inch from the top. Wipe off thr top rims of containers, immediately cover with the lids. Let stand at room temperature for 24 hours. Store in refrigerator up to 3 weeks, or freeze up to 1 year..If frozen, thaw in refrigerator before using.

2 cups prepared fruit (buy about 1 pt. fully ripe strawberries and 1 lb. rhubarb)
4 cups sugar, measured into separate bowl
3/4 cup water
1 box SURE-JELL Fruit Pectin

Steps:

  • Rinse clean plastic containers and lids with boiling water. Dry thoroughly.
  • Stem and crush strawberries thoroughly, one layer at a time. Measure exactly 1 cup strawberries into large bowl. Cut rhubarb into 2-inch pieces. Finely chop or grind fruit. Measure exactly 1 cup rhubarb. Add to strawberries; mix well. Stir in sugar. Let stand 10 min., stirring occasionally.
  • Mix water and pectin in small saucepan. Bring to boil on high heat, stirring constantly. Boil and stir 1 min. Add to fruit mixture; stir 3 min. or until sugar is dissolved and no longer grainy. (A few sugar crystals may remain.)

3/4 cup water, divided
5-1/2 cups sugar, measured into separate bowl
1 box SURE-JELL Fruit Pectin

Steps:

  • Rinse clean plastic containers and lids with boiling water. Dry thoroughly.
  • Pit and finely chop unpeeled plums. Mix plums and 1/4 cup of the water in small saucepan. Bring to boil. Reduce heat to low; cover and simmer 5 min. Measure exactly 3 cups prepared plums into large bowl. Stir in sugar. Let stand 10 min., stirring occasionally.
  • Mix remaining 1/2 cup water and pectin in small saucepan. Bring to boil on high heat, stirring constantly. Boil and stir 1 min. Add to fruit mixture; stir 3 min. or until sugar is dissolved and no longer grainy. (A few sugar crystals may remain.)

  • If using strawberries, hull the berries removing all stems and leaves. If using peaches, peel off the skin and remove the pits. (Peach skin easily peel right off super ripe peaches.) *See stonefruit proportions below.
  • Place the fruit in a food processor or blender and to a fine mash with small small chunks present.
  • Set out a large mixing bowl. Measure exactly 2 cups of berry puree into the bowl. (Measure 3 cups for stonefruit.) Then pour in the sugar, lemon juice, and salt. Stir well to start dissolving the sugar. Allow the mixture to sit for at least 10 minutes, stirring every 2-3 minutes.
  • Meanwhile, set a small sauce pot over medium-high heat. Add the water the powdered pectin. Whisk well to dissolve. Once the mixture reaches the boiling point, whisk and boil for 3 minutes to thicken the pectin syrup. It should look like thick clear glue when ready.

  • Rinse and dry the containers you'd like to put the jam in (enough for 5 cups). I always use glass mason jars but plastic containers work great also. This recipe fills 5-6 half pint jars.
  • In a food processor add strawberries and pulse just a few times, until strawberries are well diced, but not totally mashed.
  • Measure exactly 2 cups of strawberries into a large bowl. (It's really important to measure the berries and sugar exactly, or the jam will not set properly.)
  • Add the sugar, one cup at a time, stirring really well after each addition. Let stand for 10 min., stirring occasionally.
