Steps:
- Preheat the oven to 350 degrees F (on low fan speed, if using convection). During this time, cover the bottom of the piecrust with aluminum foil and uncooked beans. Place the piecrust in the oven and bake (blind bake) for 10 to 12 minutes to allow the crust to cook. The crust should be light brown on the edges when removing from the oven.
- During the cooking of the crust, whisk together the milk, salt, pepper, nutmeg and eggs in a bowl. After mixing the eggs, in a second bowl, blend together the spinach, bacon, cheese and parsley. Add half of the egg mixture to coat the ingredients, again mixing well. Next, add the mixture to the cooked crust then finish with the remaining egg mixture. Bake in the oven until the middle of the quiche is set, about 20 minutes.
- Remove and serve.

- Preheat oven to 375ºF. Coat a 9-inch nonstick pie pan with cooking spray.
- Coat a large nonstick skillet with cooking spray and set pan over medium-high heat. Add onion and sauté until soft and golden, about 5 minutes.
- Transfer onions to a large bowl and add spinach, ricotta, cheddar cheese, American cheese, salad dressing, eggs, mustard, oregano, salt and black pepper. Mix until well blended. Spoon mixture into prepared pan and smooth top with back of a spoon. Sprinkle with grated cheese topping.
- Bake until a knife inserted near center comes out clean, about 30 minutes. Let stand 10 minutes before slicing into 6 pieces.

- Preheat the oven to 325 degrees F.
- Whisk the eggs in a large bowl until smooth. Whisk in the spinach dip, half-and-half, cheese, salt and pepper.
- Fill the pie crust with the egg mixture and bake until golden brown, 25 to 35 minutes. Let rest for 15 minutes to set, then cut and serve.
FOUR CHEESE SPINACH QUICHE
A woman in my mother's group (MOPS) brings this to our morning breakfasts. It is always eagerly received. She got it out of a Southern Living Holiday Cookbook. Good find! She uses a 12-inch tart pan when she brings it to us.

Steps:
- Roll both pie crusts together to fit 11 inch tart pan or quiche pan. Top with parchment paper and add pie weights.
- Bake at 400 for 12 min or until lightly browned.
- Quickly remove weights and parchment paper, sprinkle with Parmesan cheese and let cool.
- Drain chopped spinach well by pressing between paper towels.
- Stir together spinach, eggs, cream, salt and pepper.
- Sprinkle Mozzarella, cheddar cheese, and onion into prepared crust.
- Add spinach mixture.
- Top with red bell pepper and sprinkle with feta cheese.
- Bake at 350 for about 40 minutes, until set. Cover loosely with aluminum foil, and let stand 30 minute.

- Beat eggs; add cream, then beat again.
- Wash the spinach under water, and remove all the stems, piling the wet spinach into a large pot, adding no water.
- Cook over medium heat, turning and stirring, for 5 minutes; then drain thoroughly in a colander, squeezing the spinach dry.
- Take a pair of kitchen scissors and snip the drained spinach into tiny pieces.
- Season the spinach to taste with salt and pepper.
- Line pie pan with pastry or crust; place spinach in crust, top with grated cheese, add cream, sprinkle with mace, then dot with small bits of butter.
- Place pie pan on a cookie sheet and bake in a preheated 350 degree F oven for 40 minutes or until domed and light brown.
- Cool 30 minutes before slicing and serving.

- On a lightly floured surface, unroll pastry and transfer to a 9-inch pie plate.
- Trim pastry to 1/2 inch beyond the edge of the plate and flute edges.
- Line unpricked pastry with a double thickness of heavy duty aluminum foil.
- Bake at 450 for 8 minutes, remove foil and bake for another 5 minutes.
- Cool on a wire rack and reduce the oven to 350.
- In a small skillet cook the bacon, onions and red pepper until the veggies are tender and drain.
- Stir in the spinach.
- Spoon spinach mixture into pastry.
- In a small bowl, combine the eggs, cottage cheese, Swiss cheese and seasonings.
- Pour over spinach mixture.
- Bake for 35 - 40 minutes or until a knife inserted near center comes out clean.
- Let rest for 10 minutes before cutting.
- Serve with sour cream.
