4 pork chops (any cut and thickness)
1 teaspoon adobo seasoning
1 packet Sazón (optional)
2 teaspoons olive oil
1/4 cup sofrito
1/2 cup canned tomato sauce
1/4 cup water
1/2 large onion, thinly sliced
1/2 red bell pepper, thinly sliced
1/2 green bell pepper, thinly sliced
Salt, pepper and garlic powder, to taste
Hot white rice, for serving

Steps:

  • Season pork chops generously with adobo and sazón (if using). Add extra salt, pepper and garlic powder, if desired.
  • In a large skillet or caldero, heat oil over medium-high heat. Brown pork chops on both sides (1-2 minutes per side), then remove from pan.
  • Add sofrito and cook for 2-3 minutes, stirring frequently, until soft and fragrant.
  • Add tomato sauce, water, onion and peppers and stir to combine. Season to taste with additional adobo.
  • Return pork chops back to pan and bring to a boil. Reduce heat to a low simmer, cover pan and cook until tender. About 20+ minutes for thin chops and 40+ for thick cut.
  • If desired, add additional water to thin the sauce or let simmer without the lid to thicken.
  • Serve over white rice.

4 pork chops (1 inch thick)
1 tablespoon black pepper
2 teaspoon kosher salt
1 1/2 teaspoon ground cumin
1 teaspoon garlic powder
1 tablespoon onion powder
1 tablespoon dried oregano
3 tablespoon canola oil
1 onion (sliced)
2 cloves garlic (chopped)
1 cup orange juice
1/4 cup fresh lime juice
1/4 cup vinegar
1/2 cup chicken broth
1 Roma tomato (chopped, for garnish (optional))
1/2 avocado (sliced, for garnish (optional))

Steps:

  • In a small mixing bowl, combine all dried spices. Pat the pork chops dry with a paper towel and rub with the dry spice mixture.
  • Heat oil in a large saute pan over high heat.
  • Place the pork chops in the pan and sear on 1 side until brown. Flip over sear until brown.
  • Remove chops and place in crock pot (slow cooker).
  • Add onion and garlic to pan and saute for 1-2 minutes, add onion/garlic to crock pot with the pork. Combine orange juice, lime juice, vinegar, and chicken broth and pour over the pork in the crock pot.
  • Cover and cook for 45 min - 1 hour on high heat or 2 hours on low heat. Check for doneness depending on the size of the chops. They may need more time in the crock pot if they are bigger pork chops. Don't keep them in the crock pot too long or they will dry out.
  • Pour remaining liquid over the chops when ready to eat. Garnish with the slow-cooked onions and tomatoes and/or avocado. Enjoy!

  • Arrange chops over sofrito mixture; press gently into sofrito mixture with spatula. Reduce heat to medium; cover. Cook 10 min. Turn chops over carefully with spatula so that sofrito mixture coats chops. Cook, uncovered, 5 min. or until cooked through (160°F).

2 slices bacon, chopped
1 small white onion, chopped
1 small green bell pepper, chopped
2 3/4 cups chicken broth
1 1/2 cups white rice
2 pinches saffron or 1/2 teaspoon turmeric
Salt
2 pork tenderloins, trimmed, about 2 1/2 pounds total weight
4 cloves garlic, cracked away from skin
4 bay leaves
2 teaspoons anise seed
2 teaspoons ground coriander
1 tablespoon ground cumin
2 limes, zested
2 tablespoons grill seasoning blend (recommended: McCormick Montreal Steak Seasoning) or coarse salt and pepper
EVOO - Extra-virgin olive oil, or vegetable oil, to coat
Optional garnishes: chopped mango or kiwi, or chopped cilantro and scallions

Steps:

  • Preheat the oven to 450 degrees F.
  • Heat medium pot with tight fitting lid over medium high heat. Add oil and bacon and brown bacon. Add onions and peppers and saute 5 minutes. Bring broth to a boil. Add rice. Cover the pot and reduce heat to simmer. Cook 15 to 18 minutes, until rice is tender.
  • For pork, cut 4 slits into each loin and nest garlic and bay into meat. Place meat on nonstick baking sheet. Combine the spices. Coat meat with oil. Rub spices over the pork tenderloins and place in oven. Roast meat 25 minutes. Remove from oven. Let juices redistribute, then slice and serve with soffrito rice and garnishes of chopped tropical fruit or chopped cilantro and scallions.

Correction: Soffrito is the correct spelling for this Italian mixture of aromatic vegetables, which is more often know by the French name, mirepoix. Sofrito is a slightly different Caribbean-Spanish mixture used for similar purposes.

2 -3 lbs pork chops (4 thick ones)
1/2 cup olive oil
1/2 cup water (may be used) or 1/2 cup broth (may be used)
8 ounces tomato sauce
2 medium carrots, finely chopped
2 stalks celery, finely chopped
1 medium onion, finely chopped
4 garlic cloves, finely chopped
1 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon crushed red pepper flakes (edited per SugarPea's comment)

Steps:

  • Wipe the chops with a damp paper towel and dry them.
  • Brown the chops in 1/4 cup of the oil at medium/high heat in a large skillet.
  • Remove the chops and set aside.
  • Add the vegetables and the remaining 1/4 cup of oil to the pan.
  • Caramelize the vegetables at medium heat (this is the sofrito).
  • Return the chops to the pan and spoon some of the sofrito over them.
  • Add the seasonings and wine.
  • Cover and simmer on low heat for 30 minutes.
  • Add a little water from time to time to prevent the pan from boiling dry.
  • Add the tomato sauce.
  • Cook covered 10 more minutes.
  • Remove the chops and strain the sauce.
  • Drizzle some sauce over the chops.
  • Dress pasta of your choice with the remaining sauce.

This recipe is a double cut pork chop that is pan-fried and then braised with pre-made or store-brought Goya sofrito.

1/4 cup canola oil
2 double cut pork chops
1 tablespoon dried oregano
1 quart Goya sofrito (blended with 1/4 cup raisins)
1 cup chicken stock
1 cup large diced calabasitas
1 cup medium diced yautia
Salt and pepper

Steps:

  • Heat oil in a rondeaux pot over medium heat. Add pork chop (1 at a time if necessary) and allow to caramelize on 1 side, about 3 to 5 minutes. Turn and repeat on other side. Remove and reserve and repeat with the second pork chop.
  • With both pork chops inside rondeaux, slowly add sofrito. Allow the sofrito to cook for about 2 to 3 minutes. Add chicken stock. Season with salt and pepper. Cook for 4 or 5 minutes. Add vegetable and cook for another 15 minutes or until fork tender. Add more chicken stock if the sauce gets too thick.

3 -4 italian frying bell peppers or 3 -4 cubanelle peppers
16 -20 garlic cloves, peeled
1 bunch cilantro, washed

1 large red bell pepper, cored, seeded, and cut into large chunks
3 -4 lbs pork loin chops (six to eight, 1-inch-thick)
3 tablespoons dry rub seasonings (homemade or store-bought)

1 lemon, juice of
2 tablespoons cider vinegar
2 garlic cloves, smashed
canola oil or other vegetable oil

Steps:

  • To make sofrito - Chop the onion and peppers in the work bowl of a food processor until coarsely chopped. With the motor running, add the remaining ingredients one at a time and process until smooth. The sofrito will keep in the refrigerator for up to 3 days and can be frozen.
  • Rub both sides of the chops with the dry rub, coating them generously.
  • Place them in a deep baking dish, overlapping if necessary.
  • Stir the citrus juices, vinegar, and garlic together in a bowl until blended together. Pour over the chops and massage into them.
  • Marinate the chops at room temperature for up to 1 hour or in the refrigerator for up to 1 day.
  • Pour enough oil into a large, heavy skillet to film the bottom. (If necessary, work in batches or use two skillets -- if you have them and space on the stove to hold them.) Heat the oil over medium heat until rippling.
  • Remove the chops from the marinade and discard the marinade.
  • Add as many chops as will fit in the pan without touching.
  • Cook until the chops are well browned on the underside, about 6 minutes.
  • Turn the chops and cook until they are firm near the bone when you poke them with a finger, about 8 minutes.
  • Keep warm while cooking the second batch, if necessary.
  • Serve immediately.

3 tbsp sofrito
⅓ cup tomato sauce
3 tsp white vinegar
1 tsp dried oregano
pimiento stuffed olives ((however many you like))
1 lime (juiced)
5 garlic cloves (minced)
1 packet Sazon with Annatto
1 chicken bouillon
adobo (sprinkled on chops)
1 dried bay leaf
¼ tsp salt
handful fresh cilantro (chopped)
1 onion (sliced)
1 green, yellow or red bell pepper (rinsed, seeded and cut in strips)
2 cups water
oil
2 garlic cloves
½ tsp dried oregano
2 tbsp oil (vegetable, canola or olive oil)

Steps:

  • Add garlic and oregano to a mortar and with the pestle, crush garlic well. Add oil to mortar. Mix ingredients well with a fork.NOTE: If you do not have a mortar and pestle, minced garlic finely and combine with oregano and oil.
  • Season each pork chop with the marinade.
  • Sprinkle each pork chop on both sides with adobo.Let the pork chops marinade for 15 minutes (or even overnight).
  • Heat 2 tablespoons of oil in a large skillet over medium high heat.
  • When oil is hot, add the pork chops and fry on each side until golden brown.
  • Top with sofrito, sazon, minced garlic, chicken bouillon, tomato sauce, vinegar lime juice, bay leaf and olives.
  • Flip pork chops and cook for 5 minutes on medium low and cover with a lid.

I use it often to add depth of flavor to recipes, it complements this dish perfectly. These pork chops also go well with zucchini "noodles", spaghetti squash or grilled vegetables.

4 thick pork chops
¼ cup (65 ml) olive oil, divided
4 plum tomatoes, chopped
1 red or green bell pepper, finely chopped
1 medium carrot, finely chopped
2 stalks celery, finely chopped
1 small yellow onion, finely chopped
3 cloves garlic, finely chopped
1 teaspoon freshly ground black pepper
½ teaspoon freshly ground black pepper
¼ teaspoon dried red pepper flakes (optional)
½ teaspoon dried thyme

½ cup (125 ml) white wine or chicken broth

Steps:

  • Separate the pork chop; and lay them out on a large platter or work board.
  • Heat a large saute pan or cast-iron skillet over medium-high heat. (The pan should be large enough to fit all 4 pork chops comfortably.) When heated, add 1 to 2 tablespoons of the olive oil. Once the oil is very hot, add the pork chops.
  • Cook the pork chops until brown on both sides, about 5 minutes per side. Remove from pan, cover with foil and set aside.
  • Reduce the heat to medium and add another 1 to 2 tablespoons of the olive oil.
  • Once hot, stir in the tomatoes, pepper, carrot, celery, onion and garlic. Cook for 3 minutes; stirring frequently with a wooden spoon.
  • Add the salt, pepper, red pepper flakes, thyme and basil. Mix to combine.
  • Return the pork chops to the pan and top with the tomato mixture.
  • Pour in the wine or both, then cover, reduce heat to low and simmer for 30 minutes.
