RAW CAULIFLOWER AND TOFU DIP
Easy-to-make raw dip from simple ingredients; I just created it myself when I bought too much cauliflower from the farmers market. It can be used as a salad dressing as well, just add a little more yogurt and olive oil.

CREAMY CAULIFLOWER DIP
Earthy and rich without being heavy or filling, this creamy vegetable dip is just the thing to whet the appetite without ruining it before a big holiday meal.

- Pour water into a medium saucepan to a depth of 1/4"; add cauliflower and garlic. Cover, bring to a boil over high heat, and cook until florets are very easily pierced with a paring knife, about 10 minutes. Drain and set aside.
- Meanwhile, heat 2 Tbsp. oil in a large skillet over medium. Add onion, cumin, and 1 tsp. salt and cook, stirring often, until onion is translucent, about 3 minutes. Increase heat to medium-high and cook, stirring often, until onion is golden brown, about 5 minutes more.
- Transfer onion mixture to a blender. Add yogurt, lemon zest and juice, reserved cauliflower, and remaining 1 tsp. salt and purée until smooth. With the motor running, add 2 Tbsp. oil in a steady stream until well combined. If dip is too thick, blend in 1 Tbsp. water at a time to reach desired consistency. Let cool to room temperature.
- To serve, spread dip in a wide bowl or platter. Drizzle with oil and top with parsley. Serve with romaine hearts and endive leaves alongside for dipping.

- Dip can be made 5 days ahead; cover and chill.
AVOCADO AND TOFU DIP
Apparently the high nutritional value of avocados was well known by the Aztecs and the Incas. In the twenty-first century, it's often what we put with avocado that makes our recipes somewhat less than healthy. This is a super-healthy avocado dip - with tofu, cider vinegar, yoghurt and spring onions - which loses none of the appeal of an avocado dip although it is packed with ingredients so healthy that even your cardiologist will be asking you for the recipe! Serve with crisp raw vegetables such as broccoli and cauliflower florets and sticks of celery, carrots and zucchini. Or, if you feel that the dip is healthy enough to make some small dietary sins permissible, serve with your favourite crackers. Adapted from the holistic.com website.

Steps:
- Process the avocado and tofu in a blender or food processor.
- Add the apple cider vinegar, yoghurt, garlic and kelp to the avocado and tofu mixture.
- Blend until well combined.
- Transfer the mixture to a medium-sized bowl and fold in the sliced spring onions and finely chopped tomato.
- Place the mixture in a serving bowl.
- If not serving immediately, drizzle 1 teaspoon of extra-virgin olive oil over the dip to prevent discolouring, unless of course you are using a variety of avocado (such as Shepard in Australia) that does not discolour.
- Add the avocado slices for garnish, if using, and serve.

CAULIFLOWER & TOFU CASSEROLE
This recipe is delicious. I doubt you could fool a tofu-phobic as the pieces are visible, but it really is a nice recipe. The original recipe (found at http://www.soscuisine.com) doesn't call for cheese, but I've included it because it adds that extra touch.

Steps:
- Preheat oven to 205°C/400°F.
- Boil cauliflower boil 10-15 minutes until very tender. Drain well and set aside.
- Heat 1 tablespoon of oil in a large pan, over medium-high heat, until hot but not smoking. Add mushrooms and cook, stirring occasionally, until water from mushrooms has evaporated (approximately 3 minutes).
- Add Recipe #369266 and cook another 2 minutes, stirring. Add salt and pepper to taste and remove from fire. Set aside (but keep it warm).
- Heat remaining oil in another pan, over medium-high heat. Add onion and cook until transparent (approximately 3 minutes). Add tofu and cook another 2-3 minutes, stirring, until cubes are beginning to colour.
- Add tomatoes, tomato paste, Worcestershire sauce and broth. Add frozen peas and mushrooms. Pursue cooking another 4-5 minutes. Add salt and pepper to taste.
- Remover from fire and pour in a large baking dish.
- Heat butter and part of the milk in the microwave until very hot. Add to cauliflower and mash, until consistence is creamy. Add more milk if necessary. Add salt and pepper to taste.
- Cover tofu mixture with cauliflower puree, spreading evenly over top.
- Bake in the centre of the oven 25-30 minutes until top starts to brown.
- Remove from oven. Switch oven temperature to "broil" and add cheese over top of casserole. Return to oven. Watching carefully (this can go quickly), bake until cheese is bubbly and turning brown. Serve.

- Place the tofu on its side and cut into 3 slabs. Turn the tofu on the flat side and cut into four squares, creating a total of 12 slices of tofu. Pat dry with a clean dishtowel.
- Place the grill/griddle over the front and back burner. Heat the grill over medium – medium-high heat. Using a silicone brush, coat the entire surface well with sesame oil.
- Dip the tofu into the sauce and add tofu squares to half of the grill and the asparagus to the other (I put the tofu towards the front and the asparagus to the back). Cook 4 – 5 minutes. Spoon a little bit of the marinade over the top of the tofu. Add a little over the asparagus as well. Carefully flip the tofu and cook another 5 minutes, until golden brown on both sides. Rotate the asparagus as needed to cook evenly. Once complete, turn off the heat. Add a few slices of lemon to the grill to give it a grilled look. It warms the lemon and makes the juices taste delicious!
