Grated zest of 1 lemon plus 2 tablespoons lemon juice
1 tablespoon Dijon mustard
1 1/2 teaspoons anchovy paste
1 hard-boiled egg
1 hard-boiled egg yolk
1/2 cup olive oil
Kosher salt and freshly ground black pepper.

Steps:

  • Combine the shallots, lemon zest and juice, mustard, anchovy paste and the hard-boiled egg and egg yolk in a blender, then slowly stream in the olive oil. Season with salt and pepper.

The Best No Oil Warm Egg Dressing over Greens image

Now this is a fairly classic dressing. But I love it served warm over my favorite salad greens. A mix of crunchy iceberg, romaine and red leaf are my favorites - it is really all about the dressing. Toppings ... I prefer fresh slices of tomato, crumbles of bacon and thin slices of onion to me are a must, but olives, cucumbers, peppers, or pretty much anything you want is great with this salad. This dressing is a bit sweeter rather than tangy, but no oil, and a completely different taste that most people haven't had. However, once most people try this, they want it over and over. And kids absolutely love it.

2 eggs, lightly beaten
1/2 cup cups sugar
1/4 cup water
1/4 cup cider vinegar (cider vinegar is a must)
1 teaspoon italian seasoning
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper

Steps:

  • Salad Greens -- Prepare your greens. Whatever you like. Tomato, bacon and onion are my favorites, but any of your favorites will work. This is about the dressing.
  • Dressing -- I make this in a small tupperware container or small microwavable bowl. Add all the ingredients and mix well. Heat on medium (power 4 or 5) for 30 seconds and stir well. Then heat again on medium power same thing just 30 seconds at a time and mix well. You do not want do scramble the eggs. Just a couple of times in the microwave to heat up the dressing is all you need. It should be served warm NOT boiled.
  • Serve -- Toss with the greens and ENJOY! One of my favorite dressings, and so easy.

1 head radicchio, chopped
2 cups chopped escarole, 1/2 head
1/4 cup extra-virgin olive oil
1 clove garlic, cracked
1/3 cup balsamic vinegar
Salt and pepper

Steps:

  • Arrange greens on a large platter. Heat oil and garlic in a small pan over moderate heat. Simmer garlic in oil to infuse the flavor. Remove the garlic from the oil and transfer it to a small bowl. Wipe the pan and return to heat. Add balsamic vinegar. Raise heat to high and reduce vinegar by 1/2, 30 seconds. Stream oil into saucepan and whisk to combine with vinegar. Drizzle dressing over the salad and season the greens with salt and pepper.

400g shallots
1 tbsp olive or rapeseed oil
3 tbsp white wine vinegar
3 tbsp clear honey
½ tsp ground allspice
400g mixed green vegetables (we used green beans, broccoli and peas)

Steps:

  • Cover the shallots with boiling water and set aside until cool enough to handle, then peel and discard the skins.
  • Heat the oil in a large pan, and add the shallots. Cover with a lid and cook over a low heat for 8-10 mins until starting to caramelise. Add the vinegar, honey and allspice to the pan along with some seasoning. Give everything a good shake in the pan, then bubble for 10 mins until the shallots are tender and sticky, adding a splash of water if the honey looks like it might burn.
  • Meanwhile, bring a large pan of water to the boil, add the greens and cook for 2 mins until they are just tender but still have a nice bite. Add to the shallots and toss through the sticky dressing.

4 cups torn iceberg lettuce
3 celery ribs, sliced
1/2 cup chopped red onion
4 slices bacon, strips diced
1 egg (optional)

1/2 teaspoon salt

Steps:

  • In a salad bowl, toss spinach, lettuce, celery and onion; set aside.
