I came up with this recipe purely by accident. I was making egg salad and just kept adding different seasonings. When my friend tried it, she raved about it.

2/3 cup mayonnaise
2 tablespoons sweet pickle relish
1 teaspoon prepared mustard
1/4 teaspoon pepper
1/4 teaspoon celery salt
1/4 teaspoon paprika
1/4 teaspoon dried basil
1/4 teaspoon salt
6 hard-boiled large eggs, coarsely chopped
1/2 cup shredded cheddar cheese
1 small onion, finely chopped
1 large carrot, grated
2 bacon strips, cooked and crumbled
3 pita breads (6 inches), halved
Lettuce leaves and sliced tomatoes, optional

Steps:

  • In a bowl, combine the first eight ingredients. Stir in the eggs, cheese, onion, carrot and bacon. Spoon about 1/2 cup into each pita half. Add lettuce and tomatoes if desired.

½ cup ( 125 mL ) light cottage cheese (1%)
¼ cup ( 60 mL ) finely chopped sweet red pepper
¼ cup ( 60 mL ) finely chopped celery
2 tbsp ( 30 mL ) finely chopped green onion
1 tbsp ( 15 mL ) chopped fresh parsley
1 tbsp ( 15 mL ) light mayonnaise
1/8 tsp ( 0.5 mL ) salt
1/8 tsp ( 0.5 mL ) pepper
2 whole wheat pita breads
4 lettuce leaves

Steps:

  • Coarsely chop eggs in medium bowl with fork.
  • Add cottage cheese, red pepper, celery, green onion, parsley, mayonnaise salt and pepper; mix well.
  • Cut pita breads in half; open each pockets and line with lettuce leaf. Fill with egg salad mixture, about ½ cup (125 mL) for each pocket.

1/3 cup mayonnaise ($0.44)
2 Tbsp lemon juice ($0.09)
1 Tbsp dijon mustard ($0.11)
1-1 1/2 tsp fresh or dried herbs ($0.10)
1/2 tsp salt ($0.02)
10-15 cranks fresh cracked pepper ($0.03)

Steps:

  • Peel the hard boiled eggs and then roughly chop into half inch chunks. For instructions on how to perfectly hard boil eggs (including photos), click here.
  • In a medium bowl, prepare the dressing by combining the mayonnaise, lemon juice, dijon mustard, salt, and pepper. Stir until mixed. Chop the herbs roughly and then add to the dressing. Begin with about one teaspoon, taste and then add more if desired. The herbal flavor will become more pronounced after refrigeration.
  • Stir the chopped eggs into the dressing. Either refrigerate until ready to serve or serve immediately. Serve on a sandwich, over a bed of lettuce, or with your favorite crackers.

4 eggs, hard boiled
1/2 small onion, chopped
1 teaspoon creamed horseradish, hot
1 teaspoon Worcestershire sauce
1 tablespoon fat-free mayonnaise
1/4 teaspoon pepper
2 whole wheat pita bread, cut in half
4 tablespoons fat free cream cheese
4 large lettuce leaves
1 tomatoes, sliced
1/2 small red pepper, sliced in rounds (or green)
12 slices English cucumbers

Steps:

  • Fork mash eggs in a bowl, add onion, horseradish, Worcestershire sauce, mayonnaise, pepper; mix well.
  • Open pita bread to make a pocket, spread cream cheese inside on both sides.
  • Lay lettuce leaves on bottom, over cream cheese, top with tomato, red pepper and cucumber slices. Spread 1/4 of egg salad in each pita half on top of slices. Add more seasoning if you wish and press together to close.

85 g low-fat mayonnaise or 1/4 cup low-fat mayonnaise
1 teaspoon English mustard
1 tablespoon white wine vinegar

2 tomatoes (deseeded and chopped)
1 red capsicum (bell pepper deseeded and chopped)
1 potato (cooked and chopped)
2 spring onions (green chopped)

Steps:

  • Peel the eggs and cut in half and remove the yolks and chop the whites and set aside.
  • Push the egg yolk through a fine mesh sieve and then mix to a smooth paste together with the mayonnaise mustard, vinegar and sour cream and then season to taste with salt and pepper.
  • Mix the dressing with the tomatoes, capsicum (bell pepper), potato, egg white and spring green onions.
  • Carefully split the pitas in half to form pockets and fill the pockets with the salad.
