SPICY FISH CAKES WITH MANGO DIPPING SAUCE
These Indian-flavoured salmon and haddock breaded patties can be made in batches and frozen

Steps:
- Put the potatoes in a large saucepan, cover with salted water, bring to the boil and cook until tender. Drain, leave to cool, then peel and mash.
- Heat 4 tbsp of the oil in a pan set over a medium heat. Add the mustard seeds, half the curry leaves, onions, red chillies and ginger, and fry for 5 mins until the onions have softened. Add onion mixture to the mashed potato with the lemon zest, mix well, then work in the eggs.
- Put the salmon and smoked haddock in a pan. Add the remaining curry leaves, then pour over the milk plus enough water to cover. Put on the lid and simmer for 3-4 mins, then turn off the heat and leave the fish in the pan for 10 mins to finish cooking. Take the fish out of the milk and leave to cool. Using your hands, break into big flakes, add to the potato mixture and mix gently to combine.
- Shape mixture into patties about 9cm diameter and 3cm thick. For the coating, dust each with flour, then dip into the egg and coat with breadcrumbs. Transfer to a tray lined with baking parchment and chill for 30 mins. The fish cakes can be frozen at this point. Put the tray in the freezer and when frozen, pop the fish cakes in bags and seal.
- Heat the remaining oil in a frying pan and cook the fish cakes, in batches, for 7-8 mins each side, until golden and crisp. Drain on kitchen paper. To cook fish cakes from frozen, see below.
- Combine all the dipping sauce ingredients and stir in 4-5 tbsp water to thin it down. Serve with the fish cakes.

Steps:
- Cut the fish into chunks, put in your food processor with the rest of the ingredients, except the oil, and blend using the on/off technique until you have a minced texture but not a paste.
- Remove from the food-processor bowl to another dish.
- Take approx a dessert spoon full of the fish mix, with wet hands form into balls then flatten them with the palm of your hand into cakes.
- Leave them in the fridge, covered, to firm up for an hour or more.
- When ready to cook, heat up the oil and fry the little cakes about 1 minute on each side.
- Drain on paper kitchen towel.
- Serve with a Thai dipping sauce**There several recipes on the site.
SPICY SALMON & CORIANDER FISH CAKES
With chilli, lemon and coriander in these fish cakes there are plenty of strong flavours and you'll almost certainly want to adjust quantities to taste. I've not made the same mix twice and have tried leaving the skins on - which of course make mashing more of a challenge.

- Peel the potatoes and sweet potato and place in a large microwaveable bowl. Add the lemon juice and 1/4 of the chopped coriander, cover with cling film and microwave on full for 10 minutes / until cooked. (Add a little extra water if required).
- Whilst the potatoes are cooking, gently fry the onion, garlic, chilli, grated lemon zest & coriander in half the oil until the onions are translucent.
- Break up the bread and place in a food processor and blitz into breadcrumbs, adding the Paprika.
- Mash the potatoes adding the remaining olive oil and all of the butter.
- Stir the fried ingredients, remaining coriander, crumbled feta and egg into the mash. (Add salt and pepper to taste).
- Form cakes of your preferred size (If the mixture is too wet to easily form into cakes, add some of the breadcrumbs to improve consistency) and cover with breadcrumbs.
- Either fry gently for 5 minutes each side or place on a baking tray and bake on 180Cm, turning once, for 10-15 minutes (or until lightly browned).

- Finely chop fish (may use blender or food processor, or just good chopping skills).
- Add curry paste through lime juice. Process or mix with your hands until finely ground and blended.
- Using lightly floured hands, form about 12 small patties. Chill patties 2 hours or until firm (if you have time).
- Heat deep-frying pan over high heat, add oil and fry fish cakes a few at a time. Turning carefully until browned. Drain on paper towels.
- Serve alone, or will a cool sauce. I like sour cream. A cucumber relish would also be yummy.

SPICY SWEET POTATO FISHCAKES WITH CHARRED GREENS

- Heat the oven to 180C/160C fan/gas 4. Put the sweet potatoes on a baking tray and roast for 1 hr until tender when pressed. Leave until cool enough to handle (around 20 mins), halve, then scoop out the flesh into a mixing bowl, discarding the skins.
- Add the miso, ginger, chilli, garlic, cumin, lemon juice and coriander to the bowl and mash with a fork. Season well. Fold in the fish.
- Mould into eight fishcakes (about 100g each) and put in the fridge to chill for around 15 mins to firm up.
- Mix the smoked paprika with the breadcrumbs and some seasoning on a plate. Put the flour and egg in separate shallow bowls. Dip the fishcakes in the flour, egg, and finally the breadcrumbs to coat. Transfer to a baking sheet lined with baking parchment, drizzle with 1 tbsp oil and cook for 30-35 mins until cooked through and golden.
- Meanwhile, blanch the broccoli in boiling salted water for 1-2 mins, then drain and leave to steam-dry. Heat a griddle pan to high, toss the broccoli in 1 tsp oil, then griddle for 2-4 mins until tender. Whisk the soy and honey in a bowl, then toss through the broccoli. Serve with the fishcakes and a wedge of lemon, if you like.

- Slice onions finely.
- Chop the flesh of the capsicum finely.
- Cut the potatoes into 1cm cubes.
- Place all into a bowl with the Creole seasoning.
- Cut the fish into small pieces and mix through the potato mixture with the eggs, flour, salt and parsley.
- Heat frypan and add oil and butter.
- Cook 1 Tbs of the mixture, turning to brown both sides.
- Place fritters on absorbent paper.
- Serve with Corn Salsa, relish or a fruit chutney.

- Soak the chillies in boiling water. Soak 14 cocktail sticks in cold water. If you are using fresh banana leaves, blanch them in boiling water for a minute, then drain and refresh in cold water.
- Put the fish in a food processor and blend to a thick purée. Scoop into a bowl. Drain the chillies and put in the processor along with the rest of the ingredients and a pinch of salt. Blend to a paste. Add the paste to the fish and mix well.
- Drain the cocktail sticks. Put about 2 tablespoons of mixture in the middle of each piece of banana leaf. Fold the shorter sides of the rectangle into the middle so they overlap. Tuck the two protruding ends underneath to make a small package. Secure the two ends with a cocktail stick. Put the parcels smooth-side down on a barbecue hotplate or heated frying pan and cook for 5 minutes, or until the banana leaf has lightly browned and the parcels are hot in the middle. Unwrap before eating.
