SPICY THAI DIPPING SAUCE (NUOC CHAM)



Spicy Thai Dipping Sauce (Nuoc Cham) image

This is really good with spring rolls or egg rolls. The proportions in this recipe are highly individual. When I make it, I often do not add two serranos, and I also usually end up adding more sugar. This may taste funny if you just sip it, but try dipping an egg roll in it....heaven!!

1/2 cup fresh lemon juice (about 2 lemons)
1/4 cup Thai fish sauce
1 -2 tablespoon brown sugar
1 -2 hot red chili peppers or 1 -2 serrano chili, seeded and thinly sliced
1 garlic clove, minced

Steps:

  • Combine all ingredients in a bowl; let stand 10 minutes.

Number Of Ingredients 14

1 10 oz. bottle Thai chili sauce ( I like Thai kitchen brand)
zest and juice from:
2 lemons
2 limes
2 oranges
2 tbsp fresh grated ginger
2 tbsp peanut oil
4 cloves minced garlic
1/3 cup sugar
1/4 cup white wine
2 tbsp mirin (Japanese sweet wine)
1 tsp fish sauce
1 tsp sesame oil
I've varied this on occasion with the addition of things like mint, coconut, coconut milk, cilantro, or basil

Steps:

  • Combine all ingredients in a blender, food processor, or hand blender until well combined. Return to a well sealed container Mason jars are good for this. To make a slightly thicker sauce pour 1/3 cup of sauce into small saucepan, add 1 tsp cornstarch and bring to a light boil stirring constantly. This process with intensify the heat so you may want to add some sugar to taste to balance it.
