Oven-Baked Sunchoke Chips With Garlic and Smoked Paprika image

The high starch content of sunchokes makes them crisp up quickly in the oven. These chips are simply seasoned with salt, pepper, and paprika, but you could easily spice things up with a different blend. From Vegetarian Times, November 2013.

1 lb small unpeeled jerusalem artichoke, scrubbed and cut into 1/8-inch-thick slices (sunchokes)
1 tablespoon garlic oil
1/4 teaspoon coarse salt
1/4 teaspoon smoked paprika
1/4 teaspoon fresh ground black pepper

Steps:

  • Preheat oven to 400*F. Line baking sheet with foil.
  • Toss together all ingredients in large bowl.
  • Arrange sunchokes in single layer on prepared baking sheet, and bake 15 minutes. Flip chips with tongs, and bake 15 minutes more, or until crisp and golden.
  • Serve warm or at room temperature.

Homemade BBQ Potato Chips with Smoked Paprika image

2 (10-ounce) bags olive oil potato chips (or good quality chips)
2 tablespoons smoked paprika
1 tablespoon garlic powder
1 teaspoon sugar
1/2 tablespoon salt

Steps:

  • Preheat oven to 300 degrees F.
  • Place chips on an oven tray and bake for about 5 minutes until they are hot and they begin to release their oil.
  • While chips are in the oven mix together the paprika, garlic powder, sugar and salt.
  • When the chips are hot, sprinkle the spice mixture over them and carefully toss to season all of the chips. (Be careful of the hot tray.)
  • Serve warm or at room temperature.

Sunchokes are tubers, like potatoes, and resemble ginger root. They come from a type of sunflower native to North America. Many people try to peel sunchokes, but I find it is easier to wash them well before tossing them in oil. Parsnips and onions add a nice complexity to this side dish.

1/2 pound sunchokes (also called Jerusalem artichokes), chopped (see Cook's Note)
4 parsnips (about 1/2 pound), cut into large dice
1 small onion, cut into medium dice
2 cloves garlic, minced
2 teaspoons fresh rosemary, roughly chopped
1/4 cup canola oil
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium mixing bowl, combine the sunchokes, parsnips, onions, garlic, rosemary, canola oil, salt and pepper and toss until thoroughly combined.
  • Transfer to a sheet pan and roast until the vegetables are browned and tender, 20 to 25 minutes.

A tasty alternative to traditional deep fried chips with a bit of a kick!

Steps:

  • Pre-heat the oven to 200 C.
  • Cut the potatos into even size chips, there is no need to peel the potatoes this adds to the taste however if you want really chunky chips it is best to par-boil them for a few minuites before they go in the oven.
  • Spray a baking tray with the oil and sprinkle with salt pepper, garilc powder and paprika. Put the chips onto the seasoned tray and spray with oil 7 or 8 times. Cover with more pepper, salt paprika and the garlic powder.
  • Bake in the oven for 40-50 minutes, depending on their size and how cripsy you like them, turn the chips once half way through.
  • Serve immediately with whatever you fancy!
