1 pound cranberries (thawed if frozen)
1 cup dried cranberries
1 1/2 cups sugar
2 teaspoons vanilla extract
3 firm pears (such as Bosc), peeled and cut into 1/2-inch pieces
1/2 teaspoon ground cinnamon
Pinch of ground allspice
1 cup plus 2 tablespoons all-purpose flour
1 cup pecans, chopped
1/4 cup old-fashioned rolled oats
1/4 teaspoon salt
1 stick unsalted butter, melted

Steps:

  • Preheat the oven to 375 degrees F. Combine the fresh and dried cranberries in a large bowl. Add 1 cup sugar, 3 tablespoons water and the vanilla and toss to coat. Lightly smash with a potato masher or fork to burst some of the cranberries. Add the pears, cinnamon, allspice and 2 tablespoons flour and toss to coat. Transfer to a 3-quart baking dish.
  • Make the topping: Mix the remaining 1 cup flour, the pecans, oats, the remaining 1/2 cup sugar and the salt in a medium bowl, then stir in the melted butter. Use your fingers to pinch the topping into small clumps and sprinkle it over the fruit.
  • Bake until the fruit is bubbling and the topping is golden brown, about 40 minutes. Serve warm or at room temperature.

2 pounds firm Macoun apples (6 apples)
3/4 cup dried cranberries
1 teaspoon grated orange zest
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed orange juice
2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
3/4 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1 cup old-fashioned oatmeal
1/2 pound (2 sticks) cold unsalted butter, diced

Steps:

  • Preheat the oven to 350 degrees F.
  • Peel and core the pears and apples and cut them into large chunks. Place the fruit in a large bowl and toss with the cranberries, zests, juices, granulated sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch baking dish.
  • For the topping:
  • Combine the flour, sugars, salt, oatmeal, and cold butter in the bowl of an electric mixer fitted with a paddle attachment. Mix on low speed for 1 to 2 minutes, or until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.
  • Place the baking dish on a parchment-lined sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm.

1 package(s) (3.4 oz.) vanilla flavor instant pudding
1/2 cup(s) sugar, divided
1 teaspoon(s) ground cinnamon
10 - fresh pears, peeled, cut into 3/4-inch thick slices
1 cup(s) fresh or frozen cranberries
6 tablespoon(s) butter, melted, divided
12 - vanilla wafers, coarsely crushed
1/4 cup(s) sliced almonds

Steps:

  • In a small bowl, mix dry pudding mix, 1/4 cup of the sugar, and cinnamon until well blended. Mix the fruit in a large bowl with 1/4 cup of the melted butter. Add the pudding mixture and mix lightly.
  • Spoon into the slow cooker; cover with lid. Cook on LOW for 3 to 4 hours.
  • While the mixture is cooking, combine the crushed wafers, nuts, remaining sugar and butter in a shallow microwaveable dish. Microwave on HIGH for 1 minute; stir. Microwave another 1-1/2 to 2 minutes or until golden brown, stirring every 30 seconds. Cool.
  • Just before serving, sprinkle the dessert with crumb mixture. Top each serving with whipped topping, if desired--or vanilla ice cream!
  • NOTE: do NOT cook on the HIGH setting of the slow cooker. This will cause the fruit to break down and become mushy.

1/2 cup sugar

TOPPING:
1 cup all-purpose flour
2/3 cup packed brown sugar
1/2 cup old-fashioned oats

Whipped cream and fresh mint, optional

Steps:

  • Combine the first eight ingredients; mix well. Pour into a greased 9-in. square baking pan. For topping, combine flour, brown sugar, oats and salt; cut in butter until crumbly. Sprinkle over fruit. Bake at 350° for 50-60 minutes or until pears are tender. Garnish with whipped cream and mint if desired.

3 large pears, peeled and sliced
1/2 cup fresh cranberries
1 teaspoon cornstarch
1/8 cup packed brown sugar
1 teaspoon vanilla
1/2 cup whole wheat pastry flour
3/4 cup oats (old fashioned is good)
1/8 teaspoon salt
1/4-1/2 cup packed brown sugar
3 tablespoons butter, melted
1/2 teaspoon vanilla

Steps:

  • In a bowl, toss pears with cornstarch. Add in cranberries, vanilla and brown sugar and stir gently to coat pears. Pour into an 8x8 pan.
  • Mix dry ingredients for topping. Stir in melted butter and vanilla. Crumble over fruit mixture.
  • Cover with foil and bake at 350 degrees for 20 minutes. Uncover and bake for 15-20 minutes more or until topping is lightly golden and pears are tender. Serve warm with vanilla ice cream or whipped cream, if desired.

2 Comice pears - peeled, cored, and cubed

½ cup quick cooking oats
¼ cup ground walnuts
½ cup butter

Steps:

1 medium orange
10 medium pears
2 cups cranberries
4 (3 inch) cinnamon sticks
1 whole nutmeg
⅓ cup pure maple syrup
8 cups water
Garnish:
1 medium orange, sliced
1 medium pear, sliced
¼ cup fresh cranberries
2 (3 inch) cinnamon sticks

Steps:

  • Push cloves into the orange rind. Cut orange into quarters and place in a large slow cooker.
  • Cut pears into quarters, leaving peels and cores. Place in the slow cooker, along with cranberries, cinnamon sticks, and whole nutmeg. Pour in water, cover, and cook on Low for 4 hours.
  • Mash all ingredients with a whisk or potato masher. Continue to cook for 1 more hour.
  • Strain all solids with a fine mesh sieve. Rinse out the slow cooker.
  • Return the strained cider to the slow cooker. Pour in maple syrup and stir to combine. Add orange and pear slices, cranberries, and cinnamon sticks for garnish.

I have increased the amount of orange juice to 1/2 cup based on a review - I made the dish with the new, increased amount, and it was perfect. Because it's somewhat tart, I prefer serving with vanilla ice cream, but sweetened whipped cream is good, too.
