PORK CHOP SOUP
A cheap but tasty, hearty soup that you'll always have seconds of. Serve fresh, with bread if desired.

Steps:
- Place pork chops, paprika, oregano, garlic powder, salt, pepper, chili powder, bay leaf, chicken broth, water, and soy sauce in a large stock pot. Bring to a boil, uncovered, then reduce heat to medium low and let simmer for 1 hour. Remove the pork chops and set aside to cool.
- Whisk 3/4 cup of the cooking liquid with the flour; set aside. When the pork chops are cool remove and discard any bones or fat. Chop or shred the meat into bite size pieces.
- Add the potato, broccoli, carrot, onion, celery, and cooked pork back to the pot. Bring the mixture to a boil, stir in the flour mixture. Reduce heat and simmer for 1 hour. Remove the bay leaf and gently mash the potatoes before serving.

- In a skillet over medium heat, melt butter. Brown chops for 3 minutes on each side.
- Add the potatoes, carrots and onion. Combine soup and water; pour over the top.
- Cover and simmer for 15 to 20 minutes or until the vegetables are tender.

SOUPER PORK CHOPS
My kids really like these made with the tomato soup but it can be made with cream of mushroom soup too. These are pretty simple to make and the chops come out really tender. I usually serve these with rice.

Steps:
- Preheat oven to 350 degrees.
- Brown pork chops and arrange in a 9x13 pan.
- In a pan over low heat mix together the soup, water and oregano.
- Remove from heat.
- Stir in 1/2 of the can the french fried onions and the sour cream.
- Pour over the pork chops in the pan.
- Cover with foil and bake for 1 hour or until pork chops are tender.
- Remove the foil and sprinkle the rest of the french fried onions over the chops.
- Bake 5 minutes longer.
KITTENCAL'S EASY MUSHROOM SOUP PORK CHOPS
My family *loves* this! I have written the easy method which does not include browning the chops, I would suggest to brown them first it really makes a difference in the taste and also reduces cooking time slightly but it is not necessary, fresh sauteed mushrooms may be replaced for the canned, do not use the thin fast fry chops for this

Steps:
- Set oven to 350 degrees F.
- Butter a 13 x 9-inch baking dish.
- Place the pork chops in the baking dish in one layer.
- In a bowl combine all remaining ingredients except the cheddar cheese, until well blended, then pour over the chops (lifting and turning the chops to coat with the sauce).
- Cover and bake for about 45 minutes (cooking time will vary depending on the thickness of your pork chops).
- Uncover and bake for another 15 minutes.
- At the end of cooking sprinkle with grated cheddar cheese and return to oven for a few minutes to melt the cheese (the cheddar cheese is only optional).
SUPER TENDER SMOTHERED PORK CHOPS
I've been making this simple dish for years. Plenty of gravy for mashed potatoes or rice. Sometimes I bake this covered in the oven at 350F - they come out just as moist and tender. Use bone-in or boneless chops. These are even better in the crock pot, if you have that much time.

Steps:
- 1. In a medium bowl, thoroughly blend condensed soup (Do NOT add any water), dry gravy mixes, salt and pepper. Fill one soup can 3/4 full of water and whisk into mixture. Mixture will be very thick. Set aside.
- 2. Sear chops on each side in 1-2 tablespoons of hot oil. Remove from pan and set aside.
- 3. Add one more tablespoon oil, if necessary, to pan.
- 4. Saute onion over medium-low heat until translucent, but crisp/tender - about 5-8 minutes. Stir frequently. Do not allow onions to brown.
- 5. Add garlic and saute for 1 more minute. Do not brown.
- 6. Remove pan from heat.
- 7. Fold onion/garlic mixture into soup mixture.
- 8. Return chops to frying pan.
- 9. Pour soup/onion mixture evenly over chops.
- 10. Cover and bring to a simmer over medium-high heat.
- 11. Lower temperature and simmer gently for 45 minutes to one hour.
- 12. Thinner chops will take about 45 minutes to become really tender.

Steps:
- Brown the pork chops in the oil while they are browning, mix the cream of mushroom soup and onion soup mix together with one can of water.
- After chops are browned add the mixture to the frying pan with the chops and simmer for 50-55 minutes, I serve mine over egg noodles, but you can use rice if you prefer.
- Mighty tasty!
