I was looking for cranberry recipes, and was given this one to try. Would be great for a dinner party or an appetizer. Enjoy!

1 (16 ounce) can whole berry cranberry sauce
1/4 cup sugar
1/4 cup red wine vinegar
1/2 red onion, thinly sliced into rings
2 garlic cloves, minced
2 tablespoons minced fresh basil
1 teaspoon oregano
1 loaf French bread (around 8 oz)
olive oil (to brush on the bread)

Steps:

  • Combine all ingredients, except bread and oil, in a medium saucepan.
  • Cook on medium heat, stirring occasionally, until onion is limp and sauce has thickened, about 30 minutes.
  • Cool to room temperature.
  • Cut bread diagonally into 3/4-inch slices; brush both sides with oil.
  • Broil each side for 1 to 2 minutes or until golden brown.
  • Top each slice with cranberry mixture.

1 1/2 cups Ocean Spray® Fresh or Frozen Cranberries
1/4 cup sugar
2 tablespoons red wine vinegar
1/2 red onion, thinly sliced into rings
2 garlic cloves, minced
2 tablespoons minced fresh basil
1 teaspoon oregano
1 8-ounce loaf French bread
Oil

Steps:

  • Combine cranberries, sugar and red wine vinegar in a medium saucepan. Bring to a boil. Add onion and garlic, return to a boil and reduce heat. Simmer on low for 10 minutes or until cranberries pop.

This is an easy appetizer and a great way to use up leftover cranberry sauce from the holidays. I saw this on Michael Chiarello's show on the food network. We love it - hope you do too!

1 garlic clove, cut in half
1 French baguettes or 1 sourdough baguette, sliced
3/4 cup cranberry sauce
3/4 cup crumbled blue cheese

Steps:

  • Slice the bread into 1 1/2" slices.
  • Rub the garlic clove on one side of each piece of bread and lay out on a baking sheet.
  • Spread each piece of bread with cranberry sauce.
  • Sprinkle each piece with the blue cheese.
  • Have your rack about 2 down from the top of the oven and broil (or low broil if you have that option) until the cheese melts.
  • Serve immediately.

Number Of Ingredients 5

1 French Bread Baguette
2 Tablespoons butter, room temperatures
4 ounces whipped cream cheese
1/4 cup cranberry sauce
3 large basil leaves, diced

Steps:

  • Slice french bread into 1 inch slices.
  • Place slices onto a cookie sheet.
  • Spread a light layer of butter onto one side of each slice of french bread.
  • Place cookie sheet into cold oven.
  • Turn on broiler.
  • Broil for 3 - 4 minutes or until butter is melted and center of each slice is GENTLY toasted. You do not want to over cook these or they will shred your gums.
  • Remove from oven and cool.
  • Once cooled, spread each slice with cream cheese.
  • Gently spread a teaspoon of cranberry sauce on top of cream cheese.
  • Sprinkle a light amount of diced basil on top of each.
  • Serve immediately and enjoy!

  • Place the cranberries, ginger, sugar, honey and Sriracha in the bowl of a food processor. Pulse on and off several times till cranberries are coarsely chopped. Don't process too much.
  • Add cilantro and pulse a few more times. Not too much, you want cilantro bits to be visible and mixture to be a bit chunky.
  • Transfer to a storage container and add pomegranate arils* and orange zest. Refrigerate for at least 2 hours or till ready to use.
  • For the crostini, preheat oven to 350˚F. Line 2 sheet pans with foil or parchment paper, if desired for easy clean up.
