Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Mix brown sugar, butter, and egg in a bowl until well blended.
- Mix hemp seeds, flour, and cinnamon together in a separate bowl. Stir into the brown sugar mixture until dough comes together.
- Drop spoonfuls of dough onto the baking sheet; flatten with the back of the spoon.
- Bake cookies in the preheated oven until edges are crisp, 8 to 11 minutes. Transfer to a wire rack to cool, 10 to 15 minutes.

- Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets. Grind the oats in a blender until resembling coarse flour.
- In a medium bowl, mash beans to a smooth paste. Stir in the white sugar, brown sugar and vanilla until well blended. Combine the ground oats, baking powder, baking soda and cinnamon; blend into the bean mixture. Stir in the dates, coconut, raisins and walnuts. Drop dough by heaping spoonfuls onto the prepared cookie sheet.
- Bake for 10 to 15 minutes in the preheated oven, until golden. Cool on baking sheets for 5 minutes then remove to wire racks to cool completely.

- Heat oven to 150C/130C fan/gas 2. Line a baking tray with baking parchment. Using children's scissors, cut the apricots into small pieces.
- Put the butter and sugar in a mixing bowl and beat well with a wooden spoon. Use very soft butter to make it easy for young wrists to beat the butter and sugar together. Add the condensed milk, beat well, then add the oats and apricots, and mix well again. Finally, add the flour and mix until it starts to disappear - you can use your hands to mix it, too.
- Bring the dough together into one big ball, then break into 6 equal-sized lumps (this ensures the cookies bake at the same time). Roll each into a ball, then squash onto the baking parchment with the palm of your hand.
- Bake for 25-30 mins until golden on the edges. Leave to cool on the tray. The cookies will keep in an airtight container for up to 3 days.

PEANUT BUTTER NO-BAKE ENERGY COOKIES
This is a chocolatey peanut butter cookie with a hint of banana. I like to use flavored peanut butter to give it some flare. I have used chocolate-peanut butter. You can also use a cinnamon raisin peanut butter or a white chocoalate-macademia PB. They are made by Peanut Butter & Company, and it can be found in the PB aisle at most grocery stores. Usually on the top shelf.

- Combine the banana, milk, Splenda and cocoa in a sauce pan over medium heat, bring to a boil. Stir constantly for 1 minute. Add vanilla, then peanut butter and then oatmeal.
- Remove from heat & mix well. Before the mixture has time to harden, quickly drop onto was paper using a dinner spoon.
- Allow to cool at room temperature, enjoy.

- Preheat oven to 350 degrees. In a mixing bowl whisk together oats, flour, ground toasted coconut, flax seed meal, baking soda, baking powder, salt and chocolate chips for 20 seconds, set aside.
- To a food processor add peanut butter, applesauce, coconut oil, honey, brown sugar, egg and vanilla. Pulse until combined, about 15 seconds (you may need to stop once and break up brown sugar with a spatula).
- Pour wet mixture over dry mixture and fold with a spatula to combine (dough will be fairly wet). Scoop dough out using a medium cookie scoop and drop onto baking sheets lined with parchment paper or silicone liners, spacing cookies 1 1/2-inches apart.
- Flatten cookies to about half their original size (they really won't spread or puff up much). Bake in preheated oven 9 minutes. Cool on baking sheet 5 minutes then transfer to a wire rack to cool completely. Store in an airtight container in refrigerator for longer shelf life.
