- Heat oven to 200C/180C fan/gas 6. Mix together the chopped walnuts, parsley, sumac, red onion, lemon zest and juice of half the lemon. Season lightly and set aside.
- Put the salmon on a baking tray and roast for 12 mins, then remove, spread with the hummus and return it to the oven for another 3 mins. Sprinkle over the walnut mixture and serve with the remaining lemon half to squeeze over along with couscous, pita or flatbreads, and yogurt on the side, if you like.

Steps:
- Tear bread into pieces and place in a small bowl, cover with cold water and stand for 1 minute, then drain and squeeze out excess moisture.
- Using a food processor, process almonds and garlic to form fine crumbs.
- Add soaked bread and process to combine.
- With motor running, gradually pour in 1/2 cup water, followed by combined oil and lemon juice.

- In a large bowl, toss shrimp with olive oil and garlic slices.
- Crush rosemary slightly with fingers and tuck down into shrimp.
- Cover and refrigerate for 3-4 hours.
- In the meantime, make sauce:.
- Cut crusts from bread slices and tear into 1" pieces.
- Combine bread pieces, pine nuts, lemon juice, water, garlic cloves, salt and pepper in a blender or food processor for 30 seconds.
- Scrape down sides and blend for 30 more seconds or until smooth.
- Cover and chill until ready to use.
- Thread shrimp onto skewers, (about 5 on each).
- Grill covered with grill lid over high heat (500-550 degrees Fahrenheit) for 1 and 1/2 minutes per side.
- Serve hot or at room temperature with sauce.
