Recipe video above. It's hard to believe these fritters made with chicken mince are BAKED not FRIED! With almost an entire head of broccoli in them, these are juicy, cheesy and so irresistible. This makes 15 fritters about 6 cm / 2.25" wide, 1cm / 2/5" thick. Trying making burgers or meatballs!

500 g / 1 lb chicken mince (ground chicken) (, or turkey or pork (Note 1))
1 garlic clove, (minced)
1 egg
¾ cup panko breadcrumbs
2 packed cups broccoli (, soft cooked & finely chopped (1 head)(Note 2))
¾ cup finely chopped shallots
1 1/2 - 2 cups shredded mozzarella ((or other cheese of choice))
3/4 tsp salt ((reduce to 1/2 tsp if using a flavoured cheese)(Note 3))
Black pepper
Oil spray
2/3 cup plain yoghurt
1/8 tsp EACH dried dill, parsley and chives
¼ tsp onion powder
½ garlic clove, minced
1 - 2 tsp extra virgin olive oil
Squeeze of lemon juice, (optional)

Steps:

  • Preheat oven to 200C/390F. Line a baking tray with baking paper (or spray with oil).
  • Place Fritter ingredients in a bowl, mix to combine.
  • Measure out about ¼ cup of mixture and pat into fritter shapes about 6 cm / 2.25" wide, 1cm / 2/5" thick (they shrink a bit and become thicker).
  • Place on tray. Spray the top (generously) with oil.
  • Bake for 15 minutes, flip, spray with oil again then bake for a further 8 - 10 minutes until golden on top. Serve immediately with Sauce.
  • Sauce: Mix ingredients together. Add salt and pepper to taste. Set aside for 20+ minutes.

Steps:

  • Preheat oven to 200C/390F (standard) or 180C/350F (fan/convection).
  • Place a rack on a tray, and spray the rack with oil.
  • Place Meatball ingredients in a bowl, mix well. Scoop up a heaped tablespoon, roll into a ball and place on the rack. Repeat with remaining mixture - should make 25 - 30. Tip: spray hands with oil or wet lightly with water.
  • Spray each ball well with oil, then bake for 25 minutes until golden brown. Give 'em a squeeze and you'll see how soft they are!

500 g (1lb) ground chicken / chicken mince
1/3 cup Panko breadcrumbs
1 extra-large egg (beaten)
¼ cup Parmesan cheese (grated )
1 tbsp dried Italian herbs
½ tsp black pepper
1 tsp salt
1 onion (finely chopped)
2 garlic cloves (crushed)
2 tsp dried Italian herbs
400 g (14oz) chopped tomatoes
2 cups tomato puree / tomato passata
pinch of sugar ((optional))
salt and pepper (to taste )
Parmesan cheese (for serving)
fresh basil (for serving)
500 g (1lb) pasta of your choice

Steps:

  • Combine the chicken, Parmesan, seasoning, egg and breadcrumbs in a large mixing bowl. I used panko breadcrumbs but feel free to use Italian breadcrumbs or fresh.
  • With wet hands, form the meatballs and place on a parchment lined plate or chopping board.
  • Heat a large skillet or pan (Use a slightly deeper pan to make sure the sauce doesn't boil over) over medium-high heat.
  • Add a splash of oil then add the meatballs, cooking in batches until they are golden brown on all sides. Remove from the pan and set aside.
  • In the same pan you cooked the meatballs, add chopped onion and cook for a few minutes until soft and translucent. Add the garlic and herbs and cook for a few seconds until fragrant.
  • Pour in the chopped tomatoes, tomato puree, herbs, sugar, salt and pepper. Bring to a simmer and cook over medium heat for 10 minutes then carefully add the meatballs to the sauce. Cook for another 10 minutes while the pasta cooks. If the sauce looks like it's reducing too much, add ½-1 cup water or stock.
  • Cook the pasta in a large pot of salted, boiling water until al dente, approximately 10 minutes (depending on shape). Drain then add to the pan with the meatballs and sauce and toss well.
  • Serve topped with Parmesan cheese and fresh basil.

  • In a large bowl, combine the first eight ingredients. Crumble beef and pork over mixture and mix well. Shape into 1-3/4-in. balls. , Place meatballs on a greased rack in a shallow baking pan. Bake at 350° for 25-30 minutes or until a thermometer reads 160°; drain., Meanwhile, in a large saucepan, saute onion and garlic in oil until tender. Stir in the tomatoes, tomato sauce and paste, water, parsley, sugar, basil and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes, stirring occasionally. , Add meatballs to sauce; simmer 5 minutes longer or until heated through. Serve with spaghetti.

1 400 g tin tomatoes
200 ml beef stock
450 g chicken mince
1 Onion
1 carrot
1 celery stick
1 garlic clove
1 tbsp tomato puree
200 g thinly sliced mushrooms
1 tbsp dried Italian herbs
1 tbsp freshly chopped basil
Salt and pepper
1 bay leaf
1 tsp oil
300 g wholemeal spaghetti
Cheese to serve

Steps:

  • Finely chop the onion, carrot, celery stick and garlic clove so that they are all the same size and very finely diced.
  • Heat the oil in a frying pan and cook the chopped vegetables until softened and sweet.
  • Add the tomato puree and cook for two minutes, then add the chicken mince and cook until no longer pink.
  • Add the tomatoes, stock, mushrooms, dried herbs, basil, salt and pepper and bay leaf. Bring to a simmer and cook for at least one hour. Remove the bay leaf.
  • Meanwhile, cook the spaghetti according to packet instructions. Serve the sauce tossed with the spaghetti and sprinkle cheese over the meal if you like.

We love these crock pot meatballs. They are made with lean ground chicken, parmesan cheese, parsley, and oregano, and then cooked in a simple garlic and basil tomato sauce. 2 (28-ounce) cans crushed tomatoes
2 tablespoons tomato paste
1 medium onion, split in half
4 garlic cloves, minced (about 1 1/2 tablespoons)
2 tablespoons extra-virgin olive oil
1 bay leaf
1/4 teaspoon crushed red pepper flakes
1 large stem fresh basil sprig
Salt, to taste
1 pound ground chicken, see notes
1/3 cup (25 grams) panko bread crumbs
1/3 cup milk
1 large egg
1 ounce Parmigiano-Reggiano cheese, finely grated (about 1/3 cup)
2 tablespoons finely chopped parsley
3/4 teaspoon dried oregano
1/2 teaspoon sea salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Add the tomatoes, tomato paste, halved onion, garlic, olive oil, bay leaf, red pepper flakes and the basil sprig to a slow cooker. Stir then add salt to taste - we use between 1/2 teaspoon and 1 teaspoon of salt, depending on the tomatoes. It will be cold, but you will get a good idea of whether or not the sauce is well seasoned.
  • Cover and cook on LOW for 6 hours or on HIGH for 3 hours. Remove the onion, bay leaf and basil sprig. Taste then add additional salt as needed.
  • The meatballs can be prepared ahead of time, see notes below. Combine panko breadcrumbs and the milk in a large bowl. Wait 3 to 5 minutes until the breadcrumbs have absorbed most of the milk then whisk in the egg. Whisk in the parmesan cheese, parsley, oregano, salt, and the pepper.
  • Add the chicken and use a fork or your hands to then blend the chicken and the egg mixture together. The meatball mixture will be quite moist. Shape into one-inch meatballs, pressing no more than necessary. This recipe makes approximately 18 meatballs.
  • Once the tomato sauce has finished cooking and the onion has been removed, add the chicken meatballs. To add them, use a spoon or two forks to gently lower them into the sauce. Cover the tops of the meatballs by gently pushing sauce over each meatball. Cook on HIGH for 1 hour or until the meatballs are cooked through.

  • In a large bowl, mix together all the ingredients except ground chicken and oil. Mix well and add the ground chicken. Mix till just combined. Form the mixture into approximately 18 meatballs. Set aside.
  • Heat two tablespoons Olive Oil in a pan and add as many meatballs as will fit into the pan without overcrowding. You may have to do this in batches. On high heat, brown the meatballs on all sides and remove them on a plate.
  • Heat two tablespoons olive oil and a tablespoon of butter in the same pan. Add garlic and onions. Cook till the onions soften and become translucent. Add the mushrooms and cook for another 2-3 minutes.
  • Stir in the flour and cook for another minute to get rid of the raw flour flavour. Slowly add the chicken broth and keep whisking continuously till the sauce thickens.
  • Stir in the rosemary, parsley, paprika, salt, pepper and meatballs. Add a little more stock or water if the sauce is too thick. Simmer the meatballs for ten minutes. Stir in the heavy cream and switch off the flame. Serve hot with noodles, rice or mashed potatoes.

  • Place ground beef in a bowl, add all ingredients EXCEPT flour and mix well. Gently combine all the ingredients with your hands or with a spoon, until just mixed together. Do not overwork or the meatballs will become tough. Cover and leave to marinate for 30 minutes. Add half (1/2) cup flour to the seasoned beef. Divide into 12 equal pieces and shape into balls. Heat frying pan then add Grace Vegetable Oil. Use the remaining flour to dust the meat balls. Add floured meat balls to frying pan and fry for ten minutes or until golden brown. 300g broccoli , cut into small florets
1 tbsp olive oil
3 large skinless boneless chicken breasts, cut into bite-sized chunks
2 garlic cloves , crushed
2 tbsp wholegrain mustard
juice of 1 large or 2 small oranges
25g flaked almond , toasted

Steps:

  • Cook the pasta in plenty of boiling salted water according to the packet instructions. Three minutes before the pasta is cooked, throw the broccoli into the pasta water and continue to boil.
  • While the pasta is cooking, gently heat the oil in a large frying pan or wok. Tip in the chicken and fry, stirring occasionally, until the chicken pieces are cooked and golden, about 8-10 minutes, adding the garlic for the last 2 minutes.
  • Mix the mustard with the orange juice in a small bowl. Pour the mixture over the chicken, and gently simmer for a minute or two. Drain the pasta and broccoli, reserving 3 tablespoons of the pasta water. Toss the pasta and broccoli with the chicken, stir in the pasta water and the almonds, season well and serve.

Steps:

  • In a large bowl, combine ground beef, bread crumbs, parsley, Parmesan, 1/4 teaspoon black pepper, garlic powder and beaten egg. Mix well and form into 12 balls. Store, covered, in refrigerator until needed.
  • In a large saucepan over medium heat, saute onion and garlic in olive oil until onion is translucent. Stir in tomatoes, salt, sugar and bay leaf. Cover, reduce heat to low, and simmer 90 minutes. Stir in tomato paste, basil, 1/2 teaspoon pepper and meatballs and simmer 30 minutes more. Serve.

1 cup ground chicken
2 tablespoons olive oil
salt
2 onions, chopped
5 -6 garlic cloves, chopped
4 tablespoons tomato puree
1 -2 red chile, crushed
10 -12 fresh basil leaves, washed and chopped
7 -8 teaspoons black peppercorns, crushed
1 teaspoon dried parsley
1 tablespoon cheese, grated

Steps:

  • Boil 6 cups of water in a large pan.
  • Add 1/2 tablespoons of oil and salt to taste.
  • Fold in spaghetti and cook until al dente.
  • Drain and keep warm once cooked.
  • Heat the remaining oil in a pan.
  • Fold in garlic and onions. Saute until light brown in colour.
  • Add chicken mince, mix well and cook on low flame till the mince has cooked.
  • Stir in tomato puree and crushed red chillies. Saute for a minute.
  • Season with salt, then add basil and remove from heat.
  • Arrange spaghetti on a serving platter.
  • Sprinkle crushed peppercorns, parsley and cheese over it.
  • Pour chicken sauce with a spoon over it.
  • Put the platter under a hot grill for 2 minutes to melt the cheese.
  • Serve immediately.

This is seriously good comfort food and a fantastic alternative to the perennial favourite 'spag bol'. I copied it out of an Australian Womens Weekly recipe book years ago . Although the original suggested wholemeal spaghetti, any spaghetti, fettuccine, penne, fussili etc can be used. The recipe also says bottled pasta sauce, but I make my own by cooking onions and garlic in oil for 5 minutes, adding 1 can of chopped tomatoes and 1 cup of chicken stock. Simmer for about 10 mins and then puree - add more stock and tomotoes as needed. Note that you'll need to have 1 cup cooked rice for the recipe.

1 kg chicken breast fillet, skin removed and minced
1 medium onion, finely chopped
1/4 cup grated parmesan cheese

  • Add rice to a saucepan of boiling water and cook for 15-20 minutes, or as per rice packet instructions. Drain and rinse with cold running water.
  • In a bowl, combine the minced chicken, 1 chopped onion, parmesan, breadcrumbs, cooked rice and basil. Roll rounded tablespoons of the mixture into balls and place on a tray. Cover and refrigerate for 1 hour.
  • Coat a large frypan with the oil spray, add the extra 2 chopped onions and 1/4 cup of the chicken stock, stirring until the onions are soft.

1 pound Ground Chicken or Chicken Mince ((SEE NOTES))
2 cloves Garlic (- minced or pressed)
1 large Egg (- lightly beaten)
1/2 Cup Panko Breadcrumbs
1/4 Cup Freshly Grated Parmesan (- plus more for serving)
2 tsp Italian Seasoning
1 1/2 tsp Chili Powder
1 1/4 tsp Crushed Red Pepper Flakes ( - plus more for garnish)
½ tsp EACH: Sweet Paprika & Smoked Paprika ((SEE NOTES))
Kosher Salt and Ground Black Pepper
5 - 6 Cups Vodka Sauce (- homemade or store-bought)
8 ounces Burrata

Steps:

  • Preheat oven: Arrange oven rack to lower-middle position. Preheat oven to high broil.
  • Prepare meatball mixture: Grate the onion into a large mixing bowl. To the same mixing bowl, add the chicken, garlic, egg, breadcrumbs, parmesan, Italian seasoning, chili powder, red pepper flakes and both types of paprika. Season with ¼ teaspoon each of salt and pepper. Use your hands to mix everything together well.
  • Form and roll meatballs: Spray your hands lightly with olive oil to prevent sticking. Roll and form the meat into firm, golf-ball sized meatballs, roughly 2 tablespoons of mixture each. (You should have about 15 meatballs).
  • Add sauce to baking dish: Pour the vodka sauce into a 9x13-inch baking dish. Spray a large oven-safe wire rack with non-stick cooking spray. Place the rack securely on top of the baking dish.
  • Add meatballs to rack: Place the meatballs on top of the oiled rack. Make sure you arrange the meatballs so that they are over the pan and the juices will drip into the sauce. Lightly spray the top of the meatballs with oil.
  • Broil: Broil the meatballs (over the sauce) for 8-9 minutes, or until the tops are golden brown. Remove from oven and flip the meatballs over. Continue to broil for an additional 2-3 minutes. Remove from oven. Reduce oven temperature to 400 degrees Fahrenheit.
  • Add meatballs to sauce: Carefully remove the rack of meatballs from the top of the sauce. Stir the sauce, taste and adjust for seasoning with salt and pepper. Transfer the meatballs from the rack into the sauce.
  • Bake: Cover the pan and bake the meatballs for 20 minutes, or until meatballs are cooked through (internal temperature of 165 degrees F).
  • Uncover and add cheese: Uncover the pan and break the burrata on top of the meatballs and sauce, evenly distributing the cheese. Return to the oven and bake (uncovered) for an additional 8-10 minutes, or until the cheese is melted.
  • Serve: Garnish with fresh basil and parsley. Sprinkle with more parmesan and enjoy plain or with your favorite pasta or bread!
