Steps:

  • Heat oven to 400ºF.
  • Mix first 4 ingredients with 1 cup cheese and 1/2 cup salsa just until blended.
  • Press into 12 muffin cups sprayed with cooking spray. Use back of spoon to make indentation in center of each mini meatloaf. Place muffin pan on foil-covered baking sheet.
  • Bake 20 to 25 min. or until meatloaves are done (160°F). Top with remaining salsa and cheese; bake 3 min. or until cheese is melted.

2 teaspoons honey
1 tablespoon white vinegar
1 tablespoon Club House® Taco Seasoning
1 tablespoon olive oil
¼ cup yellow onion, minced
1 clove garlic, minced
2 lb lean ground beef
¼ cup bread crumbs
1 packet Club House® Taco Seasoning
2 large eggs, beaten
nonstick cooking spray, for greasing
12 small flour tortillas
guacamole
salsa
shredded cheese
sour cream

Steps:

  • Make the taco sauce: In a medium bowl, whisk together the tomato sauce, honey, vinegar, and Club House® Taco Seasoning until smooth. Set aside.
  • Make the meatloaf muffins: Preheat the oven to 180°C (350°F).
  • Heat olive oil in a medium pan over medium-high heat. Add the onion and sauté for 4-5 minutes, until softened and starting to brown. Add the garlic and sauté for another minute, until fragrant. Remove the pan from the heat.
  • Add the ground beef to a large bowl with the cooked onion and garlic, bread crumbs, Club House® Taco Seasoning, eggs, and ½ cup taco sauce. Mix until well combined.
  • Divide the beef mixture into 12 4-ounce balls.
  • Grease a muffin tin with nonstick spray. Gently press the tortillas into each muffin cup, making mini bowls. Place a meatloaf ball in each bowl and top each with 1 teaspoon taco sauce.
  • Bake the meatloaf muffins for 30 minutes, or until the internal temperature of the beef reaches 70°C (160°F). Let the muffins cool in the tin for 5 minutes.
  • Remove the muffins from the tin. Serve with guacamole, salsa, shredded cheese, and sour cream for topping.

1/2 c sour cream
1/3 c salsa
3-4 Tbsp taco seasoning (store bought)
salt to taste
1 c crushed tortilla chips
1/2 c shredded cheddar cheese

optional sliced tomato, chopped black olives, chopped green onion, shredded lettuce

Steps:

  • 1. In a large bowl, whisk egg and add all ingredients except ground beef. Mix well. Add ground beef and mix well.
  • 2. Shape into loaf in baking dish. Bake at 350 F for 60-70 minutes. Time will depend on how thick you make your loaf.
  • 3. While hot, place on serving platter. Top with sliced tomato and grated cheese. Loosely cover with foil so the heat from the meatloaf melts the cheese.
  • 4. Meanwhile, prepare any combination of shredded lettuce, chopped green onion, chopped black olives, sour cream and extra salsa to serve on the side or on top of meatloaf.

Steps:

  • Preheat oven to 450°F. Line a rimmed baking sheet with foil. Spray a six-cup muffin tin with nonstick cooking spray and set on top of the baking sheet.

2 Tbsp extra virgin olive oil
1½ lbs. ground beef, 80%
¼ cup yellow onion, finely chopped
1 large celery stalk, finely chopped
3 large eggs
2 Tbsp coconut flour*
½ tsp garlic powder
½ tsp onion powder
1 Tbsp tomato paste
2 tsp Italian seasoning
1 tsp dried rosemary leaves, finely chopped
½ tsp smoked paprika
salt and black pepper, to taste
¾ cup Colby Jack cheese, shredded

Steps:

  • Preheat oven to 375°F and spray muffin tin with non-stick cooking spray.
  • In a large bowl, thoroughly combine all ingredients together with your hands, except for the shredded cheese.
  • Divide beef mixture into 12 equal-sized portions and place into prepared muffin tins. Place in pre-heated oven for 20-25 minutes, or until the meat is cooked through.
  • Remove from oven and carefully drain excess moisture off the top of each muffin by gently tipping the tray over a large bowl to be discarded. Absorb excess liquid off top of muffin tin with a paper towel and top each muffin with shredded cheese.
