AMAZING SALMON TACOS

Amazing Salmon Tacos image

Absolutely, hands down, no doubt about it, the best recipe for fish tacos! Do your chopping ahead of time, as these tacos cook up fast! Fresh and light in taste, the flavor of delicious Alaskan Wild Salmon shines in this dish. You may also substitute halibut, or a similarly firm textured fish in place of the salmon. The leftovers are great served cold over a salad! I adapted this recipe from my mom's method of preparing salmon tacos.

Categories     Mexican

Time 25m

Yield 4 serving(s)

Number Of Ingredients 9

1 lb salmon, skinned and cut into one inch cubes
1 tablespoon cumin
1 teaspoon chili powder
2 tablespoons olive oil
1 medium yellow onion, chopped
2 limes, quartered
2 (8 ounce) cans diced tomatoes with green chilies, drained (like Rotel)
1/2 bunch fresh cilantro, chopped
1 bunch green onion, chopped

Steps:

  • Toss cubed salmon in cumin and chili powder. Set aside.
  • Heat large skillet over medium and cook yellow onion 2 minutes, until it begins to soften.
  • Turn heat up to medium high. Add salmon to skillet. Lightly sear salmon cubes for about 2-3 minutes, turning gently (don't break the salmon into pieces!).
  • IMPORTANT: Do not over cook the salmon. This juicy recipe will keep steaming the salmon. The salmon should still be firm in the middle of the cube when you proceed to the next step.
  • Return heat setting to medium. Add canned tomatoes and chilies, cilantro and green onions. Gently incorporate and heat through.
  • Squeeze quartered limes over the salmon mixture, give it a quick stir, and plate up the salmon (I usually drain a little liquid off at this point).
  • Serve with warm flour tortillas, quality salsa, sour cream, sliced avocado, and crisp romaine lettuce.

ROASTED SALMON TACOS

Time 2h5m

Yield 4 servings

Number Of Ingredients 23

3 tablespoons extra-virgin olive oil
2 teaspoons honey
1 teaspoon lime zest plus 2 tablespoons lime juice
Kosher salt
Dash hot sauce
1/2 small red onion, very thinly sliced
4 radishes, very thinly sliced
1/2 medium head red cabbage, finely shredded (about 7 cups)
1/2 cup loosely packed fresh cilantro leaves, coarsely chopped
2 ripe avocados, halved and pitted
1 cup sour cream
2 tablespoons chopped pickled jalapenos
Zest of 1 lime and juice of 1/2
Kosher salt
2 pounds skinless center-cut salmon fillet
1 tablespoon chili powder
Kosher salt
2 tablespoons extra-virgin olive oil
Flour Tortillas, recipe follows, kept warm
2 cups (254 grams) all-purpose flour, plus more for dusting
1 teaspoon kosher salt
1 teaspoon sugar
1/4 cup shortening or neutral oil

Steps:

  • For the red cabbage slaw: Preheat the oven to 450 degrees F.
  • Whisk together the olive oil, honey, lime zest and juice in a large serving bowl. Season with 1/2 teaspoon salt and the hot sauce. Add the red onion, radishes, cabbage and cilantro and toss well.
  • For the avocado sour cream: Scoop the avocado flesh into the carafe of a blender. Add the sour cream, pickled jalapenos, lime zest, juice and 1/2 teaspoon salt. Add 1 tablespoon water and blend until smooth. (If the mixture is too thick to blend, add 1 to 2 tablespoons more water and blend again). Transfer to a serving bowl and refrigerate until ready to serve.
  • For the salmon: Sprinkle the salmon all over with the chili powder and 1 teaspoon salt and rub it in. Heat a large ovenproof skillet over medium-high heat and add the olive oil. When the oil is hot, add the salmon top-side down and sear until browned, about 1 minute. Flip the salmon and transfer the skillet to the oven. Roast until the salmon is just cooked through, 8 to 10 minutes, depending on thickness.
  • To serve, break the salmon into chunks. Serve in Tortillas with the slaw and sour cream.
  • Combine the flour, salt and sugar in a medium bowl. Add the shortening or oil and mix until mealy. Stir in 3/4 cup water to form a dough. Turn it out onto a surface and knead, adding more flour if needed, until a smooth, slightly sticky dough is formed, 5 to 7 minutes. Cover the dough with plastic wrap or a towel and let it rest at room temperature for 30 minutes. (Full disclosure: When we're hungry, we skip this step. But letting the dough rest does make it easier to roll these out.)
  • Heat a dry skillet over medium heat. Divide the dough into 8 equal parts and roll them out on a lightly-floured surface until they're really thin, keeping the remaining dough balls covered. I like a 1/16- or 1/8-inch thickness but wouldn't turn down a 3/16-inch-thick one. Cook them in the skillet on both sides until they're just starting to show some brown spots, 45 seconds to 1 minute. Keep warm in a towel until ready to serve.

Time 1h50m

Yield 6 servings

Number Of Ingredients 19

1 tablespoon chili powder
1 tablespoon salt
1 tablespoon brown sugar
1 teaspoon cumin
1 teaspoon ground black pepper
1/2 teaspoon coriander
Pinch cayenne
2 1/2 pounds salmon fillet
1 cup apple cider vinegar
1/4 cup 80/20 blend oil
1/4 cup soy sauce
1/4 cup sugar
1 tablespoon lime juice
1 1/2 pounds cabbage, shredded
1 cup julienned carrots
1/2 cup chopped scallions
12 flour tortillas
2 tablespoons grapeseed oil
6 lime wedges

Steps:

  • For the salmon: Preheat the oven to 350 degrees F. In a small bowl, combine the chili powder, salt, brown sugar, cumin, pepper, coriander and cayenne.
  • Sprinkle the salmon fillet with a generously with the spice mix and rest the fish for 1 hour.
  • Roast the salmon in the oven until fully cooked, 15 to 20 minutes. Remove the salmon from the oven and cool slightly. Flake the salmon into medium chunks and season with salt and pepper.
  • For the slaw: In a bowl, combine the vinegar, oil, soy sauce, sugar and lime juice, and whisk until the sugar dissolves.
  • Add the cabbage, carrots and scallions, and mix well to coat all of the slaw with the dressing. Refrigerate the slaw for at least 1 hour before using.
  • For plating: Heat a cast-iron griddle over high heat until the griddle begins to smoke. Warm the tortillas on the griddle without any oil, just until they are pliable.
  • Heat the oil on the griddle and add the flaked salmon to bring back up to temperature if the salmon has cooled. (If the salmon is hot out of the oven skip this step.)
  • Place about 3 ounces of flaked salmon in the center of each tortilla and top with 2 ounces of slaw. Plate 2 tacos with a lime wedge for each serving.

TACO-SEASONED SALMON

Taco-Seasoned Salmon image

This is a recipe I created. I wanted Mexican food, but only had the seasoning and fish. I made this to cure my craving, and it was a success. Even my extremely picky daughter-in-law liked it!

½ cup Italian-seasoned bread crumbs
¼ cup taco seasoning mix
6 (3 ounce) fillets salmon fillets

SALMON TACOS

Salmon Tacos image

This easy salmon tacos with avocado slaw recipe is the best way to eat salmon! Spicy salmon with a cool, crunchy slaw. Simple and healthy!

Provided by Erin Clarke / Well Plated

Categories     Dinner

Time 30m

Number Of Ingredients 16

1 pound center-cut salmon fillet
1 tablespoon extra virgin olive oil
1 ¼ teaspoons chipotle chile powder (this has a kick. Use less according to your tastes.)
1 teaspoon garlic powder
1 small lime (zest and juice, divided (about 1 teaspoon zest and 1 1/2 tablespoons juice))
3/4 teaspoon kosher salt
Corn or flour tortillas (for serving)
Crumbled feta cheese or queso fresco (for serving)
1 medium ripe Hass avocado
1/2 cup nonfat plain Greek yogurt
1 tablespoon extra virgin olive oil
1 teaspoon kosher salt
2 small limes (zest and juice, about 2 teaspoons zest and 3 tablespoons juice)
½ teaspoon Sriracha or hot sauce of choice (plus additional to taste)
3 cups broccoli slaw mix or shredded cabbage
1/4 cup chopped fresh cilantro

Steps:

  • Prepare the slaw: In a mixing bowl, mash the avocado, Greek yogurt, and olive oil together until mostly smooth.
  • Stir in the salt, lime zest and juice, and hot sauce.
  • Stir in the slaw and cilantro. Taste and adjust hot sauce and salt as desired. Cover with plastic, pressing the plastic against the top of the mixture to deter the avocado from browning, and refrigerate until ready to serve. (The slaw can sit for several hours and will taste better if it rests for at least 1 hour; if you don't have time, the resting while you prep the salmon will still give you good results.)
  • Preheat the oven to 425 degrees F. Line a baking dish or rimmed baking sheet large enough to hold the salmon with parchment paper or foil. Place the salmon in the center and pat dry. Brush the top of the salmon with the oil.
  • In a small bowl, stir together the chipotle powder, garlic powder, lime zest, and salt.
  • With a small spoon, sprinkle it evenly over the top of the salmon. (Reserve the zested lime for serving).
  • Transfer the dish to the oven and bake the salmon for 12 to 15 minutes, depending on the thickness of the fish (a 1-inch fillet will take around 12 minutes), until the salmon is just cooked through and reaches 140 to 145 degrees F on an instant read thermometer (fish is done at 145; once mine hits 140, I remove it to a plate, cover it, and let it rest for several minutes; the carryover cooking will finish the rest).
  • Cut the zested lime in half or into quarters and squeeze the juice over the top of the salmon. To serve, pile the salmon and slaw into the warmed tortillas. Top with cheese. Enjoy warm, with a dash of extra hot sauce as desired.

FISH TACOS

Fish Tacos image

There are already a lot of fish taco recipes on Zaar. But this one is a little different than the others. I found this recipe on the Internet somewhere. We really like it. I serve it with Recipe #232299, instead of the cabbage and sauce that are suggested.

Provided by MathMom.calif

Categories     Mahi Mahi

Time 33m

Yield 4 serving(s)

Number Of Ingredients 18

oil (for frying, peanut oil recommended)
1 lb shark fillets or 1 lb other firm fish, such as mahi mahi
steamed tortilla
3/4 cup flour
1/2 teaspoon baking powder
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper
salt and pepper
1 egg yolk
4 -6 ounces beer
1/2 cup mayonnaise
1 tablespoon cilantro
1/2 lime
lime, for squeezing
2 cups shredded cabbage
1 ripe avocado, sliced

Steps:

  • Batter: In a medium bowl, mix the flour, baking powder, spices, beer and egg yolk. If the mixture is too thick, add a bit more beer, but don't let it get watery. You want it thick to coat the fish.
  • Cover the batter and refridgerate for at least 3 hours. It can sit over night. Variation: whip up an egg white and fold it into the batter just before dipping the fish. (I've never added the egg white -- sounds interesting.).
  • Sauce: If you will be using the sauce for a condiment, combine all the ingredients. Use enough lime juice to make it "saucy".
  • Fish: Cut the fish into pieces that will fit well into the taco after they are fried. I usually cut mine about 1 inch by 1 inch by 3 inches.
  • Heat a good 1/2 inch of oil to about 375 degrees. Once the oil is hot, dip the fish into the batter to get it well coated, one piece at a time. Do not put too many pieces into the pan at once. Only cook a few at a time. While the batter is still thick on the fish and dripping, drop it into the oil and fry it about 4-5 minutes, turning to the other side about halfway through.
  • To serve: Serve with steamed tortillas. You can serve with the sauce, cabbage, lime and avocado as suggested above (put fish into taco, add avocado, cabbage, top with sauce and a squeeze of lime). Or lately we just serve with Spicy Chipotle Slaw inside the tortilla with the fish. Usually two pieces of fish per taco.

SALMON TACOS WITH LIME DRESSING

Salmon tacos with lime dressing image

Pack in the omega-3 with these barbecued salmon tacos served with avocado, tomato and lime yoghurt sauce. Kids will love assembling their own

olive oil , for the foil
500g piece salmon fillet
8 soft corn tacos
2 limes , zested and juiced
200g natural yogurt
2 ripe avocados , peeled and cubed
10 cherry tomatoes , halved
1 small red chilli , deseeded and sliced (optional)

Steps:

  • Cut a piece of foil big enough to wrap the salmon in and brush with oil. Put the salmon on top, season and sprinkle with some of the lime zest and juice. Fold up the foil around the salmon so it all meets at the top and makes a handle to lift the parcel with.
  • Heat a barbecue until the coals are glowing white hot. Make sure the grill is set high above the coals and put the foil parcel on. Cook for 10 mins and then open it and have a look. The salmon should be opaque - if it isn't, wrap it up and continue cooking.
  • Wrap the tacos in foil and warm them at the side of the barbecue. Mix the remaining lime zest and juice with the yogurt and season. When the salmon is cooked, open out the foil and flake it into pieces. Serve the tacos with the salmon, tomato, avocado, chilli and sauce so people can stuff their own. Napkins are necessary.
