APPLE-TOPPED OATCAKES
During the week we have quick breakfasts...but on Saturday I like to make something special. This is one of our favorite recipes because the oatcakes and apple topping are a tasty, wholesome combination. Steps:
- In a large bowl, combine milk and oats; let stand for 5 minutes. Stir in the egg, oil and molasses. Combine dry ingredients; stir into oat mixture just until moistened. Beat egg whites until soft peaks form; fold gently into batter. Set aside. , Heat butter in a skillet until foamy. Add the apples, lemon juice and zest; cook, uncovered, for 8-10 minutes, stirring occasionally. , Meanwhile, cook oatcakes. Pour batter by 1/4 cupfuls onto a hot greased griddle. Cook until bubbles form; turn and cook until browned on other side. , For apples, combine sugar, cornstarch and nutmeg; add to apple mixture and cook 2 minutes longer or until tender. Serve warm over oatcakes.

APPLE GINGER OATCAKES
Steps:
- Preheat your oven to 350F. Lightly oil 8 muffin cups. Place the oats, oat flour, baking powder, salt, cinnamon, ginger, hemp seeds, and raisins/currants into a large mixing bowl and whisk them all together.
- Whisk together the almond milk, oil, applesauce, and syrup in a separate, medium-sized bowl. Pour these wet ingredients into the dry ingredients and mix evenly. Scoop the mixture by the 1/3 cup into your prepared muffin cups. Bake for 12-18 minutes, or until the cakes are lightly golden. Serve.
SLOW-COOKER OATMEAL WITH APPLES AND GINGER
This warming porridge features oats two ways plus brown rice, millet, or quinoa. Knowing you have a bubbling hot breakfast waiting for you on a chilly morning makes getting out of bed so much easier. This recipe feeds a crowd, but it also reheats easily for individual servings throughout the week.

- Mix apple, ginger, steel-cut oats, rice, old-fashioned oats, raisins (if using), almonds (if using), flaxseeds (if using), cinnamon, and salt in a slow cooker. Cover with 12 cups water and stir to combine. Cook on low until porridge is thick and soft, 7-8 hours.
- Do Ahead
- Porridge can be made 1 week ahead; transfer to an airtight container and chill. To serve, scoop out desired amount and add a splash of water or milk. Heat in a pot over medium or microwave on high in a heatproof bowl until heated through and desired texture is reached, adding more liquid if needed.

GINGER OATCAKES
My step-mother gave me this recipe in 1991 from a Better Homes and Garden Lite Cooking insert. I asked her for the recipe and got a lot of help but then my step mother found the original recipe! I was so excited (almost as excited as when the Recipe Zaar community found a recipe just like it for me!) These are great pancakes!!

- Cook for 20 minutes.
- Beat together the brown sugar and eggs.

CHEESE OATCAKES
We tried these during a trip to Scotland - our hostess brought them home from a church fete. Served with apple juice, they were delicious - just like a crisp cheese cracker. When we got home, I scoured the internet to find this recipe from Cloisters Bed and Breakfast (Talmine, Scotland), which tastes identical. These are fun to make with kids - roll out the dough and use cookie cutters to make any shape you like.

This is my best attempt to duplicate Scottish oatcakes, which I had previously only had from a box (brands such as Nairn). I don't know how they would compare to homemade oatcakes in Scotland or Ireland, although in my search for a recipe, I've found that there are many varieties, including sweet or yeast-leavened. This recipe is based on one I found in a Saturday Evening Post many years ago--which I adapted, lost, and then had to recreate from memory. However, I am quite pleased with the final result! Everyone seems to love them. I think they are traditionally served with cheese, butter, jams, etc. but we just eat them plain. (Note: You may use up to 1 tsp. of salt, or no salt at all, as in the original.)

Steps:
- Put oats into an electric blender and grind to a coarse flour consistency (more or less, according to your preference).
- Mix oats with baking powder and salt in a mixing bowl.
- Rub in butter until mixture is the texture of coarse crumbs.
- Stir in water to form a stiff dough.
- Pat dough evenly into a greased 9x13-inch pan (about 1/4 inch thick).
- Using a table knife, cut into 16 rectangular pieces. Prick all over with a fork, if desired. (Alternatively, chill, roll out, and cut into rounds.).
- Bake at 325 degrees for one hour.
- Cool in pan and break apart. Store in airtight container.
