An Asian-inspired orange-flavored relatively simple pork rib recipe using easy-to find, simple ingredients. Servings are based on a recommended 4-oz. meat serving. Most will find these ribs too delicious to hold themselves to this quantity.

4 lbs pork ribs, country-style
1 1/2 cups orange juice
1/2 cup low sodium soy sauce
2 tablespoons sugar
2 tablespoons fresh ginger, peeled & finely chopped
1 tablespoon garlic, minced (3 cloves)
1/2 teaspoon black pepper, coarsely ground

Steps:

  • Put oven rack in middle position and preheat oven to 325°F.
  • Bring orange juice, soy sauce, sugar, ginger, garlic, and pepper to a boil in roasting pan over moderately high heat, stirring until sugar is dissolved.
  • Add ribs in 1 layer using tongs, turning to coat, and cover pan tightly with foil.
  • Braise ribs in oven until very tender, about 2 hours.
  • Reduce oven temperature to 200°F.
  • Transfer ribs to a baking dish, arranging them in a single layer, and keep warm in oven.
  • Skim fat from cooking liquid if desired, then make glaze by boiling liquid, uncovered, stirring occasionally, until syrupy and reduced to about 3/4 cup, about 15 minutes.
  • Brush glaze generously on ribs.
  • Serve!

2 racks baby back pork ribs (2 to 3 lb total), cut into individual ribs
1/4 cup fresh orange juice
1/4 cup soy sauce
1/4 cup packed dark brown sugar
1 teaspoon ground cumin
Special Equipment
a 13- by 9-inch glass baking dish

Steps:

  • Put ribs in a large sealable plastic bag. Stir together orange juice, soy sauce, brown sugar, and cumin in a bowl until sugar is dissolved, then pour marinade over ribs in bag and seal bag, pressing out excess air. Marinate ribs, chilled, turning bag over after 30 minutes, 1 hour total.
  • Put oven rack in middle position and preheat oven to 375°F.
  • Transfer ribs and marinade to baking dish and arrange ribs in 1 layer, not touching. Roast ribs 30 minutes, then turn over ribs with tongs and continue roasting until they are tender and well browned and marinade is thick and syrupy, about 30 minutes more.

1 orange
Kosher salt
3/4 cup packed light brown sugar
1 piece star anise
1 teaspoon pickling spice
2 slices ginger, plus 1 teaspoon grated peeled ginger
3 1-pound racks baby back pork ribs
2 teaspoons vegetable oil
1 clove garlic, grated
1/4 cup dry sherry
1/3 cup low-sodium chicken broth
1/3 cup balsamic vinegar
1/4 cup low-sodium soy sauce
Freshly ground black pepper
1/4 teaspoon cayenne pepper

Steps:

  • Make the brine: Remove 3 wide strips zest from the orange with a vegetable peeler. Squeeze 3 tablespoons orange juice and set aside. Combine 2 strips of the zest, 4 cups water, 1/3 cup salt, 1/2 cup brown sugar, the star anise, pickling spice and ginger slices in a medium saucepan over medium-high heat. Cook, stirring frequently, until the salt and sugar dissolve. Remove from the heat and add 4 cups cold water; let cool to room temperature.
  • Put the ribs meat-side down on a cutting board. Insert a paring knife between the membrane and the bones on one end, then loosen the membrane with your fingers and gently pull it off. Put the ribs in a roasting pan and pour the brine on top. Cover and refrigerate overnight.
  • Meanwhile, make the sauce: Heat the vegetable oil in a small saucepan over medium heat. Add the garlic and grated ginger; cook 1 minute. Add the sherry, bring to a boil and cook until slightly reduced, 1 to 2 minutes. Stir in the remaining 1/4 cup brown sugar, the 3 tablespoons orange juice, the remaining 1 strip orange zest, the chicken broth, vinegar and soy sauce and simmer until reduced to about 1 cup, 8 to 10 minutes. Remove from the heat and let cool. Set aside 1/4 cup sauce for serving; use the rest for brushing. (The sauce can be made up to 1 day in advance.)
  • Prepare a grill for indirect heat: For gas, preheat to medium high, then turn off half of the burners and turn the other burners to medium low. For charcoal, once the coals ash over, push them to one side.
  • Remove the ribs from the brine and pat dry. Mix 1 1/2 teaspoons black pepper and the cayenne in a bowl and rub on the ribs. Put bone-side down on the cooler part of the grill; cover and cook 1 hour. Brush with 1/2 cup of the sauce; cover and cook 1 more hour, brushing with more sauce during the last 10 minutes. Transfer to a cutting board and slice into ribs. Serve with the reserved sauce.

Steps:

  • Put oven rack in middle position and preheat oven to 325°F.
  • Sprinkle ribs evenly with salt.
  • Bring orange juice, soy sauce, sugar, ginger, garlic, and pepper to a boil in roasting pan over moderately high heat, stirring until sugar is dissolved. Add ribs in 1 layer using tongs, turning to coat, and cover pan tightly with foil.
  • Braise ribs in oven until very tender, about 2 hours. (If making ahead, see cooks' note, below.)
  • Before serving:
  • Reduce oven temperature to 200°F.

1 slab baby back ribs
1/2 cup Tang orange crystals (Orange Drink Flavoring)
1 tablespoon vinegar
8 -12 fluid ounces soy sauce (Low Sodium)

Steps:

  • Cut slab of ribs into sections of 2-3 ribs.
  • Measure and pour 1/2 cup of Tang into large bowl.
  • Measure and pour 1 tbsp of vinegar into large bowl.
  • Measure and pour 8-12 fl oz of soy sauce into large bowl.
  • Mix all ingredients in large bowl together until Tang crystals dissipate.
  • Place sections of ribs into bowl and if necessary, add more soy sauce to cover all sections of ribs.
  • Preferably let marinate overnight or at least 3 hours for best flavor.
  • Pre Heat over to 275 degrees F.
  • Place ribs into cooking pan meat side down and cover with tin foil.
  • Place covered cooking pan onto middle rack in oven.
  • Cook for 2 hours.
  • Take pan out, uncover ribs, drain pan, flip ribs over to make them meat side up.
  • (Optional) If you desire to add any other sauce, do so now. I personally enjoy these ribs without sauce, but to each their own!
  • Cook for 30-45 more minutes until ribs are done. Each slab can vary in size so cooking time will too. Check by trying to cut meat off of rib, if it practically falls, then they are ready!

4-1/2 teaspoons molasses
1 tablespoon garlic salt
1 teaspoon onion powder

GLAZE:

3 tablespoons thawed pineapple juice concentrate
2 tablespoons rice vinegar
2 tablespoons hoisin sauce

  • Pat ribs dry. Combine the molasses, garlic salt, onion powder and Worcestershire sauce; spoon over meat. Place ribs on a rack in a small shallow roasting pan. Cover and bake at 325° for 50-60 minutes or until tender., In a small saucepan, combine the soy sauce, pineapple juice concentrate, vinegar, hoisin sauce, ketchup, lemon juice, mustard, Worcestershire sauce, ginger and garlic. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes or until slightly thickened, stirring occasionally., Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Brush ribs with some of the glaze; grill, uncovered, over medium heat for 8-12 minutes or until browned, turning frequently and brushing with additional glaze. Serve remaining glaze on the side. Garnish with onion.

The orange adds a subtle, but deliciously fresh flavor to any BBQ. I like to use the Orange BBQ sauce when I make chicken fondu as well, its perfect.

1 bottle (18 ounces) honey barbecue sauce
1 cup orange juice
2 tablespoons grated orange zest

Steps:

  • Place ribs bone side down on a rack in a shallow roasting pan. 1/2 cup fresh orange juice
6 tablespoons Worcestershire sauce
2 tablespoons minced orange peel (orange part only)
1 tablespoon minced garlic
1 tablespoon soy sauce
3 3/4 pounds baby back pork ribs

Steps:

  • Whisk first 6 ingredients in medium bowl to blend. Place ribs in single layer in 13x9x2-inch glass dish. Pour marinade over ribs, turning to coat both sides. Cover and refrigerate overnight.
  • Preheat oven to 350°F. Pour marinade from ribs into small saucepan. Boil marinade until reduced to 1 1/4 cups, about 7 minutes. Line large roasting pan with foil. Arrange ribs, rounded side up, in single layer in prepared pan. Season ribs with salt and pepper. Bake 10 minutes. Brush both sides of ribs generously with marinade. Bake ribs until glazed and tender, basting top of ribs frequently, about 40 minutes. Cut ribs between bones into individual ribs.
  • Meanwhile, prepare barbecue (medium-high heat) or maintain oven temperature. Grill or bake ribs until deep brown, turning frequently, about 10 minutes. Serve hot.
