SIMPLE SWISS CHARD PASTA



Simple Swiss Chard Pasta image

This easy pasta dish comes together in just 20 minutes. Skip the cheese to make it vegan, and use gluten-free pasta to make it gluten-free.

6 ounces pasta (I used Tinkyada Brown Rice Spaghetti)
1 teaspoon extra-virgin olive oil
4-5 chard leaves, stems diced, leaves coarsely chopped
½ teaspoon balsamic vinegar
1 cup canned fire roasted diced tomatoes
2 garlic cloves, minced
½ cup cooked white beans, drained and rinsed
Shaved pecorino cheese
¼ cup pine nuts (optional)
Sea salt & fresh black pepper

Steps:

  • In a large pot of salted boiling water, cook pasta until al dente.
  • Meanwhile, in a large skillet, heat oil over medium heat. Add chard stems and a pinch of salt. Give them a stir, then add the chard leaves and gently toss until they begin to wilt. Add the balsamic, tomatoes, garlic, white beans, freshly ground pepper, and toss. Once the chard is cooked down, add pasta and remove from heat. Serve with shaved pecorino cheese and pine nuts on top.

SWISS CHARD RAVIOLI

The secret to this dish is wonton wrappers, which are used in place of pasta. Available at most Asian-food stores, they come in packages of about 100; wrap unused wrappers in plastic, and freeze. (You may want to freeze them in single-recipe-size batches.)

3/4 pound ruby chard, washed and dried
1 1/2 tablespoons unsalted butter
1 medium shallot, minced
6 fresh sprigs thyme
Salt and freshly ground pepper
6 tablespoons ricotta cheese
3 tablespoons freshly grated Parmesan cheese
1 3/4 cups Homemade Chicken Stock Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat
24 three-and-a-half-inch square wonton wrappers
1 large egg, lightly beaten

Steps:

  • Separate stems of chard from leaves. Dice stems, and set aside. Coarsely chop leaves; there should be about 3 cups of packed leaves.
  • Melt butter in a medium skillet over medium heat. Add shallot, and cook, stirring, until translucent, about 30 seconds. Add chard leaves, 3/4 teaspoon thyme leaves, salt, and pepper to taste. Cook, stirring, until leaves are completely wilted, about 2 minutes. Transfer to a medium bowl, and refrigerate until cool, about 5 minutes. Stir in ricotta, Parmesan, and salt and pepper to taste.
  • Combine stock, 1 sprig thyme, and chard stems in a small saucepan. Bring to a boil. Lower heat to a simmer, and cook for 3 minutes. Remove from heat. Allow to sit until the liquid is dark pink, 5 to 10 minutes. Strain through a sieve, season with salt and pepper, and reserve.
  • Bring a large pot of water to a boil. Meanwhile, lay 12 wonton wrappers on a clean work surface. Place a slightly heaping tablespoon of filling in center of each wrapper. Brush edges with beaten egg. Top each square with a second wrapper. Press edges together to seal.
  • Add salt to boiling water. Add ravioli to boiling water, and cook until translucent and floating, 1 to 2 minutes. (Work in batches if necessary.) Remove from water with a slotted spoon. Ladle about 1/4 cup broth into each of four shallow bowls. Place three ravioli in each bowl. Garnish with remaining thyme leaves.

1/4 cup water
1 pound Swiss chard, center spine and stems trimmed
1 cup ricotta cheese
1/3 cup freshly grated Parmesan cheese
1 large egg
1 garlic clove, minced
1 teaspoon chopped fresh thyme
3/4 teaspoon salt
1/2 teaspoon chopped fresh rosemary
1/4 teaspoon ground black pepper
64 gyoza (potsticker) wrappers* (from two 12-ounce packages)
1 large egg white, beaten to blend
3/4 cup (1 1/2 sticks) butter
1/4 cup chopped fresh sage
Additional freshly grated Parmesan cheese (optional)
*Gyoza wrappers can be found at Asian markets and in the refrigerator section of many supermarkets. If unavailable, substitute wonton wrappers and cut into 3 1/2-inch rounds.

Steps:

  • Bring 1/4 cup water to boil in large pot. Add chard leaves. Cover; cook until tender but still bright green, stirring occasionally, about 3 minutes. Drain. Cool slightly. Squeeze dry. Chop chard finely. Transfer to large bowl. Mix in ricotta, 1/3 cup Parmesan cheese, egg, garlic, thyme, salt, rosemary and pepper.
  • Line baking sheet with foil or plastic wrap; sprinkle with flour. Place 1 gyoza wrapper on work surface. Brush surface of wrapper with some egg white. Spoon generous 1 teaspoon chard mixture into center of wrapper. Top with another wrapper. Press edges together to seal. Transfer to baking sheet. Repeat with remaining wrappers, egg white and chard mixture to make 32 ravioli total. (Can be made 8 hours ahead. Cover and chill.)
  • Melt butter in heavy small skillet over medium heat. Add sage; stir 1 minute. Season with salt and pepper. Remove from heat.
  • Working in batches, cook ravioli in large pot of boiling salted water until just tender, stirring occasionally, about 4 minutes per batch. Transfer ravioli to large shallow bowl.
  • Pour sage butter over ravioli and toss. Serve, passing additional Parmesan cheese alongside, if desired.

1 lb red swiss chard or 1 lb green swiss chard
3 tablespoons extra virgin olive oil
1/2 cup soft fresh breadcrumb
1 clove garlic, minced
2 small tomatoes, i use italian tomatoes,seeded and diced
1/4 teaspoon salt
crushed red pepper flakes

Steps:

  • Trim coarse leaves and thick center ribs from chard; cut tender stems and leaves into 1/2-inch slices.
  • Heat 1 tablespoon of the oil in a large skillet; add bread crumbs; cook, stirring often, until crisp and golden; remove from skillet and set aside.
  • Cool skillet slightly; add remaining oil and garlic; cook, stirring, 2 minutes; add chard and cook until wilted, 1-2 minutes; add tomatoes, salt, and red pepper flakes to taste.
  • Remove from heat and sprinkle bread crumbs over the top.

HOMEMADE RAVIOLI WITH TOMATO SAUCE

1/4 cup vegetable oil
1 cup finely chopped onion
2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
1 (5 1/2 ounce) can tomato paste
1 1/2 cups water
1 teaspoon salt
2 tablespoons parsley
2 teaspoons sugar
1 tablespoon oregano
1 teaspoon basil
1/4 teaspoon pepper
3 cups flour
4 eggs
1/4 cup water
3/4 lb ground beef, cooked
4 tablespoons cheddar cheese
1 tablespoon fine breadcrumbs
1/4 teaspoon pepper
1/2 teaspoon salt
1 egg, beaten slightly

Steps:

  • Sauce-In a saucepan, or crock pot, combine all ingredients.
  • Heat until boiling.
  • Cover, reduce heat and simmer at least 30 minutes, until flavours are well blended.
  • Noodles- Mix together.
  • Knead for 10 minutes or until dough is elastic.
  • Add more water or flour accordingly.
  • Filling- Mix all ingredients together.
  • Roll out dough, cut into small rectangles, or circles.
  • (I use a hunky bill's perogy maker and fill the pouches as directed.) Fill pockets with filling.
  • Seal the edges with a little bit of water and pinch closed.
  • (Or add a second layer of dough on to your perogy maker and use rolling pin to seal edges.) Cook in boiling water for 15 minutes.
  • Serve with prepared sauce.
  • Especially good with garlic bread and sprinkled with parmesan cheese.

ITALIAN-STYLE SWISS CHARD

This recipe for Italian-style Swiss chard has been in the family for years. If you like garlic, this recipe is for you.

1 bunch Swiss chard
1 cup water
1 tablespoon salt
2 tablespoons olive oil
4 cloves garlic, coarsely chopped
⅛ teaspoon crushed red pepper flakes
salt to taste

Steps:

  • Wash the Swiss chard and cut into 1 inch strips. Separate the thick and tough stalk sections from the upper leafy strips.
  • Bring the water and 1 tablespoon of salt to a boil in a large saucepan.
  • Cook the stalk sections in the salted boiling water for 2 minutes. Stir in the leafy strips and cook until the leaves are wilted and the stalks are fork tender, about 6 minutes. Drain and set aside.
  • Heat the olive oil, garlic, and red pepper flakes in a large skillet over medium heat until aromatic, about 3 minutes. Add the drained Swiss chard, cook and stir for 2 minutes; season with salt to taste.

For filling
3 slices bacon
3 cups chopped Swiss chard, stems discarded, leaves washed and chopped (about 1/2 pound)
1/2 teaspoon minced garlic
1/2 cup ricotta cheese
2 tablespoons freshly grated Parmesan cheese
24 won ton wrappers*, thawed if frozen
1 cup prepared tomato sauce, heated
*available at Asian markets and most supermarkets

Steps:

  • Make filling:
  • In a large heavy skillet cook bacon over moderate heat until crisp and with a slotted spatula transfer to a cutting board. Chop bacon fine. Remove all but 1 tablespoon fat from skillet and heat remaining fat over moderately high heat until hot but not smoking. Cook chard and garlic, stirring, until chard is tender, about 2 minutes. Transfer chard mixture to a bowl and cool. To chard mixture add cheeses, 2 tablespoons bacon, and salt and pepper to taste.
  • Bring a large saucepan of salted water to a gentle boil.
  • Put a won ton wrapper on a lightly floured surface and mound 1 tablespoon filling in center of wrapper. Brush edges of wrapper with water and put a second wrapper over first, pressing down around filling to force out air. Seal edges well and transfer ravioli to a kitchen towel. Make more ravioli with remaining wrappers and filling in same manner, turning them occasionally to dry slightly. Cook ravioli in water at a gentle boil 6 to 8 minutes, or until they rise to surface and are tender. (Do not let water boil vigorously once ravioli have been added.) With a slotted spoon transfer ravioli as cooked to a kitchen towel to drain.
  • Divide ravioli between 2 plates and spoon sauce over them. Garnish ravioli with remaining tablespoon bacon.

Simmer sauce, stirring occasionally, 40 minutes, or until slightly thickened. Sauce may be made ahead, cooled completely uncovered, and chilled, covered, 2 days or frozen 1 month. Reheat sauce before using.
