500 g fresh crabmeat or 3 (170 g) cans crabmeat
4 tablespoons butter
1 large onion
2 teaspoons chopped chives
1 tablespoon Worcestershire sauce
1 pinch salt
1/4 teaspoon fresh chili pepper, chopped very fine
1/2 green capsicum, chopped fine
1/2 red capsicum, chopped fine
1 cup breadcrumbs
8 crab shells, cleaned, boiled and dried

Steps:

  • Put butter in large skillet; sauté onion, chives and capsicums.
  • Add crabmeat, Worcestershire sauce, salt and chili pepper.
  • Toss in pan over low heat, with wooden spoon.
  • Add bread crumbs, combining all ingredients in pan well.
  • Divide mixture onto the 8 empty crab backs.
  • Dot each crab back with butter.
  • Place under hot grill until golden brown.
  • SERVE IMMEDIATELY.

6 tablespoons unsalted butter
1 small red onion, diced
1/2 cup diced yellow pepper
1/2 cup small diced fennel
1 clove garlic, chopped
Kosher salt
Freshly ground black pepper
4 cups fresh bread crumbs
2 Dungeness crabs, poached (see note), meat removed, shells, washed, and trimmed
1/2 cup mayonnaise
1 lemon, zested and juiced
2 tablespoons chopped tarragon
1/4 cup chopped parsley
4 scallions, chopped

Steps:

  • In a skillet over low heat melt the butter, add the onion, yellow pepper, fennel, and garlic.
  • Season with salt and pepper. Cook slowly for about 6 minutes until all are tender, transfer mixture to a bowl, add bread crumbs, and allow to cool.
  • Preheat oven to 375 degrees F.
  • When cooled add crab meat, mayonnaise, lemon zest, lemon juice, tarragon, parsley, scallions, and season with salt and pepper, to taste. Mix the ingredients well and stuff the shells. Bake for 25 minutes until warmed through.
  • Note: the crabs should be poached in a court boullion made with 2 quarts water, 1 chopped carrot, 1 chopped yellow onion, and 1 chopped celery stalk boiled with 1/2 teaspoon each black peppercorns and coriander seeds. Bring the mixture to a boil and after 10 minutes, add 1 lemon, thinly sliced. Let boil for 10 more minutes, salt the water, and poach the crabs.

1/4 cup (4 tablespoons) butter
1/4 cup extra-virgin olive oil
1 1/2 cups diced celery
1 1/2 cups chopped leek whites
1 1/2 cups diced onions
1 tablespoon chopped garlic
1 teaspoon crushed red pepper
Pinch dried oregano
2 bay leaves
1 small bunch fresh parsley
1 small bunch fresh thyme
12 blue crabs, backs off and cleaned
1 cup white wine
1 gallon canned crushed plum tomatoes
Salt and pepper
2 tablespoons seafood seasoning, such as Old Bay
2 pounds linguine

Steps:

  • Combine butter and oil in an 8- to 10-ounce stockpot over medium heat. Add celery, leeks and onions and cook, making sure they do not brown, 5 to 7 minutes. Add garlic, red pepper, oregano, bay leaves, parsley and thyme. Cook just to bring everything together, about 3 minutes.
  • Add crabs and cook over medium to low heat, covered, stirring often, 8 to 10 minutes. Add white wine and cook until wine is cooked out, about 5 minutes. Add tomatoes and 3 to 4 cups water and simmer for 1 1/2 to 2 hours. Add salt, pepper and seafood seasoning to taste.
  • Boil linguine and pour sauce over top.

Black Pepper
Dash of Tabasco
Cheese, grated
(Serving Suggestion) Green beans and Spinach

Steps:

  • Mix the crab meat with the breadcrumbs, egg, pepper and tabasco.
  • Spoon into oven-proof ramekins and over with grated cheese.
  • Bake in the oven until the mixture is heated through and the cheese is bubbling.
  • Serve with green beans and spinach.

Steps:

  • Gently fry the shallot and garlic in butter until softened. Pour in the sherry and bring to a simmer.
  • Add the crab meat, reserving the shell. Warm through for 4-5 minutes then stir in the parsley.
  • Spoon the mixture back into the crab shell. Sprinkle the top with breadcrumbs and grate over a little parmesan and add a grind of black pepper. Place a few dots of butter on top.
  • Put under a hot grill for 1-2 minutes to crisp the bread and melt the cheese.
  • Serve with toast.

1 (5 1/2 ounce) can crabmeat (or meat from cooked crabs)
1 tablespoon margarine
salt and pepper
3 -4 tablespoons breadcrumbs, plus a little more to sprinkle on top before baking
1/4 cup onion, finely chopped
2 garlic cloves, minced
1 sprig parsley, finely chopped
1 -2 teaspoon Worcestershire sauce

Steps:

  • Saute onion and garlic in margarine for a few minutes until soft.
  • Add crab meat, salt, pepper and parsley and cook for a few min more.
  • Add breadcrumbs and Worcestershire sauce; combine well.
  • Pack mixture into cleaned crab backs or shells, sprinkle with breadcrumbs and dot with margarine.
  • Heat in oven till piping hot.
