This pound cake flavored with an almond liqueur. It's rich, buttery, moist, and completely, insanely delicious!

3 cups all-purpose flour (measured correctly)
1/8 teaspoon salt
1/2 teaspoon baking powder
1 cup butter (room temperature)
1/2 cup solid vegetable shortening
3 cups sugar
6 large eggs (room temperature)
1/3 cup Amaretto liqueur
1 cup milk (room temperature)

Steps:

  • Coat a ten-inch tube pan with solid vegetable shortening then either flour or sugar. I use granulated sugar because it doesn't leave white areas on the cake. Alternately, you can use Wilton Cake Release.
  • Preheat oven to 350 degrees.
  • Sift flour, salt, and baking powder together.
  • Cream butter, shortening, and sugar with an electric mixer until light and fluffy.
  • Add eggs, one at a time, beating well after each addition.
  • Mix in Amaretto.
  • Add milk and flour alternately, beginning and ending with flour mixture.
  • Pour batter into prepared tube pan.
  • Bake for 1 hour 30 minutes. (Start checking at 1 hour 20 minutes, your oven may be hotter than mine.)
  • Cool in pan on wire rack 30 minutes before inverting on a platter.

1 package yellow cake mix
4 eggs
1 (3 1/2 ounce) package instant vanilla pudding
2 tablespoons amaretto liqueur
1/2 cup water
1/2 cup vegetable oil
1/2 teaspoon almond extract
1/4-1/2 cup lightly toasted sliced almonds (optional)
1/2 cup amaretto liqueur
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F.
  • Grease and flour a 10 inch Bundt pan.
  • Sprinkle evenly with almonds to coat pan.
  • Combine cake mix, eggs, pudding, amaretto, water, oil, and almond extract and mix together well.
  • Pour batter into prepared Bundt pan.
  • Bake for 40 to 45 minutes or until a toothpick inserted into the center of the cake comes out clean.
  • Remove cake from oven, and while cake is still warm and in the pan poke holes in the bottom and pour the Amaretto glaze into the holes and bottom of the cake.
  • Let the cake cool for at least 2 hours (the longer the better!) before removing from the pan.
  • To Make Amaretto Glaze: Combine the confectioners sugar and Amaretto.
  • Blend until smooth.
  • You can add more Amaretto as needed.

Dusted with confectioner's sugar, this appears to be a simple pound cake...however, in the mouth it is anything but simple! This cake is moist, dense, and very chocolatey-almondy-buttery..... just down right delicious!! I have been making this recipe for years and like to serve it with real whipped cream. This is another creation by Boston caterer, Ellen Helman, from The Uncommon Gourmet.

1 1/2 cups butter, room temperature
3 cups sugar
5 eggs
1/4 cup Amaretto
2 cups flour
3/4 cup unsweetened cocoa
1 teaspoon salt
1/4 teaspoon baking powder
1 cup buttermilk
confectioners' sugar, for dusting

Steps:

  • Position an oven rack in the center of the oven.
  • Preheat the oven to 325°F
  • Grease a 10-inch bundt pan.
  • In the bowl of an electric mixer, cream the butter.
  • Gradually add the sugar, beating until light and fluffy.
  • Add the eggs, one at a time, beating well after each addition.
  • Add the Amaretto, beat to blend.
  • In a medium bowl, combine the flour, cocoa, salt, and baking powder.
  • Add the dry ingredients alternately with the buttermilk, mixing until evenly blended.
  • Pour batter into the prepared pan.
  • Bake for 1 hour and 15 to 20 minutes, until a tester inserted in the center comes out clean.
  • Let the cake cool in the pan for 15 minutes.
  • Remove the cake from the pan to a rack to cool completely.
  • Dust with confectioner's sugar.
  • Great with real whipped cream.

1 (18 1/2 ounce) box yellow cake mix (without pudding mix)
1 (3 3/4 ounce) box instant pistachio pudding mix
3/4 cup vegetable oil
1/4 cup vodka
1/4 cup Amaretto
2/3 cup orange juice
4 eggs
1 cup sugar
1/2 cup butter
1/4 cup orange juice
1/4 cup Amaretto

Steps:

  • Preheat oven to 350 degrees.
  • Prepare a tube pan by coating with non-stick cooking spray and flour (I use Baker's Joy).
  • FOR CAKE:.
  • Place all ingredients, except eggs into your mixing bowl.
  • Blend well.
  • Add eggs, one at a time, mixing well after each addition and beat until mixture is smooth.
  • Pout into prepared pan and bake for 40 minutes or until a toothpick inserted in the middle comes out clean.
  • GLAZE:.
  • During the last few minutes the cake is baking, prepare the glaze by placing all glaze ingredients in a small saucepan and mixing well.
  • Bring the mixture to a boil and boil for 4 minutes, stirring constantly.
  • When cake is ready and removed from the oven, poke holes into the top of the cake with an ice pice or similar object WHILE THE CAKE IS STILL IN THE BAKING PAN.
  • Pour the glaze over the cake and let it stand for 20 minutes.
  • Invert the cake onto a serving platter and sprinkle with powdered sugar, if desired.

This recipe comes from the Diocese of Louisiana, from a cookbook entitled "A Cook's Tour of the Bayou Country". Generally, I haven't found anything from Louisiana that didn't taste good! This cake turns out really moist.

1 cup butter, softened
2 1/2 cups sugar
6 large eggs
3 cups cake flour, sifted
1/4 teaspoon baking soda
1/2 teaspoon salt
1 (8 ounce) carton sour cream
2 teaspoons almond extract
1 teaspoon lemon extract
1 teaspoon orange extract
1 teaspoon vanilla extract
3/4 cup Amaretto, divided
3/4 cup orange marmalade
1/4 cup plus 2 tbsp apricot preserves
1/2-1 cup almonds, chopped, blanched, and toasted

Steps:

  • Beat butter at the medium speed of an electric mixer about 2 minutes or until it is soft and creamy. Gradually add the sugar, beating at medium speed for 5 to 7 minutes. Add the eggs, one at a time, beating between each addition. Beat just until the yellow disappears.
  • Combine the flour, baking soda and salt; add to the butter mixture alternately with the sour cream, beginning and ending with the flour mixture. Mix at low speed just until blended after each addition. Stir in flavorings and 1/2 cup amaretto.
  • Pour the batter into a greased and floured 12-cup Bundt pan. Bake at 325 degrees for 1 hour and 15 minutes or until a wooden pick inserted into the center comes out clean. Cool in a pan on a wire rack for 10 to 15 minutes; remove from the pan, and let cool completely on the wire rack.
  • Combine the remaining 1/4 cup of amaretto, marmalade, and preserves in a small saucepan. Cook over medium heat until marmalade and preserves melt, stirring frequently. Drizzle over the cake; sprinkle with the almonds.

1/2 cup mascarpone cheese or 1/2 cup sour cream
2 tablespoons packed brown sugar
1 (10 3/4 ounce) frozen pound cake
1/4-1/2 cup Amaretto
1/4 cup butter or 1/4 cup margarine, softened
1/2 cup sliced and toasted almond
2 tablespoons ground toasted almonds
toasted almond
fresh berries

Steps:

  • Brush grill rack with vegetable oil.
  • Heat coals or gas grill for direct heat.
  • Mix mascarpone cheese or sour cream with brown sugar and ground almonds.
  • Cut frozen pound cake into 8 slices.
  • On each side, sprinkle with Amaretto, spread with butter or margarine, and press almonds into butter.
  • Place cake slices on grilling screen.
  • Grill cake uncovered 4-6 inches from medium heat about 5 minutes, turning once, until golden brown.
  • To serve, top cake with prepared mascarpone cheese or sour cream, a sprinkling of almonds and some fresh berries.
  • Yummy!
