DINNER ROLLS

Dinner Rolls image

These warm, buttery rolls only take a little hands-on prep (the yeast does all the work), kids love to help shape them, and they fill the house with a delicious aroma. Even better, the same dough can be used for Cinnamon-Nut Buns.

Time 3h20m

Yield Makes 30

Number Of Ingredients 8

1/4 cup warm water (115 degrees)
2 packets (1/4 ounce each) active dry yeast
1 1/2 cups warm whole milk (115 degrees)
1/2 cup (1 stick) unsalted butter, melted, plus more for bowl and pans
1/4 cup sugar
2 1/4 teaspoons salt
3 large eggs
6 to 6 1/2 cups all-purpose flour (spooned and leveled), plus more for work surface

Steps:

  • Place water in a small bowl; sprinkle with yeast, and let stand until foamy, about 5 minutes. In a large bowl, whisk together milk, butter, sugar, salt, and 2 eggs. Whisk in yeast mixture.
  • Using a wooden spoon, stir in 6 cups flour, 1 cup at a time, until you have a soft, shaggy dough (if necessary, add up to 1/2 cup more flour). Turn dough out onto a floured work surface; knead until smooth and elastic, 5 to 10 minutes. Butter the inside of a large bowl; place dough in bowl, turning to coat. Cover bowl with plastic wrap; let stand in a warm spot until dough has doubled in size, about 1 1/4 hours.
  • Butter two 13-by-9-inch baking pans. Divide dough in half. Roll each half into a 15-inch rope; cut each rope into 15 1-inch pieces. Press each piece into a disk, then shape into a ball. Arrange dough balls in prepared pans. (To make ahead: Wrap pans well, and freeze, up to 2 months.) Cover pans loosely with plastic; let stand in a warm spot until rolls have doubled in size, about 1 1/4 hours (2 hours more if frozen).
  • Preheat oven to 375 degrees, with racks in upper and lower thirds. In a small bowl, beat remaining egg until blended; brush onto rolls. Bake until golden brown, about 20 minutes, rotating pans back to front and top to bottom halfway through. Let rolls cool 15 minutes before serving.

SOFT DINNER ROLLS RECIPE

Soft Dinner Rolls Recipe image

Irresistibly Soft Dinner Rolls are easy to make with just 6 ingredients. There's nothing like fluffy warm homemade dinner rolls. These are holiday-worthy bread rolls!

Provided by Natalya Drozhzhin

Categories     Easy

Time 3h40m

Number Of Ingredients 8

1 1/2 cup whole milk (warmed to 110F)
4 Tbsp unsalted butter (melted)
1 Tbsp active dry yeast
1/3 cup granulated sugar
1 1/4 tsp salt ((we used fine sea salt))
4 cups all-purpose flour
1 Tbsp unsalted butter (melted to brush the tops of dinner rolls)
1/2 tsp kosher salt (to sprinkle finished rolls)

Steps:

  • In the bowl of your mixer, whisk together warm milk (about 110F) and 1 Tbsp sugar. Sprinkle the top with 1 Tbsp yeast and let sit 1 minute. Whisk together and let it sit for about 5 minutes until yeast looks foamy. Add 4 Tbsp melted butter, remaining sugar and salt.
  • Add flour half a cup at a time until the dough whisking to incorporate. Once the dough gets too thick, switch to the dough hook attachment and mix on speed 2 (you can also continue mixing by hand with a stiff spatula). Add about 4 cups of flour, adding the last 1 to 3 Tbsp of flour only if needed. The dough should feel sticky and tacky but should not stick to clean/dry finger tips.
  • Knead the dough with the dough hook in a stand mixer for 2 minutes or knead by hand (10 min), then place dough in an oiled bowl. Cover it with plastic wrap and let it rise about 2 hours in a warm place or until doubled in size.
  • Once the dough rises, turn it out onto a lightly floured surface and cut it into 15-24 even pieces depending on the shape of your baking dish. Roll each piece of dough into a ball and place them onto an oiled 9x13 casserole dish or baking sheet.
  • Cover the dinner rolls with plastic wrap and let them rise another 30-60 minutes in a warm place or until puffed (do not over-proof). Bake at 375F for about 23-25 minutes or until the tops are golden brown.
  • Immediately brush tops of dinner rolls with melted butter and set aside to cool to room temperature before serving.

1/4 cup sugar
4 tablespoons unsalted butter, melted and slightly cooled, plus more for brushing
1 large egg yolk
1 1/2 teaspoons vanilla extract
2 3/4 cups all-purpose flour, plus more for dusting
3/4 teaspoon salt
1/2 teaspoon freshly grated nutmeg (optional)

Lightly butter a large piece of plastic wrap and lay it directly on the surface of the dough. Cover the bowl tightly with plastic wrap and refrigerate at least 4 hours or overnight.

THE BEST SWEET YEAST ROLL DOUGH I HAVE EVER FOUND

The Best Sweet Yeast Roll Dough I Have Ever Found image

These homemade rolls are a recipe that brings back memories of childhood. It's a basic, old-fashioned yeast roll recipe. They smell amazing while baking but be patient... good things come to those who wait. Dense but tender, they remind us of a Hawaiian roll in flavor but with a firmer texture. These rolls are delicious alone,...

Provided by Kathie Carr

Categories     Other Breads

Time 2h40m

Number Of Ingredients 9

1/2 c milk
1/2 c sugar
1 1/2 tsp salt (can use less)
1/4 c butter, melted
1/2 c warm water (105-115 degrees)
2 pkg Fleischmann's active dry yeast
2 large eggs, beaten
4 1/2 c all-purpose flour, may need a bit more or less, see directions
additional butter for coating bowls used and brushing on tops of baked rolls

Steps:

  • 1. Scald milk (bring just to a boil and remove from heat immediately).
  • 2. Stir in sugar, salt, and butter. Set aside and allow to cool to lukewarm.
  • 3. In a large bowl mix warm water and yeast. Stir until dissolved.
  • 4. Stir in lukewarm milk mixture.
  • 5. Add beaten eggs.
  • 6. Stir in half the flour. Beat until smooth. Add remaining flour gradually, mixing as you go. You may need a bit more or less than the total 4 1/2 cups called for in the recipe, depending on the humidity and other factors.
  • 7. Your dough should be elastic and slightly stiff but not dry.
  • 8. Turn dough out onto a floured board and knead until smooth and very elastic. This usually takes 8-10 minutes.
  • 9. Butter the inside of a large mixing bowl. Put dough in bowl and turn dough over a couple of times to coat it all with the butter.
  • 10. Cover bowl and place in a warm place so it can rise.
  • 11. It will take about 1 hour to double in bulk.
  • 12. At that time punch dough down and turn out onto a lightly floured board to shape.
  • 13. At this point, you can shape and fill as desired. To make dinner rolls, pinch off about 2-3 tablespoons of dough and shape into a ball. Place each one in a buttered muffin tin or baking pan, barely touching each other, do not crowd rolls.
  • 14. Cover prepared rolls and allow to rise in a warm place until doubled in bulk, again about 1 hour.
  • 15. Rolls should now touch each other. (A little more rising will occur during baking.)
  • 16. Preheat oven to 350 degrees when rolls are about 10 minutes from being ready for baking. When ready to bake place rolls in the oven and bake for 20-25 minutes. They should be browned nicely and smell so good and yeasty!
  • 17. Brush tops of rolls with melted butter immediately when removed from the oven.
  • 18. Allow rolls to sit for at least 10-15 minutes before eating.

SWEET DINNER ROLLS

Sweet Dinner Rolls image

This versatile dough makes wonderful soft, sweet dinner rolls, but can also be used for cinnamon rolls.

Provided by CHEF GRPA

Categories     Yeast Breads

Time 1h20m

Yield 16 serving(s)

Number Of Ingredients 9

1/2 cup warm water (110*F.)
1/2 cup warm milk
1 egg
1/3 cup butter, softened
1/3 cup white sugar
1 teaspoon salt
3 3/4 cups all-purpose flour
1 (1/4 ounce) package active dry yeast
1/4 cup butter, softened

Steps:

  • 1. Place water, milk, egg, 1/3 cup butter, sugar, salt, flour and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select Dough/Knead and First Rise Cycle; press Start.
  • 2. When cycle finishes, turn dough out onto a lightly floured surface. Divide dough in half. Roll each half into a 12 inch circle, spread 1/4 cup softened butter over entire round. Cut each circle into 8 wedges. Roll wedges starting at wide end; roll gently but tightly. Place point side down on ungreased cookie sheet. Cover with clean kitchen towel and put in a warm place, let rise 1 hour. Meanwhile, preheat oven to 400*F.
  • My Note: I'm always asked to bring the rolls to get-togethers. I've used it for cinnamon rolls, monkey bread -- almost everything. I do cheat, however; normally I cut the dough into 36 pieces and place 3 into each cup of a muffin tin. It makes big, light clover leaf rolls that everyone raves over. don't have a breadmaker, so I made these the traditional way (dissolve yeast and 1 tbsp sugar in warm water, let sit for about 10 minute Meanwhile, warm milk in saucepan until it just bubbles. Remove from heat, stir in sugar and butter until melted and cool to lukewarm. In a large bowl combine yeast mixture, milk mixture and egg. Stir in flour a little at a time and knead on lightly floured surface about 8 min.) Cover and let rise about 1 hr -- punch down and then roll out. I baked at 375 for 12 min, but could have used a tad longer. Still very good. he dough was too sticky in the machine, so I sprinkled flour into it until it was smooth. I was concerned about not using bread machine flour or bread machine yeast. I used the all purpose flour as it called for, but I used the bread machine yeast -- it was all I had. I used 2 1/2 tsp of bread machine yeast. They rose just fine and taste great. I will use this recipe to replace my old bread machine roll recipe. As did another reviewer, I cut my dough into 36 pieces and placed three balls of dough into each muffin cup. They turned into beautiful clover rolls. Nice touch. Also, I use a pizza cutter to cut my dough.

SWEET DINNER ROLLS

Sweet Dinner Rolls image

This is a simple but delicious dinner roll recipe. We can't have a family holiday dinner without these. Hope all enjoy.

Provided by Sophia 3000

Categories     Savory Breads

Time 2h5m

Number Of Ingredients 8

1 pkg yeast
1/3 c granulated (white) sugar
1/2 c mashed potatoes
1/2 c warm water (110 degrees)
4 Tbsp butter (soften)
1 tsp salt
2 eggs
3 - 4 c all purpose flour

Steps:

  • 1. Dissolve the yeast in warm water and 1 tablespoon of the sugar. Let it rest for 5 minutes.
  • 2. Add the remaining sugar, mashed potatoes, butter, salt, and eggs. Mix well. Stir in 3 cups of flour. You can either knead for 3-4 minutes or you can use a stand mixer with the hook attachment (placed on #2) to do all the work. Add enough of the remaining flour to the dough to prevent sticking, (that's anywhere between 1/2 to a full cup). Shape dough into a ball and place in a greased bowl. Make sure all the dough is covered with oil as well. I like to cover my bowl first with plactic wrap and put a towl on top. Let the dough rise for an hour or until doubled (could be a little longer than an hour).
  • 3. When dough has doubled, punch it down and let it rest for 5 minutes. Divide into balls, you can get anywhere from 15-20 depending on the size you roll it. Place rolls in a greased 9x13 pan, cover with plastic thats been sprayed with oil. The oil side should be touching the rolls, let rise again for an additional 40-45 minutes. Bake at 350 degrees anywhere between 15 - 20 minutes (depending on your oven).
  • 4. You can brush the rolls with butter if you like. They are best served warm but, are perfectly good at room temp. Enjoy.

  • Combine 1 cup flour, dry yeast and salt in bowl of your stand mixer fitted with the paddle attachment and stir until blended. Combine milk, water, butter, and honey in a small microwave-safe bowl. Microwave in 30 second increments until very warm but not hot to the touch (120°F – 130°F). Add to flour mixture.
  • Mix for 2 minutes on medium speed, scraping the sides of the bowl as needed. Add in 1/2 cup more flour mix for 2 more minutes on high speed. Stir in just enough of the remaining flour (3/4 to 1 cup) so that the dough will form into a ball.
  • Replace the paddle attachment for the dough hook attachment and mix on medium speed for 6-8 minutes, until the dough is smooth and elastic and springs back when lightly pressed with 2 fingers. Alternately you can do this step by hand, kneading the dough on a lightly floured surface for 6-8 minutes. Cover with a towel and let rest for 10 minutes.

  • Prepare the Roux or bread starter by mixing the milk, water and all purpose flour until it forms a smooth mixture. Cook over low heat, stirring continuously until the mixture becomes thicker but not pasty. Remove from heat and let cool.
  • Fit stand mixer with dough hook, add the roux and all the Dough ingredients together, mix on low speed until combined, about 2 minutes. Increase the speed to medium-low and knead for another 5-6 minutes or until the dough is smooth, elastic and soft. You may knead by hand and it will take about 15-20 minutes.
  • Shape the dough into a ball and place in a lightly greased bowl. Cover the bowl and let the dough rise for 90 minutes or until puffy. Divide the dough into 9 portions, shape into a ball and place on a greased 9-inch baking pan. Cover the rolls and let rise again for 50 minutes.

  • In a small bowl, mix the yeast with warm water. The temperature should be between 105-115° F. Don’t let it get too warm or it will kill the yeast. Allow it to sit for about 5 minutes to allow the yeast to activate. When you see bubbles foaming at the top, it is ready to use.
  • In a large bowl, combine the flour, salt, yeast, and butter mixture and mix with a dough hook on medium-low speed for about six minutes, or until the dough is smooth and springs back when touched.
  • Cover the bowl with a clean kitchen towel and allow it to proof for an hour in a warm space away from drafts. The dough should double in size.

  • Use a stand mixer fitted with a greased dough hook. Add 5 cups flour, yeast, and salt to a bowl, and whisk to combine.
  • In a medium sized microwave safe bowl, add 1/2 cup of milk, pineapple juice, 6 tablespoons of butter and honey and whisk to combine. Microwave the mixture in 20 second increments until it reaches 120 to 130 F, about 90 seconds.
  • Set the mixer to low speed and gradually add the warmed milk mixture, brown sugar, 1 egg, apple cider vinegar and vanilla to the flour mixture. Scrape the sides of the bowl with a spatula as needed to incorporate the flour.
  • Knead the dough on low until the dough begins to pull away from the bowl, 2 minutes. Increase the speed to medium low and knead until the dough is elastic and smooth in texture, 7 minutes. The dough should start to clear the sides of the bowl, but will be sticky on the bottom. Add 1/4 cup of additional flour, mixing on low speed, 1 minute. Add another 1/4 cup if needed, until the desired texture is achieved and a slightly sticky bowl is formed. Use as little added flour as possible. Transfer the dough to a lightly floured surface. Cover and allow to rest for 10 minutes.
