1/4 cup butter
1/4 cup Gold Medal™ all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground mustard
1/4 teaspoon Worcestershire sauce
2 cups milk
2 cups shredded or cubed Cheddar cheese (8 ounces)

Steps:

  • Heat oven to 350°F. Cook and drain macaroni as directed on package.
  • While macaroni is cooking, melt butter in 3-quart saucepan over low heat. Stir in flour, salt, pepper, mustard and Worcestershire sauce. Cook over medium low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constanly. Boil and stir 1 minute. Stir in cheese. Cook, stirring occasionally, until cheese is melted.
  • Gently stir macaroni into cheese sauce.
  • Pour into ungreased 2-quart casserole. Bake uncovered 20 to 25 minutes or until bubbly.

Steps:

  • Heat oven to 350°F.
  • Cook macaroni as directed on package.
  • While macaroni is cooking, melt margarine in 3-quart saucepan over low heat. Stir in flour, salt, pepper, mustard and Worcestershire sauce. 2 lbs elbow macaroni
1 tablespoon salt
1/4 cup canola oil
1/4 cup all-purpose flour
1/2 gallon milk
1/2 tablespoon cayenne pepper
1/4 tablespoon white pepper
1/4 lb blue cheese, crumbles (about 1 cup)
1/4 lb cheddar cheese, shredded (about 1 cup)
1 lb Velveeta cheese, diced (about 3 cups)

Steps:

  • Preheat the oven to 375 degrees.
  • Cook the elbow macaroni in a stockpot of boiling water with the salt. Cook the macaroni until limp, not al dente. Drain the macaroni well and pour it into a large rectangular baking dish.
  • In a heavy saucepan heat the oil over medium heat. Add the flour and stir to make a roux, bringing to a light simmer, being careful not to scorch the flour.
  • Heat the milk in another heavy-bottom pan over medium heat and add the roux, cooking out the roux to make a thickened sauce.
  • Add the cayenne, white pepper, blue cheese, cheddar cheese, and velveeta. Blend well and pour over the macaroni and mix well.
  • Cook for 5 to 10 minutes in the oven.

I found this recipe in a Taste of Home publication awhile back. I had written it out and stuck it in my 'to try' binder. A few months ago I made it for the first time... it's now my absolute favorite baked macaroni and cheese recipe! (with it tweaked for my own tastes). Enjoy!

2 cups uncooked elbow macaroni
1/4 cup butter (I use margarine) or 1/4 cup margarine (I use margarine)
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground mustard (I use a squirt of yellow mustard)
1/4 teaspoon Worcestershire sauce
2 cups milk
8 ounces extra-sharp cheddar cheese, cubed
1/8 cup Italian seasoned breadcrumbs
1 tablespoon grated parmesan cheese

Steps:

  • Heat oven to 350 degrees.
  • Cook elbow macaroni as directed on package.
  • While macaroni is cooking, melt butter in a 3 quart saucepan over low heat.
  • Stir in flour, salt, pepper, mustard and Worcestershire sauce.
  • Cook over medium-low heat, stirring constantly, until mixture is smooth and bubbly.
  • Remove from heat.
  • Stir in milk.
  • Heat to boiling, stirring constantly.
  • Boil and stir for 1 minute.
  • Stir in cheese.
  • Cook, stirring occasionally, until cheese is melted.
  • Drain macaroni when done. Gently stir macaroni into cheese sauce and pour into ungreased 2 quart baking dish.
  • Mix together bread crumbs and parmesan cheese; sprinkle over macaroni and cheese.
  • Bake, uncovered, for 25 minutes or until bubbly.

6 small vine-ripened tomatoes (3-inch) cut into twenty-four 1/4-inch-thick slices
3 tablespoons extra-virgin olive oil
1 1/2 teaspoons fresh thyme leaves, plus sprigs for sprinkling
Coarse salt and freshly ground pepper
5 slices white sandwich bread, with crust
2 tablespoons unsalted butter
1 pound elbow macaroni
2 cups homemade or low-sodium store-bought chicken stock
5 tablespoons all-purpose flour
Pinch of freshly grated nutmeg
Pinch of cayenne pepper
2 cups low-fat (1 percent) milk
8 ounces (about 2 1/4 cups) extra-sharp cheddar cheese, grated
1 ounce (about 1/2 cup) Parmesan cheese, freshly grated

Steps:

  • Preheat oven to 400 degrees. Spread tomatoes in a single layer on 2 rimmed baking sheets. Drizzle each sheet with 1 tablespoon oil; sprinkle each with 1/2 teaspoon thyme, and season with salt and pepper. Bake until tomatoes have softened, about 20 minutes. (Leave oven on.)
  • Process bread in a food processor until coarse crumbs form. Melt 1 tablespoon butter with remaining tablespoon oil in amedium skillet over medium heat. Add breadcrumbs, and toss to coat. Season with salt and pepper; set aside.
  • Bring a large pot of water to a boil over high heat. Add 1 tablespoon salt and the pasta. Cook pasta until almost al dente, about 5 minutes. Drain, and run under cold water to stop cooking. Transfer to a large bowl; set aside.
  • Whisk 1/2 cup stock into the flour in a medium bowl; set aside. Melt remaining tablespoon butter in a medium saucepan over medium heat. Stir in nutmeg, cayenne, remaining 1/2 teaspoon thyme, and 1 teaspoon salt. Add milk and remaining 1 1/2 cups stock. Whisk in flour mixture. Bring to a boil, whisking frequently. Reduce to a simmer. Cook 8 minutes, whisking frequently. Add cheeses; cook, stirring, until melted. Pour over macaroni, stirring to combine.
  • Put eight 4 1/2-by-1 1/4-inch ramekins on a baking sheet. Put 2 tomato slices in bottom of each ramekin. Divide macaroni mixture evenly among ramekins. Top each with a tomato slice. Sprinkle with breadcrumbs and thyme sprigs. Bake until bubbling and golden brown, about 30 minutes. Serve immediately.

2 cups 2% milk
2 tablespoons unsalted butter
3 tablespoons flour
2 cups sharp cheddar cheese (, freshly shredded, divided)
1 cup low-fat cottage cheese (, pureed)
1/2 teaspoon kosher salt
1/2 teaspoon ground mustard
1/4 teaspoon coarse ground black pepper (, or ground white pepper)

Steps:

  • Preheat oven to 400 degrees and spray an 8x8" baking dish with vegetable oil spray.
  • In a large pot boil the pasta for 5 minutes then drain and set aside.
  • In that pot, wipe it dry with a paper towel.
  • On medium-high heat melt the butter and whisk in the flour until the flour is completely mixed in.
  • Add in the milk slowly whisking as you pour.
  • Cook, stirring constantly, for 5-6 minutes until the sauce starts to thicken.
  • Add in 1 1/2 cups of the cheddar cheese and the cottage cheese whisking well.
  • Add salt, mustard, pepper, and the cooked pasta and stir to combine.
  • Pour mixture into baking dish.
  • Bake, uncovered for 25-30 minutes or until golden brown and bubbly.

16 oz box cavatappi "Corkscrew" shaped pasta
1 stick butter, softened
1 can (13 oz.) evaporated milk
1 block (16 oz.) Kraft Sharp Cheddar Cheese
1 block (8 oz.) Kraft Mild Cheddar Cheese
1 box (16 oz.) Velveeta Cheese
Salt and pepper to taste

Steps:

  • Cook the cavatappi to about 1 minute less than the package directions. While the Cavatappi is cooking: shred the blocks of cheddar cheese. Cut Velveeta into small cubes.
  • Drain the cooked cavatappi, do not rinse and return the cavatappi to pot. Add butter, milk, and most of the shredded cheddar cheese to hot cavatappi. The rest of the cheese will go on top later. Mix until butter and cheddar cheese melts. The mixture will be soupy. Add the Velveeta cubes. Stir to mix, do not let the Velveeta cubes melt completely. Add salt and pepper to taste. Pour into baking dish. Cover the top with the remaining Cheddar Cheese.
  • Bake at 350°F for 35 minutes. The top will brown slightly.
