COCONUT DATE BARS
The on-the-go, travel-light snack bar. Derived from a famous raw food bar and the ultimate in 'foodie!' This is a great snack for the active lifestyle and impressive to hand out to others. As an outdoor professional I take these in the back country and they need not be refrigerated and give great energy. Cut into bars and enjoy or wrap individually for on the go.

Steps:
- Blend almonds and coconut in a food processor; add dates and pulse until combined. Add cashews and coconut oil; pulse until mixture is thick and sticks together. Transfer to a sheet of waxed paper; form into a square, folding sides of waxed paper over the top. Refrigerate until solid, at least 30 minutes.

MY MOTHER copied this recipe from a Quaker Oats box in the 1950s, and it remains one of our favorite treats today. I serve these date-filled squares as a snack or for dessert topped with a dollop of whipped cream. -Jill McCon, Montrose, Michigan

- In a large bowl, combine the oats, flour, brown sugar, baking soda and salt. Cut in butter until mixture resembles coarse crumbs. Press into a greased 13-in. x 9-in. baking pan. , In a large saucepan, combine the dates, sugar and water. Cook for 10 minutes or until thickened, stirring frequently. Stir in walnuts. Spread over crust. , Bake at 350° for 30 minutes. Cool on a wire rack. Cut into squares; top with whipped topping.

- In a saucepan, combine dates, sugar and water. Cook, stirring frequently, until very thick. Stir in walnuts, if desired; cool. , Sift the flour, salt and baking soda together in a large bowl; add oats and brown sugar. Cut in butter until mixture is crumbly. Sprinkle water over mixture; stir lightly. Pat half into a greased 13x9-in. baking pan. Spread with date mixture; cover with remaining oat mixture and pat lightly. , Bake at 350° for 35-40 minutes or until lightly browned. Cool on a wire rack. Cut into bars.

Steps:
- Place dates in a bowl and cover with several inches of cool water until soft, 30 to 60 minutes. Drain, squeeze out extra liquid, and reserve. Chop dates into a thick paste.
- Combine dates with cashews, vanilla extract, and salt in a bowl. Fold in chocolate chips. Press mixture firmly into a parchment paper-lined 8-inch baking pan until compact. Refrigerate until set, 1 hour to overnight.
- Cut into bars.

- If dates seem dry and hard, soak for 10-20 minutes in warm water, until they are softer. Squeeze out extra liquid from dates and reserve liquid.
- Chop up dates until it is like a thick paste. Mix with chopped cashews. Add vanilla. (If you've got a food processor to chop up the dates into a paste, go for it!)
- If mixture seems too dry, add reserved dates water, 1 teaspoon at a time until mixtures sticks together but is not too wet.
