GREEN SPLIT PEA AND BACON SOUP
From Super Food Ideas July 2008. Though I have listed chicken stock as per recipe I used a homemade ham stock. This bought back memories of New Years Eve parties that my parents used to have and there was always pots of mushy peas served. UPDATE- after making this several times now I have found the cooking time will vary between 25 to 45 minutes - I can only put it down to the split peas and that they may vary from packet to packet.

Steps:
- Heat oil in a saucepan over medium high heat and add onion and garlic and cook stirring for about 3 minutes till onion is soft.
- Add peas and stir to coat.
- Add stock and cold water and bring to the boil.
- Reduce heat to low and simmer partially covered for 25 to 45 minutes or until peas are tender (see note above).
- Remove from heat and process half the soup in a blender or use a stick blender till smooth or do what I did and put the stick blender straight into the pot and process to your liking.
- Return to pot or if you just used the stick blender, stir in lemon juice and cook for 3 minutes or until heated through.
- While soup was cooking in the first 25 minutes, heat a frying pan over medium high heat and add bacon and cook till crisp or use recipe #208501 .
- Transfer to a plate lined with paper towel and drain.
- Crumble into pieces.
- Ladle soup into bowls and top with crumbled bacon and paprika and serve with a roll.
SWEET AND HOT MUSTARD

Steps:
- In a small stainless steel bowl, mix the mustard and the vinegar until smooth. Allow to sit for 3 hours.
- Combine the mustard mixture with the sugar and eggs in the top of a double boiler.
- Bring to a gentle simmer and cook for 20-25 minutes, stirring regularly until thickened (the consistency of mayonnaise).
- Store in refrigerator.

Steps:
- Place the rutabaga in a 6 quart pot with ample water and a pinch of salt. Boil for 15 minutes.
- Add the turnips and potatoes and boil 15 minutes more, until all the vegetables are tender.
- Drain well.
- Mash the vegetables with the remaining ingredients. (I do it right in the pot.) You can also use an immersion blender to puree them.

- Brown the bacon in a frying pan. Remove the bacon and set aside. Discard all but 2 tablespoons of the fat. Add onion and saute until tender.
- Drain peas and place in a 4 to 6 quart pot along with reserved bacon and sauteed onions. Add enough water to just cover the peas.
- Bring to a boil and simmer, covered, about 1 1/2 hours, or until the water is absorbed and the peas are thick. Stir occasionally to prevent sticking and add more water if necessary.
- Stir in salt and pepper to taste and the butter.

- Heat a 4 to 6 quart pot and add the diced pork. Brown the pork to render most of its fat. Remove the pieces of pork from the pot and set aside. Pour off most of the fat, leaving 2 tablespoons in the pot.
- Add the onions to the pot and saute a few minutes. Add the cabbage and reserved pork and cook, covered, 5 minutes until the cabbage collapses.
- Rinse the sauerkraut in a colander and squeeze dry.
- Add the sauerkraut to the pot with the remaining ingredients and combine. Cover and simmer gently for 1 hour, stirring occasionally.

- In 3 1/2- to 4-quart slow cooker, mix all ingredients.

COOKING GREEN SPLIT PEAS FROM SCRATCH
Steps:
- In a large pot, sort through green split peas for any hard debris or rocks. Rinse split peas with water until the water runs clear.
- Add fresh water and bring split peas to a low boil over medium heat. As soon as they boil, reduce the heat to medium-low and let the lentils simmer for 25-30 minutes or until no longer crunchy.
- Drain excess water and allow split peas to cool.
- In a soup pot, combine oil, diced onion and minced garlic, and sauté on medium heat for a few minutes until fragrant.
- Add in finely diced potatoes, frozen corn, and vegetable broth. Raise the heat to medium-high until the soup comes to a boil and reduce the heat to a strong simmer, about medium heat. Cook until the potatoes are tender, about 10 minutes.
- Add in cooked green split peas, diced zucchini, smoked paprika, and salt. Simmer for an additional 5-7 minutes until zucchini is slightly cooked but not overly soft.
- Add in milk and lime juice, stirring well to incorporate. Taste and adjust seasonings.
- Serve with chives, additional corn kernels, and olive oil for topping.
- Preheat the oven to 375.
- Mix together the filling of diced kale, green split peas, green chiles, half of the cheese, minced red onion, lime juice, and salt.
- Spread 1 cup of tomatillo salsa into the base of an 8x8 pan. Scoop about ½ cup of filling into the center of a tortilla and roll gently, placing the seam side down in the pan. Continue until all of your filling is used up, about 12 enchiladas, and then cover the enchiladas with the additional cup of salsa and additional cheese.
- Bake at 375 for 20 minutes until browning and bubbly. Let cool slightly and top with avocado, baby tomatoes and cilantro before serving.
- Preheat the oven to 375 degrees, and grease a rectangular baking dish with olive oil.
- Using a vegetable peeler or a mandoline slicer, create thin lengthwise slices of squash.
- In a mixing bowl, stir together cooked green split peas, ricotta, and mozzarella. If using packaged ricotta, stir in 1 tablespoon garlic powder, 2 teaspoons Italian seasoning, and ½ teaspoon salt.
- Dollop the mixture into a slice of the squash and roll it up. Place it in the baking dish. Repeat until you've used up your filling, about 15 roll ups.
- Slather the tops of the zucchini roll ups with pesto, and top with the halved baby tomatoes.
- Bake at 375 for 20-25 minutes, until hot. Let rest 5 minutes and serve with a green salad.
GREEN SPLIT PEA SOUP

CREAMY SPLIT PEA SOUP WITH BACON

- Rinse split peas in cold water, pick over and discard any discolored peas or small stones. Set aside.
- In a Dutch oven or 6-quart pan over medium heat, cook bacon until crisp .
- Remove bacon with a slotted spoon to paper towels to drain. Refrigerate until later, for garnish.
- In the bacon drippings over medium heat, cook the onion and celery until tender and lightly browned, about 12 to 15 minutes.
- Add the split peas, water, potatoes, salt, pepper, bouillon, and bay leaf.
- Bring to a boil over high heat, then reduce heat to low.
- Cover and let simmer for 45 minutes, or until peas are soft. Stir occasionally.

- In a large stockpot on medium-high heat, dry fry the bacon until golden brown (you can add a bit of oil if it starts to stick to the bottom of the pan.
- If needed, add one-two tablespoons of olive oil, add the onions to the pan and with the garlic until the onions are translucent, 5-10 minutes.
- Add the carrots, celery, split peas, chicken stock, smoked paprika, and bay leaf.

- Rinse the peas in a colander under cool running water. Put them in a large, nonreactive bowl and cover with water by 2 inches. Let soak uncovered in a cool place overnight.
- Put the peas and soaking water into a heavy 6-to-8-quart pot. Add water to cover again by 2 inches. Bring to a boil over medium heat, and let boil two minutes. Skim off and discard any foam and skins that rise to the top.
- Stir in the chopped onion. Cut the piece of bacon crosswise into two pieces, and add to the pot with 3 tablespoons fresh marjoram or thyme leaves, stripped of stems and chopped.
- Let the soup boil gently for 40 to 90 minutes until it becomes very thick and buttery yellow. Whole peas will take longer and will be soft but still whole when cooked. Split peas will take a shorter time to cook and will almost disintegrate. If the soup becomes too thick, add more water.
- Remove the pot from the heat. Remove the two pieces of bacon, and cut off and discard the rind. Cut the bacon crosswise into 1/2-inch slices. Reserve.
- Stir the soup well, and season with 2 to 4 tablespoons mustard. Add salt, if necessary, and black pepper. Add more fresh thyme or marjoram if desired.
- Serve with soup in shallow bowls with slices of bacon on the side. Pass additional mustard to stir into the soup. In Sweden, this soup, called artsoppa, is served with crisp rye bread covered with grated vasterbottem, a sharp, hard cheese. Aged cheddar and Parmigiano Reggiano are good substitutes.
