GREEN SPLIT PEA AND BACON SOUP



Green Split Pea and Bacon Soup image

From Super Food Ideas July 2008. Though I have listed chicken stock as per recipe I used a homemade ham stock. This bought back memories of New Years Eve parties that my parents used to have and there was always pots of mushy peas served. UPDATE- after making this several times now I have found the cooking time will vary between 25 to 45 minutes - I can only put it down to the split peas and that they may vary from packet to packet.

1 tablespoon olive oil
1 large brown onion (finely chopped)
2 garlic cloves (crushed or minced)
1 1/4 cups dried split green peas (dried peas rinsed)
2 cups chicken stock
2 cups water (cold)
2 tablespoons lemon juice
125 g bacon (rashers shortcut rind removed)
1/2 teaspoon paprika (to serve)
4 crusty bread rolls (to serve, I used bacon and cheese)

Steps:

  • Heat oil in a saucepan over medium high heat and add onion and garlic and cook stirring for about 3 minutes till onion is soft.
  • Add peas and stir to coat.
  • Add stock and cold water and bring to the boil.
  • Reduce heat to low and simmer partially covered for 25 to 45 minutes or until peas are tender (see note above).
  • Remove from heat and process half the soup in a blender or use a stick blender till smooth or do what I did and put the stick blender straight into the pot and process to your liking.
  • Return to pot or if you just used the stick blender, stir in lemon juice and cook for 3 minutes or until heated through.
  • While soup was cooking in the first 25 minutes, heat a frying pan over medium high heat and add bacon and cook till crisp or use recipe #208501 .
  • Transfer to a plate lined with paper towel and drain.
  • Crumble into pieces.
  • Ladle soup into bowls and top with crumbled bacon and paprika and serve with a roll.

SWEET AND HOT MUSTARD

1 (4 ounce) can dry Coleman's dry mustard
1 cup malt vinegar
1 cup sugar
6 eggs, beaten

Steps:

  • In a small stainless steel bowl, mix the mustard and the vinegar until smooth. Allow to sit for 3 hours.
  • Combine the mustard mixture with the sugar and eggs in the top of a double boiler.
  • Bring to a gentle simmer and cook for 20-25 minutes, stirring regularly until thickened (the consistency of mayonnaise).
  • Store in refrigerator.

1 3/4 lbs rutabagas, peeled and quartered
1 1/2 lbs turnips, peeled and quartered
1 lb russet potato, peeled and quartered
4 tablespoons butter, melted (1/2 a cube)
1/2 cup whipping cream
salt & freshly ground black pepper, to taste

Steps:

  • Place the rutabaga in a 6 quart pot with ample water and a pinch of salt. Boil for 15 minutes.
  • Add the turnips and potatoes and boil 15 minutes more, until all the vegetables are tender.
  • Drain well.
  • Mash the vegetables with the remaining ingredients. (I do it right in the pot.) You can also use an immersion blender to puree them.

1/2 lb bacon, chopped
1 medium yellow onion, peeled and sliced
1 lb split peas, washed and soaked in 6 cups water for 6 hours-overnight
salt & freshly ground black pepper
4 tablespoons butter (1/2 cube)

Steps:

  • Brown the bacon in a frying pan. Remove the bacon and set aside. Discard all but 2 tablespoons of the fat. Add onion and saute until tender.
  • Drain peas and place in a 4 to 6 quart pot along with reserved bacon and sauteed onions. Add enough water to just cover the peas.
  • Bring to a boil and simmer, covered, about 1 1/2 hours, or until the water is absorbed and the peas are thick. Stir occasionally to prevent sticking and add more water if necessary.
  • Stir in salt and pepper to taste and the butter.

1 lb smoked pork jowl, diced (I think I used some ham and salt pork)
2 medium yellow onions, peeled and sliced
1 lb green cabbage, cored and shredded
2 quarts sauerkraut (packed in a glass jar)
1 apple, cored and coarsely chopped
2 cups dry white wine
1 tablespoon light brown sugar
1 teaspoon caraway seed
1 teaspoon fresh ground pepper (to taste)

Steps:

  • Heat a 4 to 6 quart pot and add the diced pork. Brown the pork to render most of its fat. Remove the pieces of pork from the pot and set aside. Pour off most of the fat, leaving 2 tablespoons in the pot.
  • Add the onions to the pot and saute a few minutes. Add the cabbage and reserved pork and cook, covered, 5 minutes until the cabbage collapses.
  • Rinse the sauerkraut in a colander and squeeze dry.
  • Add the sauerkraut to the pot with the remaining ingredients and combine. Cover and simmer gently for 1 hour, stirring occasionally.

1 pound dry green split peas, about 2 cups
8 cups water
1 tablespoon olive oil
1 small yellow onion, diced (1 heaping cup)
2 garlic cloves, minced
1 small Yukon gold potato, finely diced (1 heaping cup)
1 10-ounce bag (2 cups) of frozen sweet corn
4 cups vegetable broth
2 cups cooked green split peas
2 cups diced zucchini
¼ teaspoon smoked paprika
½ teaspoon sea salt
½ cup milk of choice (unsweetened plain if using plant milk)
1 teaspoon lime juice
Chives, corn kernels, and olive oil for topping
2 cups finely diced kale
2 cups cooked green split peas
1 4.5-ounce can chopped mild fire roasted green chiles, drained
1 and ½ cups shredded Monterrey jack cheese, split into 2 bowls
¼ cup minced red onion
1 tablespoon lime juice
¼ teaspoon salt
1 16-ounce jar of tomatillo salsa, medium heat
12 corn tortillas
Avocado, baby tomatoes, jalapeños, lime juice and cilantro for topping
1 tablespoon olive oil
2 zucchini or yellow squash
2 cups cooked green split peas
15-ounce container of ricotta (1 and ¾ cups), or 1 batch tofu ricotta
½ cup shredded mozzarella cheese, if desired
1 cup pesto
1 cup halved baby tomatoes

Steps:

  • In a large pot, sort through green split peas for any hard debris or rocks. Rinse split peas with water until the water runs clear.
  • Add fresh water and bring split peas to a low boil over medium heat. As soon as they boil, reduce the heat to medium-low and let the lentils simmer for 25-30 minutes or until no longer crunchy.
  • Drain excess water and allow split peas to cool.
  • In a soup pot, combine oil, diced onion and minced garlic, and sauté on medium heat for a few minutes until fragrant.
  • Add in finely diced potatoes, frozen corn, and vegetable broth. Raise the heat to medium-high until the soup comes to a boil and reduce the heat to a strong simmer, about medium heat. Cook until the potatoes are tender, about 10 minutes.
  • Add in cooked green split peas, diced zucchini, smoked paprika, and salt. Simmer for an additional 5-7 minutes until zucchini is slightly cooked but not overly soft.
  • Add in milk and lime juice, stirring well to incorporate. Taste and adjust seasonings.
  • Serve with chives, additional corn kernels, and olive oil for topping.
  • Preheat the oven to 375.
  • Mix together the filling of diced kale, green split peas, green chiles, half of the cheese, minced red onion, lime juice, and salt.
  • Spread 1 cup of tomatillo salsa into the base of an 8x8 pan. Scoop about ½ cup of filling into the center of a tortilla and roll gently, placing the seam side down in the pan. Continue until all of your filling is used up, about 12 enchiladas, and then cover the enchiladas with the additional cup of salsa and additional cheese.
  • Bake at 375 for 20 minutes until browning and bubbly. Let cool slightly and top with avocado, baby tomatoes and cilantro before serving.
  • Preheat the oven to 375 degrees, and grease a rectangular baking dish with olive oil.
  • Using a vegetable peeler or a mandoline slicer, create thin lengthwise slices of squash.
  • In a mixing bowl, stir together cooked green split peas, ricotta, and mozzarella. If using packaged ricotta, stir in 1 tablespoon garlic powder, 2 teaspoons Italian seasoning, and ½ teaspoon salt.
  • Dollop the mixture into a slice of the squash and roll it up. Place it in the baking dish. Repeat until you've used up your filling, about 15 roll ups.
  • Slather the tops of the zucchini roll ups with pesto, and top with the halved baby tomatoes.
  • Bake at 375 for 20-25 minutes, until hot. Let rest 5 minutes and serve with a green salad.

8 ounces diced bacon
1 cup onion, chopped
2 chopped celery ribs
2 quarts water
2 medium potatoes, peeled, diced

3 chicken or beef bouillon cubes (or equivalent base or granules)
1 bay leaf
1 cup half-and-half
Freshly ground black pepper, to taste

Steps:

  • Rinse split peas in cold water, pick over and discard any discolored peas or small stones. Set aside.
  • In a Dutch oven or 6-quart pan over medium heat, cook bacon until crisp .
  • Remove bacon with a slotted spoon to paper towels to drain. Refrigerate until later, for garnish.
  • In the bacon drippings over medium heat, cook the onion and celery until tender and lightly browned, about 12 to 15 minutes.
  • Add the split peas, water, potatoes, salt, pepper, bouillon, and bay leaf.
  • Bring to a boil over high heat, then reduce heat to low.
  • Cover and let simmer for 45 minutes, or until peas are soft. Stir occasionally.
  • Discard bay leaf.
  • Carefully purée the hot pea soup in batches , filling the blender no more than 1/3 to 1/2 full each time. Make sure cover is secure when blending the hot mixture.
  • Pour blended mixture into a bowl while blending subsequent batches.
  • Return the mixture to the Dutch oven and stir in the half-and-half.
  • Cook over medium heat until hot, but do not boil.
  • Taste and season with salt and pepper.
  • Sprinkle the reserved bacon on top of the soup just before serving.

8 ounces Thick sliced bacon or pancetta (chopped)
1 large yellow onions (chopped)
2 cloves garlic (minced)
2 tablespoons olive oil (for sautéing)
3 carrots (diced)
3 Celery Stalks (diced)
1 pound dried split yellow peas
8 cups chicken stock
1 teaspoon smoked paprika
salt and pepper (to taste)
1 bay leaf

Steps:

  • In a large stockpot on medium-high heat, dry fry the bacon until golden brown (you can add a bit of oil if it starts to stick to the bottom of the pan.
  • If needed, add one-two tablespoons of olive oil, add the onions to the pan and with the garlic until the onions are translucent, 5-10 minutes.
  • Add the carrots, celery, split peas, chicken stock, smoked paprika, and bay leaf.
  • Bring to a boil, then simmer uncovered (Skimming off any foam that forms foam while cooking) for 1 - 2 hours or until the peas start to break down. Check often and stir frequently to keep the soup from burning on the bottom.
  • Taste for salt and pepper. Serve hot.

1 pound dried, whole or split yellow peas (see note)
1 large onion, chopped, 1 1/2 to 2 cups
1 pound fresh bacon, in one piece
1 bunch fresh marjoram or thyme
Hot and sweet or hot mustard, to taste
Fine sea salt to taste
Freshly ground black pepper to taste

Steps:

  • Rinse the peas in a colander under cool running water. Put them in a large, nonreactive bowl and cover with water by 2 inches. Let soak uncovered in a cool place overnight.
  • Put the peas and soaking water into a heavy 6-to-8-quart pot. Add water to cover again by 2 inches. Bring to a boil over medium heat, and let boil two minutes. Skim off and discard any foam and skins that rise to the top.
  • Stir in the chopped onion. Cut the piece of bacon crosswise into two pieces, and add to the pot with 3 tablespoons fresh marjoram or thyme leaves, stripped of stems and chopped.
  • Let the soup boil gently for 40 to 90 minutes until it becomes very thick and buttery yellow. Whole peas will take longer and will be soft but still whole when cooked. Split peas will take a shorter time to cook and will almost disintegrate. If the soup becomes too thick, add more water.
  • Remove the pot from the heat. Remove the two pieces of bacon, and cut off and discard the rind. Cut the bacon crosswise into 1/2-inch slices. Reserve.
  • Stir the soup well, and season with 2 to 4 tablespoons mustard. Add salt, if necessary, and black pepper. Add more fresh thyme or marjoram if desired.
  • Serve with soup in shallow bowls with slices of bacon on the side. Pass additional mustard to stir into the soup. In Sweden, this soup, called artsoppa, is served with crisp rye bread covered with grated vasterbottem, a sharp, hard cheese. Aged cheddar and Parmigiano Reggiano are good substitutes.

1 pound dried yellow split peas
1 pound bacon or salt pork, in one piece
1 celeriac, peeled, or 1 large stalk celery cut in 1" pieces
3 leeks, white and green parts, washed thoroughly and cut in 1" pieces
3 medium carrots, peeled and cut in 1" pieces
3 medium potatoes, peeled and cut in 1" pieces
3 medium onions, thinly sliced
1/8 teaspoon thyme
1 pound Danish Canadian-style bacon (pork loin) or Canadian bacon
1 1/2-pound can cocktail Vienna sausage, drained

Steps:

  • Wash and drain peas. Cover with cold water and soak overnight or according to package directions. Drain and place in large kettle with 3 quarts water. Slowly bring to a boil. Cooked covered over medium heat for 1 hour. Skim off pea skins as they float to the top. Add bacon or salt pork. ( If pork is very salty, soak in cold water for 30 minutes, drain and pat dry.) Cover soup and simmer over lowest possible heat for about 2 hours, stirring occasionally. the peas should be of puréed consistency. Add celeriac or celery, leeks, carrots, potatoes, onions, thyme and Canadian bacon to soup during last 45 minutes of cooking time. Stir soup occasionally and check for desired consistency; if necessary, add a little hot water. When ready to serve, remove bacon or salt pork and Canadian bacon to heated platter and slice. Serve soup and sliced meats separately. The meats may also be served cold, if desired.

one cup or 200 g of dried yellow split pea
one medium yellow onion (finely chopped)
3 garlic cloves (minced)
one small piece ginger (finely chopped)
1 to 2 dried red chile peppers
one large tomato (finely chopped)
1/4 tsp whole (yellow mustard seed)
2 curry leaves (optional)
one cinnamon stick
1/2 tsp whole coriander seed
one tbsp whole cumin seed
*2 tsp Garam Masala ((I used my homemade recipe))
one tsp turmeric powder
one tbsp olive oil
4 cups or 1 lt water (or low sodium & no MSG vegetable broth)
freshly chopped cilantro to taste

Steps:

  • Pick through and rinse the split peas, set aside and allow to drain. Heat the oil and once warm saute the onion until soft and translucent. Next add ginger and garlic and saute for 2 minutes. Then add all of the spices, curry leaves and chile, cook until the spices begin to pop making sure to stir and prevent burning. Add the potatoes, tomato, split peas, and water/stock. Stir well, cover and simmer until the split peas and potatoes have soften or about 30-40 minutes. Taste and adjust seasoning if needed. Mix in chopped cilantro right before serving. Serve with steamed basmati rice and steamed broccoli if desired.

  • Heat on Low for 8 hours or High for 4 hours. Season with salt and pepper to taste and garnish with fresh parsley before serving.

This yellow split pea soup has fresh ginger to give it a bright flavor. Use the best ham you can find to get the most flavor.

3 cups yellow split peas (about 1 1/2 pounds)
4 cups reduced-sodium chicken broth
4 cups water
2 cups diced yellow onion
1 cup diced carrot
1 cup finely diced celery
8 ounces ham, trimmed and diced
1 tablespoon minced fresh ginger
1 teaspoon dried marjoram
Freshly ground pepper to taste

Steps:

  • Place split peas in a medium bowl. Wash with cold water until the water runs clear; drain and spread in a 5- to 6-quart slow cooker.
  • Add broth, water, onion, carrot, celery, ham, ginger and marjoram to the slow cooker (see Tip). Stir to combine.
  • Cover and cook for 5 hours on High or 7 to 8 hours on Low. Season with pepper.
