Number Of Ingredients 4

4 cups dried hibiscus flowers (aka Flor de Jamaica)
4 cups water, for steeping
1/4 cup granulated sugar (substitute agave nectar)
4 cups cold distilled water

Steps:

  • In a large pot, pour in 4 cups water and add hibiscus flowers. Bring to a boil and cook for 2 minutes. Turn off the heat, cover and let it steep for 30 minutes.
  • Strain the mixture into a fine sieve over a large bowl or measuring cup; discard the flowers. Add sugar to concentrate Agua de Jamaica and stir well before adding 4 cups cold distilled water. Stir well, taste and adjust if necessary, transfer to the fridge to chill, about 4 hours.
  • Pour Agua de Jamaica in a tall glass over ice cubes. Makes 7 cups.

2/3 cup dried hibiscus flowers
4 cups cold water, divided
1/3 cup granulated sugar, to taste

Steps:

  • Put flowers and 3 cups water in a saucepan and bring to a boil; continue boiling approximately 5 minutes.
  • Remove from heat and add remaining cup of water and sugar.
  • Set aside at least 4 hours (or overnight).
  • Strain into a pitcher and refrigerate.
  • Serve well-chilled.

2 cups (2 ounces) dried jamaica "flowers"
1 1/4 cups sugar

Steps:

  • In a medium (3-quart) stainless or enameled saucepan, bring 1 1/2 quarts of water to a boil. Add the "flowers" and sugar. Stir for a minute or so, while the liquid returns to a boil and the sugar dissolves. Cover and let steep for at least an hour, but no more than 2. Pour the mixture through colander or strainer into a large bowl, pressing on the "flowers" to extract as much liquid as possible. Stir in 3 cups water. This recipe makes a tart version of auga de jamaica; feel free to stir in more sugar, if that appeals to you. Store covered in the refrigerator in a noncorrosive container (preferably one that won't strain).
