Steps:

  • Stir flour, sugar, baking powder and salt. Set aside. In large mixing bowl, combine All-Bran cereal and milk. Let stand 5 minutes or until softened. Add.

1 ½ cups wheat bran
1 cup buttermilk
⅓ cup vegetable oil
1 egg
⅔ cup brown sugar
½ teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ cup raisins

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
  • Mix together wheat bran and buttermilk; let stand for 10 minutes.
  • Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in raisins and spoon batter into prepared muffin tins.
  • Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy!

4 cups bran flakes cereal
2 cups wheat bran cereal (such as Kellogg's® All-Bran®)
2 cups boiling water
2 ½ cups white sugar
1 ½ cups shortening
4 eggs
5 cups all-purpose flour
5 teaspoons baking soda
1 teaspoon salt
1 quart buttermilk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a muffin pan or line with muffin cups.
  • Combine bran flakes and bran cereal in a heat-proof bowl. Cover with boiling water; stir and let sit until softened.
  • Beat sugar, shortening, and eggs together in a very large bowl with an electric mixer until creamy.
  • Sift flour, baking soda, and salt into a bowl. Add flour mixture and buttermilk alternately to sugar mixture. Stir in softened bran; mix until evenly incorporated.
  • Spoon batter evenly into prepared muffin pan.

My Favorite Bran Muffins image

After trying dozens of bran muffin recipes, I developed this one myself, and have used it again and again! These muffins are easy to make and convenient, since you can prepare the batter days ahead of time. When we're expecting company, I pour the prepared batter into tins and have hot muffins ready by the time the coffee's perked.

1-1/4 cups All-Bran
1 cup toasted wheat germ
1 cup packed brown sugar
2-1/2 cups whole wheat flour
2-1/2 teaspoons baking soda
1/2 teaspoon salt
1 tablespoon grated orange zest
2 large eggs, lightly beaten
1/2 cup honey
1/4 cup molasses
1/2 cup vegetable oil
2 cups buttermilk
1 cup boiling water

Steps:

  • In a large bowl, combine the first seven ingredients; set aside. Combine the eggs, honey, molasses, oil, buttermilk and boiling water; mix well with dry ingredients. Fill greased muffin cups two-thirds full. , Bake at 350° for 20-25 minutes. Batter may be made ahead and stored in refrigerator for up to 1 month.

Steps:

  • Preheat oven to 400°F and lightly coat nine 1/4-cup muffin tins with cooking spray.
  • In a large bowl combine cereals, milk, and orange juice and let stand 5 minutes. In a small bowl whisk together flour, baking powder, cinnamon, and salt. Into cereal mixture stir egg white and honey until combined well. Add flour mixture and stir until just combined. Divide batter among muffin tins and bake in middle of oven 20 minutes, or until golden and a tester comes out clean. Turn muffins out onto racks and cool.

A co-worker gave this recipe to me over 40 years ago. Anyone that has tasted this bread has always asked for the recipe. It not only freezes well, but it makes a large batch that will keep for 6 weeks refrigerated.

2 cups boiling water
2 cups all-bran cereal or 2 cups bran buds
3 cups white sugar
1 cup Crisco
4 eggs
1 quart buttermilk
5 cups flour
1 teaspoon salt
5 teaspoons baking soda
4 cups all-bran cereal

Steps:

  • Pour boiling water over All-Bran or Buds and let stand.
  • Cream together Crisco and sugar and add to bran.
  • Add the well-beaten eggs and buttermilk and the soaked bran mixture.
  • Then slowly add the flour, salt, soda and fold in 4 cups All-Bran.
  • Store in covered container in the refrigerator and use as desired. Improves with age. If you have leftovers, microwave for about 20 seconds. When filling muffin pans, do not stir refrigerated batter. Bake for 20 minutes at 375°. Will keep 6 weeks in refrigerator.
