- Add the Hummus, Mustard, and Lemon Juice to a small bowl and mix with a spoon or fork until well-combined.
- Add in water in 1 tbsp increments until your desired thickness is reached, then serve as desired! Leftovers will keep in the fridge for up to one week.

- Preheat the oven to 200°C/400°F/gas 6.
- Scrub and chop the sweet potatoes into 2.5cm chunks. Place into a roasting tray with the chilli flakes, ground coriander and cinnamon, a drizzle of olive oil and a little sea salt and black pepper, then toss well.
- Spread out into an even layer and place in the hot oven for 15 to 20 minutes, or until golden and crisp.
- Meanwhile, cook the quinoa in boiling salted water according to the packet instructions.
- Slice the broccoli into small florets, then halve and finely slice the stalk. Place into a heatproof colander and rest it over the quinoa pan. Cover and steam for 3 minutes, or until just tender.
- Once cooked, drain and rinse the quinoa under cold running water, then leave to cool along with the broccoli. Remove the sweet potato from the oven and leave it to cool, too.
- Meanwhile, toast the nuts in a dry frying pan over a medium-high heat for 2 to 3 minutes, then transfer to a pestle and mortar and crush lightly.
- Halve the pomegranate and squeeze half the juice into a large bowl. Add 3 times as much extra virgin olive oil, the lime juice and balsamic vinegar. Whisk well and season to taste.
- Add the cooled broccoli and sprouts to the dressing, then snip in the cress. Roughly chop the coriander (stalks and all), finely slice the chilli and add to the bowl along with the quinoa and sweet potato.
- Toss well, spread out on a serving platter, then scoop out and dot over the avocado flesh.
- Bash the reserved pomegranate half with a wooden spoon so the seeds come tumbling out and scatter these over the platter along with the nuts, snip the cress on top, then serve with the feta crumbled over the top.

- Bring a medium pot of water to a boil over high heat. Gently lower eggs into water and cook 7 minutes. Transfer to a large bowl of ice water and let sit until cool enough to handle. Peel and slice in half lengthwise.
- Meanwhile, whisk vinegar, honey, tamari, kosher salt, and 1/4 cup oil in a large bowl until smooth. Add kale and brussels sprouts. Toss and massage with your hands until kale is darker in color and vegetables are coated in dressing.
- Swoosh about 1/4 cup hummus onto side of each bowl. Top with salad and egg halves; season eggs with sea salt. Drizzle oil over and top with seedy sprinkle.
- Do Ahead: Unpeeled eggs can be cooked 2 days ahead. Transfer to an airtight container and chill. Kale and brussels sprouts salad can be made 8 hours ahead. Cover and chill.

- Heat a small saute pan over medium heat. Add the olive oil and garlic and cook just until fragrant, 2 minutes. Allow to cool slightly. In a large bowl, whisk together the tahini and lemon juice. Until about 2 years ago, I would never try anything new. I was a ham-and-cheese kind of girl. Then one day at Epcot, my sister persuaded me to try the food in the Morocco pavilion. I was feeling adventerous so I got the sampler platter consisting of a gyro-like sandwich, some falafel, hummus, tabouleh, and citrus lentil salad. Well, I had certainly been missing out! Everything was delicious, uh, except the lentils. Now, I am addicted. I snack on veggies dipped in hummus, warm pita dipped in hummus, and I even use hummus in place of mayo on wraps and sandwiches. This hummus recipe is very basic but you can easily tweak it to suit your taste.

- Reserving 1/4 cup liquid from can, drain chickpeas in a colander. Rinse well under cold water then shake off excess water.
- Process chickpeas and reserved liquid, lemon juice, tahini, garlic, cayenne, and 1 1/4 tsp salt in food processor.
- Transfer mixture to a serving dish. If desired, drizzle with oil and sprinkle with paprika.
- For variety, I sometimes add finely chopped cucumber (seeds removed and patted dry) and dill. Or I like to add finely chopped olives (black, green, kalamata).
