PICKLED CUCUMBERS WITH DILL & SPICE

Pickled cucumbers with dill & spice image

Piccalilli with bite, this chunky chutney of sliced gherkins, spices and dill is perfect with meat, cheese or as a homemade gift

Provided by Good Food team

Categories     Condiment

Time 25m

Yield Makes about 3 x 450g/1lb jars

Number Of Ingredients 10

3 medium cucumber
1 large onion , thinly sliced
85g sea salt flakes (essential- table salt will render your efforts inedible)
500ml cider vinegar
250g granulated sugar
1 tsp coriander seed
2 tsp yellow mustard seed
1 tsp peppercorn
1 tsp ground turmeric
small bunch dill

Steps:

  • Wash the cucumbers, split along their length and scoop out the seeds. Cut each half into finger-length chunks, then cut into 5mm strips. Mix with the onion and salt in a large bowl, cover and leave to soak overnight.
  • Next day, drain the juices, rinse the vegetables in cold water and drain well. Put the vinegar, sugar and spices into a very large saucepan and heat gently until the sugar has dissolved. Simmer for 5 mins to let the flavours infuse.
  • Add the vegetables and bring the pan to a rolling boil over a high heat, stirring now and again. Boil for 1 min, then remove pan from the heat. Tear in the dill, then pack into sterilised jars (see above right), making sure that no air bubbles are trapped. Store in a cool, dark place until ready to use.

GLAZED CUCUMBERS WITH DILL

Glazed Cucumbers with Dill image

Cucumbers with salty butter and dill make pretty sandwiches, but we like to cook them very gently for a warm, silky salad. Using garden cucumbers requires just a little prep: we remove the tough peel and scrape out the seeds, which can be watery. If you have some chopped parsley on hand, fold it in with the dill.

Provided by Food Network Kitchen

Categories     side-dish

Time 20m

Yield 4 servings

Number Of Ingredients 5

1 1/2 pounds garden cucumbers (about 2)
3 tablespoons salted butter, plus more for serving
3 tablespoons chopped fresh dill
Kosher salt
Pumpernickel bread slices, for serving

Steps:

  • Peel the cucumbers, halve them lengthwise and scrape out the seeds with a spoon. Slice into 1/4-inch-thick half-moons.
  • Melt the butter in a large skillet over medium-high heat and add the cucumbers. Pour in 1/4 cup water, bring to a boil, then lower to a simmer. Cover and simmer until the cucumbers are tender but not mushy, about 5 minutes.
  • Stir the in dill and season with salt. Serve hot, with slices of pumpernickel bread and additional butter.

CUCUMBER-DILL MARINADE WITH GRILLED LAMB KEBABS

Cucumber-Dill Marinade with Grilled Lamb Kebabs image

Provided by Aida Mollenkamp

Categories     main-dish

Time 46m

Yield 3 to 4 servings

Number Of Ingredients 13

Cucumber-Dill Yogurt Dip, recipe follows
1 pound deboned leg of lamb, large dice
2 medium zucchini, large dice
1 medium red onion, large dice
Metal or wooden skewers
2 cups plain whole milk yogurt
1/4 English hothouse cucumber, small dice (about 3/4 cup)
2 tablespoons minced fresh dill
1 teaspoon ground coriander
3/4 teaspoon red pepper flakes
1/2 teaspoon white wine vinegar
1 teaspoon kosher salt
Freshly ground black pepper

Steps:

  • Reserve 1 1/2 cups dip as serving sauce. In a large resealable plastic bag, combine remaining 1 cup dip, lamb, zucchini, and onion. Close and shake to thoroughly coat meat and vegetables. Let marinate 30 minutes at room temperature. (Can be stored in refrigerator up to 24 hrs in advance.)
  • When ready to cook, heat a lightly-oiled grill pan over medium heat. Remove lamb and vegetables from marinade, let excess drip off, and thread on skewers. Place skewers in pan and cook, turning to cook all sides, until lamb is medium-rare and vegetables are cooked through, about 6 minutes total. (You may have to do this in batches.)
  • Serve immediately over rice or with flatbread and pass reserved sauce on side.
  • Serving Suggestion: Steamed rice, rice pilaf, or pita bread.
  • In a medium bowl, mix together yogurt, cucumber, dill, coriander, red pepper flakes, vinegar, and salt until evenly combined. Season well with freshly ground black pepper, taste, and adjust seasoning, as needed. Serve with an assortment of vegetables for dipping.

10 FOODS THAT PAIR WELL WITH DILL - ONE GREEN PLANET
10-foods-that-pair-well-with-dill-one-green-planet image

  • Potatoes. Dill works well with hearty foods such as potatoes which is why this herb is commonly found in potato dishes, both hot and cold. I use dill in my Dijon Grilled Potato Salad with Arugula that can be eaten warm or cold.
  • Grains. Dill works well with grains such as barley, quinoa, wheat berries, couscous and bulgur. I make a Rainbow Quinoa Tabbouleh which is my gluten-free version of the Mediterranean dish.
  • Vegan Seafood. Dill is often used in seafood dishes such as salmon, shrimp and tuna. It works just as well in the plant-based versions of these dishes.
  • Creamy Dressings. Speaking of vegan seafood, dill is perfect in creamy dressings such as tartar sauce. When you make vegan “fish” and chips, whip up a quick tartar sauce by mixing one cup of vegan mayo with 2 tablespoons of unsweetened pickle relish and the zest and juice of a lemon.
  • Vegan Cheese. Dill is a tasty addition to soft cheeses. It’s commonly used with feta in Greek dishes so it only makes sense that it would be delicious in this Vegan Almond Feta Cheese too.
  • Vegan “Egg” Dishes. Dill is often found in egg dishes such as scrambles, deviled eggs and frittatas. Well, we don’t need eggs to make these types of dishes and still enjoy the herby taste of dill.
  • Greens, Tomatoes and Onions. The fresh herby taste of dill works well with veggies and other greens. I like to add dill to my slaws and salads. My favorite coleslaw recipe is what I call my Color Slaw.
  • Lemon. Dill has a delightfully fresh and citrus-like flavor which makes it pair well with lemon. Use it in these Jicama Burgers with Cumin, Coriander, Dill and Lemon.
  • Beets. Fresh dill can brighten up earthy beets so add dill to your beet recipes. When I make Borscht or Beet Soup, dill is definitely in the mix. Boil 6 red beets that have been peeled and chopped in 3 cups of salted water for 20 minutes or until fork-tender.
  • Pickles. Now that we have gone through all these foods that dill pairs with, we can come back to the one that was probably your first thought: pickles.
