2 teaspoons cumin seeds
1 small onion
3/4 cup chicken broth
1 1/2 cups water
a 10-ounce package frozen peas
1 teaspoon coarse salt

Steps:

  • In a dry small heavy skillet toast cumin seeds over moderate heat, shaking skillet frequently, until a shade darker and fragrant, 3 to 5 minutes, and cool. With a mortar and pestle or in an electric coffee/spice grinder finely grind seeds.
  • Finely chop onion and in a 2-quart saucepan simmer onion in broth and water until soft. Add peas, half of cumin, and half of salt and simmer, uncovered, until peas are tender, about 5 minutes. In a blender purée soup in 2 batches until smooth (use caution when blending hot liquids) and transfer to another saucepan.
  • In a small bowl stir together remaining cumin and salt to use as garnish.

1/2 pound slab bacon
1 medium onion, chopped
1 carrot, diced
1 celery stalk, diced
Salt and freshly ground black pepper
1 clove garlic, chopped
1 tablespoon ground cumin
1 pound green split peas, washed and picked clean
6 cups low-sodium chicken stock
1 tomato, diced, for garnish
1 lime, cut into wedges, for garnish
Special equipment: Blender or immersion blender

Steps:

  • Slice the bacon into 1/2-inch chunks. Add to a large soup pot and cook over medium-high heat to render the fat and get crispy on all sides, about 8 minutes total. The more brown the better; just don't burn them. They are perfect when they are more chewy than juicy.
  • Remove bacon chunks and set aside on a paper towel lined plate. Pour off all but 2 to 3 tablespoons of fat from the stock pot. Add the onion, carrot and celery with a pinch of salt and pepper and saute until onions are just translucent, about 6 to 8 minutes. Stir in the garlic and cumin and let cook another minute before adding the split peas and stock. Cover and bring to a boil. Reduce the heat and simmer until the peas are al dente (cooked through, but slightly firm and whole), about 20 minutes. Cool for 5 minutes.
  • Ladle out about 3 cups of the peas and carefully blitz the remaining soup using an immersion blender or countertop blender until creamy. If using a countertop blender be sure to only fill it about 1/3 the way up and start on a slow speed, then raise to a higher speed. This method will take a bit longer due to the need to blitz in batches. Pour the soup back into the pot. Return the 3 cups of peas to the soup and stir to combine and heat through. Season with salt and pepper, to taste. To serve, ladle the soup into bowls and top with bacon, tomato and a squeeze of lime.

3 tablespoons olive oil
¼ cup lemon juice
8 cloves garlic, minced
3 carrots, sliced
2 white onions, sliced
6 stalks celery, sliced
10 cups water
8 cubes chicken bouillon
2 cups dried split peas
1 tablespoon Italian seasoning
1 teaspoon ground cumin
1 tablespoon salt
1 tablespoon ground black pepper
½ teaspoon cayenne pepper
4 teaspoons curry powder

Steps:

  • In a large soup pot over medium heat, heat the olive oil, and stir in the lemon juice, garlic, carrots, onions, and celery. Cook and stir until the carrots become soft enough to break apart with a fork, about 20 minutes. Transfer the vegetables and their juices into a bowl, and refrigerate. Once slightly cool, place them into a blender, and blend until the mixture forms a smooth puree.
  • Pour the water into the soup pot, and stir in the chicken bouillon cubes until they dissolve. Pour in the vegetable puree, and bring the mixture to a boil over medium heat. Stir in split peas, Italian seasoning, cumin, salt, black pepper, cayenne pepper, and curry powder. Reduce heat to medium-low, and cook until the peas soften and break down into a thick soup, at least 45 minutes.

1 cup dried split peas
1/2 teaspoon dried basil
1 bay leaf
2 cups water
2 cups chicken broth
3 tablespoons olive oil
2 cups chopped onions
1/2 teaspoon cumin seed
salt and pepper

Steps:

  • In a saucepan simmer peas, basil and bay leaf in the water and broth, partially covered, until peas are tender, about 35 minutes; discard bay leaf.
  • Meanwhile, heat oil and saute onion and cuminseed over moderately low heat until onions are golden brown, 35-45 minutes.
  • In a blender, puree soup in batches until smooth; return to pan and stir in onions and salt and pepper to taste.

2 jalapenos, seeded and minced

2 T orange zest, minced
salt to taste
your favorite hot sauce

Steps:

  • 1) Heat olive oil in a heavy saucepan on medium and add garlic, cumin, and black pepper. 2 )Saute until garlic just begins to brown (about 5 minutes). 3) Add onion, carrot, celery, and jalapenos-stir well and cook until onions begin to soften (5-7 minutes) 4) Add water and half of the split peas, bring to a simmer stirring occasionally. Cook until peas are tender (about 45 minutes) 5) Add remaining split peas and orange zest and cook on low simmer, uncovered, until all of the peas are tender (30-40 minutes). Season to taste with salt and pepper. 6) Garnish with toasted cumin seeds, orange zest and hot sauce.

1 onion, chopped
1 stalk celery, chopped
1 carrot, chopped
2 small red potatoes, cubed

1 large bay leaf
1/2 cup fresh peas (frozen okay)
1 teaspoon sea salt

  • Saute chopped onion in oil until they begin to soften.
  • Add celery, carrot, potatoes, cumin, and pepper; saute 5-7 minutes.

Split pea soup recipes are often flavored with ham hocks, but this veg version gets its smoky taste from smoked paprika and chipotle chiles. Sweet potatoes and split peas are good sources of potassium, which lowers blood pressure. If split peas are old(after about 1-2 years) they will not get tender, so check the date. Adapted from Vegetarian Times magazine(Feb. 2010).

1 cup split peas
2 tablespoons olive oil
1 teaspoon smoked paprika (can add more to taste)
1 teaspoon chopped chipotle chile, canned in adobo sauce (more if you like it really spicy)
1/2 teaspoon ground cumin (optional)
1 teaspoon oregano, chopped (optional)
1 large sweet potato, peeled and diced (3 cups, you can use winter squash if you like instead or even carrots)
2 medium onions, diced (3 cups)
3 celery ribs, diced (1 cup)
4 -6 garlic cloves, minced (4 tsp.)
6 cups water (or vegetable stock)
1 (14 ounce) can diced tomatoes

Steps:

  • Soak split peas in large bowl of cold water overnight(some reviewers said they boiled the peas for 30 or 40 minutes rather than soaking and it worked fine).
  • Heat oil in 3-qt. saucepan over medium heat. Add paprika, chipotle, and cumin if using, and stir. Add sweet potato(or squash), onions, and celery, and season with salt and pepper, if desired. Cover, and cook 10 minutes, or until onions are soft and translucent. Add garlic, and sauté 2 minutes.
  • Drain split peas, and add to pot with 6 cups water(I use about 4 cups vegetable stock and 2 cups water). Bring soup to a boil, reduce heat to medium-low, and simmer 1 hour. Add tomatoes, and cook 30 minutes more, or until split peas are tender.

GOLDEN SPLIT PEA SOUP

This is from my Low-Fat Moosewood cookbook. Your house will smell like an Indian restaurant! The soup is a beautiful dark gold color. Don't use green or brown lentils, it just won't be the same. This makes a lot, but you can freeze it. Even my one year old loves this! Serve topped with plain yogurt and chopped cilantro. Pass pita bread.

CURRIED SPLIT PEA SOUP WITH FRESH CORIANDER (CILANTRO)

I developed this recipe through years of experimentation. It was based on a cheap dish that a former roommate showed me to make. He said that it litterally cost pennies a bowl. He just boiled a bag of yellow split peas and added spicy curry powder until the taste was right. I needed a little bit more of a fragrant flavour. It's still inexpensive to make and good to freeze. You can top it with some sour cream and/or avocado before serving to mellow the spice.

450 g dried split green peas (you can use yellow too, but I find the green peas softer)
11 1/2 cups water
2/3 cup of chopped fresh cilantro
1/2 cup diced onion
1 shallot, diced
1 green onion, minced
3 garlic cloves, minced
3 tablespoons olive oil
3 teaspoons curry powder
1 teaspoon ground coriander
2 teaspoons ground dehydrated onion (powder)
1/2 teaspoon crushed red pepper flakes
1 teaspoon ground cumin
salt and pepper

Steps:

  • In a large pot on low heat, warm olive oil with the spices (chili flakes, cumin, curry, corriander, onion powder).
  • Stir to form paste. DO NOT let the mixture burn!
  • Add onions, shallots, green onion and garlic. Mix so that nothing burns. This will take maybe five minutes.
  • Add half of the chopped corriander.
  • Rinse split peas in cold water, drain and add to pot. Stir immediately.
  • Turn heat to high.
  • Add the water and stir well.
  • Cover, bring to a boil for 10 minutes then turn heat to medium-low for another 50 minutes, stirring every few minutes.
  • Add the rest of the cilantro in the last 15 minutes.
  • Add salt and pepper to taste.
  • Serve or pack away for freezing.

2 cups yellow split peas, sorted and rinsed
8 cups water
1 bay leaf
2 tablespoons butter
1 tablespoon olive oil
1 onion, finely chopped

1 large lemon, juice and zest of

Steps:

  • Bring the peas, water, and bay leaf to a boil, then simmer until the peas are completely soft, about 45 minutes.
  • Remove bay leaf, press peas through a sieve and return the puree to the soup pot.
  • Melt butter and olive oil in a skillet over medium heat.
  • Add onions and cook until soft. Add carrot, celery, garlic, salt, and ground cumin, and cook 10 minutes.
  • Add the vegetables to the pea puree and simmer until they are soft. (Rinse out the skillet with a small amount of water, then add the water to the soup.) Add lemon peel and juice to taste.
  • Check for salt and cumin and add more of each if desired.
  • Finish with black pepper to taste and serve sprinkled with paprika and garnished with fresh herbs.
