SHRIMP BOIL WITH SPICY HORSERADISH SAUCE

Shrimp Boil With Spicy Horseradish Sauce image

What's for dinner? A big ol' heap of Louisiana, in the form of potatoes, corn, and shrimp. It's all here, it couldn't be easier, and dipping everything in the spicy sauce while you sip a cold beer is pretty much the perfect thing to do on a steamy summer evening.

Yield Makes 4 servings

Number Of Ingredients 11

1 lemon, quartered
5 tablespoons Creole or Cajun seasoning
2 1/2 teaspoons cayenne, divided
2 Turkish bay leaves or 1 California
4 garlic cloves
8 small boiling potatoes (about 2 inches)
4 ears of corn, shucked and halved
1 1/2 pounds large shrimp in shell
1/3 cup ketchup
1/3 cup mayonnaise
1 1/2 tablespoons bottled horseradish

Steps:

  • Squeeze lemon juice into 4 qt water in a 6- to 8-quart pot, then stir in lemon quarters, Creole seasoning, 2 teaspoon cayenne, bay leaves, garlic, potatoes, and 2 tablespoons salt (omit salt if it is the first ingredient in seasoning).
  • Bring to a boil, then simmer, partially covered, until potatoes are almost tender, 10 to 12 minutes.
  • Increase heat to high, then add corn and simmer, partially covered, 4 minutes. Stir in shrimp and cook until just cooked through, 2 to 3 minutes.
  • Meanwhile, stir together ketchup, mayonnaise, horseradish, and remaining 1/2 teaspoon cayenne.
  • Drain shrimp, potatoes, and corn and serve with sauce.

(Mustard can be eaten immediately, but flavors will not have had a chance to meld.)

SWEET AND SPICY HORSERADISH SAUCE OR GLAZE

Sweet and Spicy Horseradish Sauce or Glaze image

This is a perfect simple sauce on grilled or roasted chicken, pork chops or tenderloins, steaks, burgers, brisket, roasts, lamb, spiral hams, or even salmon. But it is so versatile. Add some acidity (either a juice such as oj, or a vinegar) and it makes a wonderful marinade. Rather than eggs - trying using this as a first coat and then finish in bread crumbs and bake. I have made this with chicken and pork and both come out perfect. But my favorite 2 ways is to use it just as a condiment drizzled over or served on the side; and secondly to use it as a glaze on your favorite recipes. Grilled pork tenderloin is wonderful like this. I have even used this as a spread on a grilled sandwich with turkey and havarti cheese. It is a simple 3 minute sauce.

Time 3m

Yield 2 cups, 1-8 serving(s)

Number Of Ingredients 8

1 1/4 cups apple jelly
3/4 cup red currant jelly
2 -3 teaspoons prepared horseradish (more or less to taste)
1 shallot, minced very fine
2 teaspoons fresh thyme
1 pinch red pepper flakes
salt
pepper

Steps:

  • Jelly -- Add the apple and currant jelly to a small bowl and microwave 30 seconds on medium heat. This will loosen up the jelly and make it a bit easier to mix with the other ingredients.
  • Sauce -- To the jelly, add the the horseradish (more or less to taste), shallot, thyme, red pepper flakes, salt and pepper to taste.
  • Serve -- If you serve this as a sauce on the side, you can serve it either warm or cold. Otherwise, it can be made ahead and kept refrigerated. I don't keep mine more than 2-3 days however. I usually make what I need at that time. ENJOY!

SWEET AND SPICY HORSERADISH SAUCE

Sweet and Spicy Horseradish Sauce image

A perfect simple sauce to glaze on roast or grilled chicken, pork beef, lamb or even salmon. It is a simple 2 minute sauce. My favorites happen to be pork tenderloin, chicken breasts and thighs. It is sweet and spicy all in one.

Provided by SarasotaCook

Categories     Sauces

Time 3m

Yield 2 cups or will glaze up to 8 chicken breasts, 1-8 serving(s)

Number Of Ingredients 8

1 1/4 cups apple jelly
3/4 cup red currant jelly
2 teaspoons prepared horseradish (more or less to taste)
1 small shallot, minced very fine
2 teaspoons fresh thyme
1 pinch red pepper flakes
1 pinch salt
1 pinch pepper

Steps:

  • Sauce -- Mix everything (except the thyme) together in a small measuring cup or bowl and microwave for 1 minute on medium heat. Heating it will thin the jelly and make it easy to brush on. Add the thyme after it is heated and it is ready to use.
  • Brush over your favorite meat, poultry, lamb, pork, seafood and even vegetables as they grill or roast in the oven.
