1 tablespoon olive oil
2 cloves garlic (minced)
¼ cup red onion (diced, ¼ inch dice)
1 ½ cups quinoa (uncooked, rinsed with cold water and drained)
1 jalapeño (minced)
1 cup bell pepper (¼-inch dice, red or green)
1 cup zucchini (¼-inch dice)
1 cup black beans (canned, drained and rinsed)
14.5 ounces tomatoes (diced, 1 can with juice)
1 cup corn kernels (fresh or frozen)
½ teaspoon chili powder
1 teaspoon cumin
1 teaspoon kosher salt
½ teaspoon black pepper
2 ½ cups vegetable broth (or chicken broth)
2 tablespoons green onions (thinly sliced )

Steps:

  • Heat olive oil in a large skillet over medium heat.
  • Add garlic and red onion, stir and cook until fragrant, 1 minute.
  • Add quinoa, jalapeno, bell pepper, zucchini, black beans, tomatoes, corn, chili powder, cumin, salt, broth, and stir together.
  • Bring to a boil, then cover and reduce heat to low. Simmer until quinoa is cooked and the liquid is absorbed, about 20 to 25 minutes. You do not need to stir the quinoa as it's cooking.
  • Turn off the heat and allow to sit covered for 5 minutes.
  • Season with additional salt and pepper as needed, fluff quinoa and sprinkle with green onions.

1 (14 ounce) can garbanzo beans, drained and rinsed
½ cup toasted pine nuts

Steps:

  • Stir together the olive oil, onion, and garlic in a saucepan over medium heat until the onion has softened and turned translucent, about 5 minutes. Stir in the quinoa, curry powder, salt, pepper, cumin, cinnamon, and chicken stock. Bring to a boil, then reduce heat to medium-low, cover, and simmer 20 minutes until the quinoa is tender.
  • Once the quinoa has finished cooking, stir in the drained garbanzo beans, toasted pine nuts, and raisins. Serve warm or cold.

1 3/4 cups quinoa
3 cups low-sodium chicken broth
Kosher salt
3 tablespoons vegetable oil
1/2 red onion, thinly sliced
2 cloves garlic, finely chopped
1 tablespoon ancho chile powder
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1 small red jalapeno pepper, seeded and thinly sliced
2 small sweet potatoes, peeled and cut into 1/2-inch pieces
1/3 cup roughly chopped fresh cilantro
1 to 2 tablespoons fresh lime juice

Steps:

  • Put the quinoa in a bowl and cover with water; drain. Repeat twice; drain well. (This will help remove bitterness.) Transfer the quinoa to a medium saucepan over medium heat and stir constantly until the quinoa is dry, about 8 minutes. Add 1 1/2 cups chicken broth, 3/4 cup water and 1/2 teaspoon salt. Bring to a simmer, then cover the pan, leaving the lid slightly ajar to let steam escape; reduce the heat to medium low and cook until the quinoa is tender and the liquid is absorbed, about 15 minutes.
  • Meanwhile, heat the vegetable oil in a large skillet over medium heat. Add the red onion and garlic and cook until slightly softened, about 4 minutes. Add the chile powder, coriander and cumin and cook, stirring, until the spices darken, about 1 minute. Add the remaining 1 1/2 cups chicken broth, the jalapeno, sweet potatoes and 1/2 teaspoon salt. Increase the heat to medium high and bring to a simmer. Cook, stirring occasionally, until the sweet potatoes are tender and the liquid is almost absorbed, about 15 minutes.
  • Add the sweet potato mixture to the quinoa, then add the cilantro and lime juice and toss; season with salt.

1/3 cup extra-virgin olive oil
2 garlic cloves, peeled, smashed
1 tsp. kosher salt
1/2 tsp. ground cumin
1/4 tsp. cayenne pepper (optional)
1/4 tsp. ground cinnamon
1 large egg
2 Tbsp. smooth almond butter or sunbutter
1 1/4 cups cooked quinoa (preferably red)
Vegetable oil (for frying; about 3/4 cup)

Steps:

  • Cook chickpeas, olive oil, garlic, salt, cumin, cayenne (if using), and cinnamon in a medium skillet over medium-high heat, stirring occasionally, until garlic has softened and spices are fragrant, 3-4 minutes. Let cool slightly, then transfer to a food processor. Add egg and almond butter and pulse until a smooth paste forms. Transfer to a medium bowl and stir in quinoa.
  • Scoop out 1 heaping Tbsp. chickpea mixture and use wet hands to roll into a ping pong-size ball. Flatten slightly between your palms, then transfer to a parchment-lined rimmed baking sheet. Repeat with remaining chickpea mixture (you should have about 16 patties).
  • Pour vegetable oil into a medium cast-iron skillet or Dutch oven to a depth of 1/2". Heat over medium-high until shimmering. Working in batches if needed, fry patties, turning often with a slotted spoon, until golden brown, 4-5 minutes. Transfer to a paper towel-lined plate to drain and let cool slightly.
  • Do Ahead: Chickpea mixture can be formed into patties 1 day ahead. Cover with plastic and chill, or freeze on baking sheet until solid, at least 2 hours, then transfer to a resealable plastic bag and freeze up to 3 months. Fry directly from frozen, adding about 1 minute to cook time.

2 teaspoons ground cumin
1 teaspoon garlic powder

1 cup whole grain quinoa
1 medium zucchini, cut in half lengthwise, then cut in 3/4 inch slices
1 small orange bell pepper, cut in 3/4 inch chunks
1 small red bell pepper, cut in 3/4 inch chunks
1 small red onion, sliced and cut in 3/4 inch chunks
1 cup grape tomatoes, cut in half
1 cup peeled baby carrots, cut in half crosswise
2 1/2 cups unsalted vegetable stock or broth
1/4 cup chopped fresh basil, chopped fresh cilantro, and toasted pine nuts (optional)

Steps:

  • Preheat oven to 400°F. Place Reynolds® Oven Bag in 13x9x2-inch pan.
  • Add flour, cumin, garlic powder, salt and pepper to oven bag; gently squeeze bag to blend ingredients. Add quinoa and vegetables; turn bag several times to mix ingredients. Arrange ingredients in even layer in bag. Fold down bag opening two times to hold bag open; set aside.
  • Microwave vegetable stock in a medium microwave-safe bowl for about 4 minutes on high power until stock is very hot. Carefully pour or ladle stock over vegetables. Carefully unfold bag opening.
  • Close bag with nylon tie. Cut six 1/2-inch slits in top of bag near tie. Tuck ends of bag in pan.
  • Bake 20 to 25 minutes or until vegetables are tender and quinoa is soft and translucent. Let stand 5 minutes. Carefully cut top of bag open; stir. Top with fresh herbs and pine nuts, if desired. Season with additional salt and pepper, if desired.

1 teaspoon fresh ginger, peeled and minced

3 cups vegetable stock, heated
salt & freshly ground black pepper

  • Rinse the quinoa well to remove the bitter white coating. Drain thoroughly and set aside.
