SPICED PINEAPPLE SAUCE RECIPE
Spiced chunky pineapple sauce is made with canned pineapple chunks, cinnamon, sugar, and cloves. Serve plain as a dessert or over ice cream, cake, waffles, or pancakes.

- Drain pineapple juice from the cans into a medium saucepan. Set pineapple chunks aside.
- Add the sugar, apple cider vinegar, cloves, cinnamon, salt, and cornstarch mixture to the syrup in the sauce pan and cook over medium heat for 10-15 minutes.
- Add pineapple chunks back to the mixture. Heat to boiling until the sauce starts to thicken, around 2-5 minutes longer.
- Remove from heat and cool. Sauce will thicken more upon standing.
- Serve in dessert sauce dishes.
PINEAPPLE SAUCE

- In the pan heat the oil over high heat and add the green onions. Cook for 5 minutes, then add the salt and pepper and stir for a few seconds. Add the pineapple jelly and plum sauce cook for a couple of minutes and stir in the Sriracha. Stir and slowly drop all but 1 cup of the pineapple chunks (be careful of the splash-- it burns) into the pan. Cook for 5 minutes then remove the pan from the heat and let cool.
- Remove the cooked pineapple from the pan and put into a blender with the pineapple juice and 8 cups water, and grind until the pineapple chunks disappear. Pour the pineapple mixture and the sauce from the pan into a bowl and mix well. Thinly slice the reserved pineapple and mix into the bowl.
- Use this sauce on pork or as a marinade for grilled shrimp.
HAM ROLLS WITH SPICY PINEAPPLE SAUCE
Summer rolls are such a great appetizer because they're so satisfyingly chewy and flavorful but they're not so heavy that they'll ruin your meal. These pack an extra little surprise in the center-canned ham, a salty wonder.

- For the spicy pineapple sauce: Add the pineapple chunks, Thai bird chile, garlic, lime juice, brown sugar, fish sauce and ginger to a blender. Blend until combined. Transfer the mixture to a pot. Heat the mixture over medium heat. Combine the cornstarch with 2 tablespoons water in a small bowl and mix until the cornstarch is dissolved. Add to the hot pineapple mixture and stir to combine. Simmer until the mixture thickens, about 5 minutes.
- For the ham rolls: Cut the ham into 10 slices, then cut each slice into 4 matchsticks. Add the ham to a nonstick pan over medium heat and fry until golden brown. Set aside and let cool.
- Cook the vermicelli rice noodles according to the package. Rinse with cold water. Toss with 1/4 cup pineapple sauce. Set aside.
- Line a plate with a damp paper towel or parchment paper. Wet a few paper towel sheets and wring out the water. Have them standing by to cover your finished rolls. Fill a large shallow bowl with warm water. Dunk one rice wrapper in the shallow bowl of water for about 5 seconds to soften. Move to your work surface. Add 1 leaf of butter lettuce, torn in half, in the center, and top with 4 pieces of the ham, a small pile of the vermicelli noodles, red cabbage, cilantro leaves and mint leaves. Gently pull the bottom of the wrapper and roll over the filling, using your hands to tuck the filling in as you roll. Fold in each side and continue to roll tightly. Add the roll to your damp paper towel-lined plate. Cover the roll with a damp paper towel. Continue rolling until you have 10 rolls, covering with damp paper towels and keeping them separated (if the rolls touch, the wrappers will tear).
- To serve, cut each roll in half on an angle and serve with the spicy pineapple sauce.
SPICY PINEAPPLE SAUCE
This sauce can be used with chicken, meat, fish or even with baked beans. I usually double the recipe as I want to have some on hand in the freezer.

- Heat oil in a saute pan to medium temperature.
- Add garlic and onion.
- Saute about 2 minutes.
- Stir in rice vinegar and crushed pineapple, juice included.
- Add allspice, red pepper flakes and mustard.
- Heat, stirring, about 4 minutes or until bubbly and slightly thickened.
- Blend mixture, either by hand blender or container, until smooth,
- Just before serving, stir in chopped basil and diced red bell pepper.

SPICY PINEAPPLE SAUCE
Steps:
- In a small saucepan, combine pineapple chunks, habanero pepper, and mint leaves. Simmer for 5 minutes. Cool thoroughly and remove mint.
- In a large saute pan, bring 1 cup of corn oil to 325 degrees F. Add wedges of corn tortillas and cook until golden brown on each side, approximately 3 minutes. Drain on paper towels.
- Liberally dust warm corn wedges with sugar and cinnamon mixture.
- Serve pineapple salsa over ice cream with the fried corn tortillas.
SPICY PINEAPPLE SLICES
Steps:
- In a small bowl mix the salt, chile powder, and brown sugar. Sprinkle over both sides of the pineapple slices. Place pineapple slices onto a preheated, oiled grill or grill pan on high heat for 1 minute on each side. Reduce heat to low and continue cooking for 2 to 3 minutes per side or until the pineapple has softened and the sugar has caramelized on the edges.
SPICY PINEAPPLE BBQ SAUCE
Steps:
- Combine the BBQ sauce, pineapple juice and chile-garlic sauce in a small saucepan. Bring to a low simmer, then reduce the heat to very low. Let cook, stirring often, until thickened, about 20 minutes.

- Add the oil to a large non-stick pan, season the steaks well, then fry for 5 mins on each side until golden and almost cooked through. Mix the sugar, soy, tomato purée and most of the pineapple juice in a bowl.
- Add the pineapple rings to the pan and let them caramelise a little alongside the pork. Add the chilli and five-spice to the pan, then fry for 1 min until aromatic. Tip in the soy mix and let it bubble around the pork and pineapple for a few mins until slightly reduced and sticky. Sprinkle with coriander, and serve with rice and Chinese greens.

PINEAPPLE WITH RUM SAUCE
A very nice tart and rum flavored dessert. I tried this fantastic recipe in a restaurant in Waikiki and finally developed my own version.

- Remove pineapple leaves and discard.
- Quarter pineapple lengthwise and cut out and discard cores.
- With a sharp knife, cut fruit from rinds, keeping rinds intact and reserving them.
- Cut pineapple crosswise into 1/4 inch thick slices.
- In a medium size saucepan, melt butter; add 5 tablespoons brown sugar, rum, lemon juice and bring to a light boil.
- Reduce heat and cook over moderate heat for 1 minute, stirring continuously.
- Add pineapple slices, stir to coat and cook for 1 minute, stirring occasionally.
- Preheat broiler to HIGH.
- Line a shallow baking pan with aluminum foil.
- Place reserved rinds in prepared pan and with a fork and a spoon return pineapple pieces to rinds, arranging to near original shape.
- Spoon remaining sauce over pineapple.
- Sprinkle top of pineapple with remaining brown sugar.
- Broil pineapple about 3 inches from broiler elements until slightly charred and heated through, about 6 to 8 minutes.
- Serve pineapple hot with icecream if desired.

Use this as a side dish, or use it as a dessert or appetizer with a dip made of sour cream with nutmeg and coconut flakes.

- Drain pineapple, reserving juice. Set pineapple aside and pour juice into saucepan. Add sugar, vinegar, salt and spices to pineapple juice.

SPICED TUNA WITH PINEAPPLE GLAZE
This is a recipe that I found at another web site and adapted to suit our taste. This has a little bit of a kick. Serve this with jasmine rice to soak up the wonderful glaze!

- Combine the spice rub ingredients in a heavy skillet, mix well, and heat over medium heat, stirring frequently, until spices begin to smoke and become fragrant.
- Remove from heat, cool, place in a coffee grinder and grind until fine.
- To make the glaze, combine the pineapple juice, vinegar, ginger, soy sauce, and brown sugar in a small saucepan.
- Bring to a boil, reduce heat to low and simmer until mixture is reduced by half, about 30 minutes.
- Add the catsup and cook an additional 5 minutes.
- Remove from heat, add lime juice, cilantro and white pepper; mix well and set aside.
- Rub the tuna steaks on all sides with spice mixture.
- Grill the tuna over a medium fire for 4 to 5 minutes per side, or until center is still slightly pink for medium-rare.
- Spread pineapple slices lightly with glaze and grill for 2 to 3 minutes per side.
- Serve grilled steaks on top of jasmine rice with glaze spooned over, top with a slice of pineapple.
