CREAMY STOVETOP MAC AND CHEESE
"One cold night, a dozen friends stopped by and I made them the best mac and cheese ever with a huge conglomeration of cheeses. This version is a little simpler," says Nancy.

- Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8 minutes. Drain and set aside.
- Meanwhile, melt the butter in a large saucepan over medium-high heat. When it begins to foam, sprinkle in the flour and stir until it becomes pasty, about 1 minute. Whisk in the milk and half-and-half and bring to a low simmer. Cook, stirring, until the mixture looks thick, about 5 minutes.
- Add the cheddar and Colby Jack cheeses by the handful to the milk mixture, stirring well after each addition until melted. Mix in the mustard, paprika and hot sauce. Fold in the cream cheese and stir well until melted; season with salt and pepper. Stir in the cooked pasta. Serve the mac and cheese immediately while still warm and at its creamiest!
VEGAN MAC N "CHEEZE"
I love this smooth, creamy rich sauce to pour over pasta for a cheesy, comforting dish! The butternut squash really makes this look like cheese sauce, the cashews make it super creamy, and the nutritional yeast gives it the cheesy flavor. I've made this using Banza, a gluten-free pasta made from chickpeas (and it's delicious)! But feel free to use your favorite pasta! Enjoy!

- Bring a large pot of water to a boil.
- Heat the olive oil in a large saucepan over medium heat. Add the diced onion and cook until softened, 1 to 2 minutes.
- Add the celery and carrots and cook until the vegetables have softened, 1 to 2 minutes. Add the butternut squash and cook until slightly browned, 6 to 8 minutes. Add just enough water (about 2 cups) to barely cover the vegetables. Add the cashews and 1 teaspoon salt, bring to a boil and cook until the vegetables are tender when pierced with a fork, about 10 minutes, but cooking time will vary slightly, depending on the size of the vegetables.
- For the pasta: Salt the water and cook the pasta to al dente according to package instructions. Drain and set aside.
- For the breadcrumb topping: Roughly chop the bread and pulse in a food processor until the bread resembles coarse crumbs. Heat the oil in a small skillet over medium-high heat. Add the breadcrumbs, garlic powder, paprika and salt and toss to combine. Cook, tossing regularly, until golden and crispy, 3 to 5 minutes.
- Transfer the vegetable-cashew mixture to a blender along with the remaining cooking liquid. Blend until smooth, then add the nutritional yeast, garlic powder and the remaining 1/2 teaspoon salt. Blend until smooth, then taste and adjust the seasoning to taste.
- Pour the creamy sauce over the cooked pasta and toss to combine.
- Sprinkle with crispy breadcrumbs and parsley and serve.

NANNY'S SIMPLE MACARONI AND CHEESE
Gosh, there are so many Mac and Cheese recipes! I looked at many before deciding to post my favorite recipe from childhood. My grandmother makes this all of the time. My girls and I love it but the Hubby doesn't like it much. "Too bland" he says. Great comfort food!

- Boil pasta according to package in salted water.
- For firmer pasta reduce boiling time by a few minutes.
- Drain.
- Grease a deep casserole dish (I use a spray).
- Place a layer of macaroni, enough to cover the bottom, in the casserole dish.
- Add a layer of cheese slices covering the macaroni.
- Very lightly season with salt and pepper (I actually skip this and we add salt and pepper to taste on our individual servings).
- Repeat these layers until you are out of pasta.
- Pour milk over the casserole until the milk almost reaches the top of the casserole dish (It doesn't take much because the dish is already full of pasta and cheese).
- Bake covered for about 45 minutes to an hour in a 350 degree oven.
- You'll know it is finished cooking when the milk is no longer liquid.
- Sometimes I add leftover ham chunks to the layers.
- Cook time and servings are approximate!

MAWMA NANCY'S MAC AND CHEESE
I make this dish for any big family gathering. I have a granddaughter who always ask for this at our holiday gatherings. This make a big amount. My recipe was also featured in a cook book by Gooseberry Patch. It was in "Sunday Dinner At Grandma's". I was very pleased as i received a copy of this cookbook.

- In a large bowl,combine cooked macaroni,butter,milk,mozzarella cheese,3 cups of the cheddar cheese, salt and pepper. Stir in eggs.

- Cook the macaroni in boiling water for about 10 minutes until tender but still firm. Drain well and set aside.
- In a deep skillet, melt the butter over medium heat. Add the flour to make a roux and cook, stirring, to remove any lumps. Pour in the milk and cook until the mixture is thick and smooth. GRANDMA'S BAKED MACARONI AND CHEESE
This is my Grandmothers recipe for macaroni and cheese. Serves about 8 comfortably, more if its served as a side dish. I had to guess at the serving size as she says "depends on how many are eating and how hungry they are". Very tasty! This is creamy, cheesy kid pleasing (and adults love it too)!

- Cook Macaroni, drain and rinse.
- Make White Sauce by melting the butter then add flour, salt pepper.
- Remove from heat and stir in milk.
- Once mixed return to heat and stir into a thick/smooth sauce.
- Combine above white sauce with Grated Cheese, Onions, Mustard, Worcestershire Sauce; save a little cheese for the top.

MOMMA'S DEEP-DISH MAC 'N' CHEESE RECIPE BY TASTY
My momma makes the best (and easiest!) deep-dish macaroni and cheese. It's like a baked mac 'n' cheese pie with a combination of smoked Gouda, pepper Jack, mozzarella, cottage cheese, and more. It's one of our family's favorite dishes and a holiday must-have.

- Preheat the oven to 325°F (160°C). Grease a 7 x 11-inch (17 x 27 cm) baking dish with butter.
- Bring a large pot of salted water to a boil. Cook the macaroni according to the package instructions until al dente, then drain and return to the warm pot.
- Add butter to the macaroni and stir until melted and the noodles are well coated.
- In a large bowl, stir together the sour cream, cottage cheese, 1 cup cheddar, ½ cup Gouda, ½ cup pepper Jack, ½ cup mozzarella, the cheese sauce, evaporated milk, salt, black pepper, garlic powder, onion powder, and cayenne until well combined.
- Add the sauce to the pot with noodles and mix until fully coated. Season with more salt and black pepper to taste. Stir the eggs until well incorporated.
- Pour the macaroni into the prepared baking dish and smooth in an even layer.
- In a medium bowl, toss together the remaining 1 cup cheddar, ½ cup Gouda, ½ cup pepper Jack, and ½ cup mozzarella cheese. Sprinkle the cheese mixture evenly over the noodles.
- Cover the baking dish with foil. Bake for 30 minutes.
- Increase the oven temperature to 425°F (220°C). Remove the foil and bake for another 10 minutes, until the cheese is golden brown. Let cool slightly before serving.
