BAKED APPLE EMPANADAS
Small half-circle doughy dessert with apple-cinnamon filling. You can fill these with anything if you don't like apple. This is a good base recipe that can be altered any way you like! My family loves these!

- Mix butter and cream cheese together in a bowl. Stir in flour until dough comes together and forms into a ball. Cover tightly with plastic wrap and refrigerate 8 hours to overnight.
- Combine apples, sugar, cinnamon, and salt in a saucepan. Bring to a boil. Reduce heat and cover; cook, stirring frequently, until apples are the consistency of chunky applesauce, about 15 minutes. Remove from heat and cool to room temperature.
- Remove dough from the refrigerator and let sit at room temperature for 30 minutes.
- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- Divide dough into 10 pieces and roll into balls. Roll out each ball into a 3- to 4-inch circle with a rolling pin. Fill one side of the circle with apple filling. Moisten edges lightly with water. Fold dough over the filling and press edges together to seal.
- Arrange empanadas on the prepared baking sheet.
- Bake in the preheated oven until dough is golden, about 15 minutes.

Empanadas de Manzana These Baked Apple Empanadas are famous in Mexico, and combine 3 traditional elements typically seen in Mexican-style empanadas: A flaky pastry that is baked (not fried), a sweet fruit filling and a coating of sugar that lends an irresistible crunch to the crust. Here, tart granny smith apples are the fruit of choice, and are spiked with cinnamon and cloves before getting stuffed into the dough and baked. For an authentic Mexican experience, serve these little treats for breakfast or dessert with coffee or hot chocolate.

- Step 1 Add apples, brown sugar cane, lemon juice, 1 tsp. ground cinnamon and ground cloves to small pot; set pot over medium heat. Cook, stirring occasionally, until sugar dissolves and apples begin to release their liquid. Reduce heat to medium low. Cook, stirring occasionally, until liquid evaporates and apples are tender, about 20-25 minutes. Transfer cooked apples to bowl; chill until cold. (Note: Filling can be stored covered in refrigerator for up to 1 week.) Step 2 Heat oven to 425°F. In small bowl, mix sugar with remaining cinnamon until combined; set aside. Step 3 On lightly floured work surface, using rolling pin, roll out puff pastry round until about ½" larger in diameter. Spoon 2 tbsp. cooled apple mixture into middle of dough. Moisten edges with beaten eggs; fold in half to form half-moon shape. Seal edges by pressing with fork; transfer to parchment-lined baking sheet. Repeat with remaining pastry rounds and filling to make 12 empanadas. Brush tops of empanadas with beaten eggs; sprinkle with cinnamon sugar. Using tip of knife, make small slit in top of each empanada to vent. Step 4 Bake until empanadas are puffed and golden brown, about 20 minutes, rotating pan after 10 minutes for even browning. Transfer empanadas to cooling rack; let sit until cool enough to handle. Serve warm or at room temperature.
APPLE SAUCE EMPANADAS

- Add the flour, sugar and salt to a food processor and pulse to mix. Add the butter and process until the mixture resembles wet sand. Add the cream cheese and pulse until the dough comes together in large clumps. Place the dough on a floured surface and gently knead two or three times, just enough to incorporate the cream cheese. Form the dough into an oval disk, place in a plastic bag and chill, 15 to 30 minutes.
- Preheat the oven to 350 degrees F. Roll the dough into a rectangle, about 15-by-10-inches. Cut the dough with a sharp knife into 6 squares, about 5-inches each.
- Beat 1 teaspoon water and the egg in a small bowl, to make an egg wash.
- Fill each dough square with about 2 teaspoons applesauce. Use your fingertips to moisten the dough edges with a little water. Fold the dough over to create a triangle. Use your fingers to press the dough gently together, then crimp the seal with a fork. Brush the tops of the triangles with the egg wash. Sprinkle the egg washed-tops with the cinnamon sugar. Place the triangles on a baking sheet lined with parchment and bake until the triangles are golden brown, about 15 minutes.
- Be careful, the filling will be hot, so cool the empanadas about 15 minutes before eating.

- Heat oven to 400°F. Combine apples, 1 cup of dulce de leche and brown sugar in bowl, mix until well blended. In a small bowl combine lightly beaten egg and water. Line a baking sheet with parchment paper. Spoon about 2 Tablespoons apple mixture onto center of each empanada disk, brush edges with egg mixture and fold over dough, using a fork seal edges together well and place them on prepared baking sheet. Lightly brush top of empanadas with egg mixture. Bake 18 min. or until golden brown. Cool slightly. Serve drizzled with remaining 2 Tbsp. dulce de leche and topped with COOL WHIP.

- Pastry:.
- In a medium bowl, mix flour and salt; cut in shortening until crumbly. Stir in water until completely moistened. Divide pastry into 2 equal portions. Roll out each portion thinner than you would for pie crust. Cut into circles with a 3-1/2" biscuit or cookie cutter.
- Apple filling:.
- In a medium saucepan, simmer diced apples, cider, sugar, cinnamon, and nutmeg over low heat until apples are soft. In a small bowl, mix cornstarch with enough water to form a thin consistency; stir into apple mixture and cook until mixture thickens.
- Assembly and cooking:.
- Brush pastry circles with beaten egg. Place a small spoonful of apple mixture in center of each circle. Fold pastry over filling to form a half circle. Press edges together with a fork to seal.
- Heat 1 cup of cooking oil to 400 degrees in an electric skillet. Place several empanadas in hot oil at a time, cooking on one side, and turning over when golden brown. Cook second side until golden brown. Remove and drain on paper towels.
- Sprinkle tops of empanadas with cinnamon and sugar mixture.

- Thaw apples in microwave at half power 6 to 7 minutes; let stand 3 minutes. Stir together apples and flour.
- Melt 1/4 cup butter in a medium skillet over medium heat; add apple mixture, brown sugar, and allspice. Cook, stirring constantly for 4 minutes or until thickened. Remove from heat. Coarsely mash apple mixture, and set aside.
- Stir together baking mix and 1 cup whipping cream with a fork until moistened. Turn dough out onto a lightly floured surface, and knead 3 to 4 times.
- Roll dough to 1/2-inch thickness. Cut into 12 (5-inch) squares.
- Divide apple mixture into 12 servings and place 1 serving in center of each square. Fold 1 side of square over, pressing edges with a fork to seal. Place on a lightly greased baking sheet. Brush tops evenly with 2 tablespoons melted butter.
- Bake at 400F for 18 to 20 minutes or until golden brown. Serve immediately.
