3 tablespoons soy sauce, divided
2 tablespoons cornstarch
1 lb boneless pork loin, fat removed and thinly sliced into bite-size pieces
1 tablespoon dry sherry
1/2-1 teaspoon crushed red pepper flakes (I used the full teaspoon and it had a very pleasant heat element to it)
2 tablespoons butter
1 large red bell pepper, diced
1/3 cup sliced green onion
1 teaspoon grated gingerroot
hot cooked rice

Steps:

  • Blend 2 tablespoon soy sauce and cornstarch in medium bowl.
  • Add pork, tossing to coat well.
  • Blend remaining soy sauce and sherry in small bowl and set aside.
  • Cook and stir crushed red pepper in butter in large skillet over medium heat until pepper turns golden brown.
  • Add pork mixture.
  • Cook and stir for 5 to 7 minutes or until pork is no longer pink.
  • Remove pork from skillet and set aside.
  • Add red pepper, green onions and ginger to same skillet.
  • Cook and stir for 3 minutes or until tender-crisp.
  • Return pork to skillet with sherry mixture and cook for 2-3 minutes more, stirring constantly until pork is cooked.
  • Serve over rice.

1 tbsp vegetable oil
500g pork fillet, cut into thick slices
1 garlic clove, thinly sliced
300g Tenderstem broccoli, cut into 3cm pieces
2 red onions, cut into thick half moons
50g toasted unsalted cashew
1 tbsp dark soy sauce
1 tbsp Chinese black or red wine vinegar
1 tbsp rice wine or sherry
1 heaped tsp chilli bean sauce or chilli sauce
1 tbsp liquid chicken stock
1 tsp golden caster sugar
2 tsp cornflour dissolved in 2 tbsp water

Steps:

  • In a small bowl, mix together the sauce ingredients and set aside. Heat the oil in a large wok. Season the pork and sear in batches, then remove and set aside.
  • Fry the garlic until golden - about 30 secs - then add the broccoli and onions. Stir-fry for 2 mins, then add the pork and cashews along with the sauce. Keep stir-frying for another 2-3 mins until everything is hot and simmering.

6 leaves stem lettuce (celtuce), cut into 1/2-inch pieces
1 pinch salt
2 teaspoons water
1 teaspoon cornstarch
½ pound lean pork, cut into 1/2-inch cubes
1 teaspoon rice wine (sake)
¼ teaspoon salt
2 tablespoons chicken stock
2 teaspoons soy sauce
½ teaspoon Chinese black vinegar
½ teaspoon white sugar
3 ½ tablespoons vegetable oil
1 tablespoon finely chopped pickled red chile peppers
2 teaspoons chili bean sauce ((toban djan), such as Lee Kum Kee®)
3 spring onions, diced
2 cloves garlic, sliced
1 (1/2 inch) piece fresh ginger, sliced

Steps:

  • Combine stem lettuce and pinch of salt in another bowl.
  • Combine water and cornstarch in a small bowl; stir into a smooth paste.
  • Transfer half of the cornstarch paste into a larger bowl. Add pork, rice wine, and 1/4 teaspoon salt. Mix well and let marinate, about 5 minutes.
  • Whisk remaining cornstarch paste, chicken stock, soy sauce, black vinegar, and sugar in another bowl to make sauce.
  • Heat oil in a wok or large skillet over high heat. Add pork with marinade; cook and stir until browned, 3 to 4 minutes. Stir in pickled chile peppers and chili bean sauce; cook until oil turns red, about 1 minute. Add spring onions, garlic, and ginger; cook and stir until fragrant, about 1 minute. Stir in lettuce; saute until tender, 2 to 3 minutes. Pour in sauce and toss until thickened, about 3 minutes.

1 lb pork tenderloin, sliced 1/4-inch thick
3 tablespoons reduced sodium soy sauce
1 teaspoon steak sauce
2 garlic cloves, minced
2 tablespoons minced fresh onions
1/8 teaspoon crushed red pepper flakes (or to taste)
2 tablespoons peanut oil
2 cups cauliflower florets
2 medium any color sweet bell peppers, cut in 1-inch squares
2 tablespoons coarsely chopped dry roasted peanuts
hot cooked rice

Steps:

  • Stir together pork tenderloin slices, soy sauce, steak sauce, garlic, onion and red pepper in a gallon ziplock bag. Marinate 30 minutes in the refrigerator.
  • Preheat wok & add oil.
  • Stir fry pork tenderloin mixture on high heat 4 - 5 minutes.
  • Stir in cauliflower and pepper squares & continue stir frying until vegetables are barely cooked.
  • Top with peanuts and serve with rice.

1 cup chicken broth or 1 cup water
2 tablespoons light soy sauce
12 ounces ground pork
1/4 teaspoon red pepper flakes
6 scallions, cut in 1 1/2-inch pieces
1 large carrot, shredded
1 tablespoon minced garlic
1 tablespoon minced ginger
3 tablespoons creamy peanut butter
chopped cilantro (to garnish)

Steps:

  • Bring a large pot of water to boil. Cook linguine as package directs. Stir together broth and soy sauce in a measuring cup.
  • Heat a large skillet over medium-high heat. Add ground pork and red pepper flakes. Cook 5 minutes, breaking up, until browned and no longer pink. Add scallions, carrot, garlic and ginger; cook 3 minutes.
  • Stir broth mixture and peanut butter into pork. Cook until peanut butter is melted and blended.
  • Reserve 1 cup pasta water. Drain linguine, add to skillet and toss to evenly coat with sauce. (Stir in some pasta water if needed to keep mixture creamy). Sprinkle with cilantro.

3 tablespoons hoisin sauce
1 tablespoon soy sauce
1 teaspoon sugar
1 tablespoon vegetable oil
4 garlic cloves, thinly sliced
2 cups red bell peppers, cut into 1-inch squares
2 cups green bell peppers, cut into 1-inch squares
12 ounces lean boneless pork, cut into bite-size strips
1 teaspoon ground ginger
2 cups hot cooked noodles or 2 cups rice

Steps:

  • In a small bowl, stir together the hoisin sauce, soy sauce, and sugar.
  • Set aside.
  • Heat the oil in a wok or large skillet over medium high heat.
  • (Add more oil as necessary during cooking.).
  • Stir fry the garlic in the hot oil for 15 seconds.
  • Add the bell peppers and ground ginger.
  • Stir fry for 3-4 minutes or until crisp-tender.
  • Remove the pepper mixture from the wok.
  • Add the pork to the hot wok.
  • Stir fry for 3-4 minutes or until no pink remains.
  • Push the pork away from the center of the wok.
  • Pour the sauce into the center of the wok.
  • Stir all ingredients together until they are well coated with the sauce.
  • Cook and stir 1 minute longer, or until heated through.
  • Serve immediately over hot cooked noodles or rice.

I devised this recipe years ago to use up some leftover pork. Nowadays, we don't wait for leftovers! The spicy dish is easy to prepare, and in addition to broccoli, you can use almost any combination of fresh vegetables.

1 pound fresh lean pork (tenderloin or roast)
6 to 8 green onions
1 medium green or sweet red pepper
1-1/2 cups fresh broccoli
1 large onion
12 edible-pod peas
3 tablespoons peanut oil or vegetable oil
SAUCE:
2 cloves garlic, sliced
2 slices fresh ginger, chopped
1/4 teaspoon crushed red pepper flakes
2 tablespoons hot water
2 teaspoons sugar
6 tablespoons ketchup
4 tablespoons soy sauce

Steps:

  • Cut pork into narrow 1-in. strips, 1/4-in. thick; set aside. (Partially freeze pork first for easier cutting.) Cut green onions, peppers, broccoli and onion into 1-in. pieces; set aside. Combine garlic, ginger, pepper flakes, hot water, sugar, ketchup and soy sauce (or substitute 8 tablespoons prepared Hoisin Sauce for the ketchup and soy sauce); set aside. In wok or large skillet, heat peanut or vegetable oil over high heat. Stir-fry the pork in oil until browned; remove from wok and keep warm. Add more oil if necessary and stir-fry all vegetables tender/crisp. Add pork and sauce mixture; cook until thickened. Serve with boiled rice.

  • Heat wok or 12-inch skillet over high heat until hot. Add oil; rotate wok to coat side. Add pork; stir-fry until no longer pink. Add broccoli, onions and water chestnuts; stir-fry 2 minutes.
  • Stir in broth; heat to boiling. Stir in peanuts. Serve with vermicelli.
