1 (4 ounce) package fresh basil leaves
1 (10.5 ounce) container cherry tomatoes, halved
24 small skewers, or as needed
salt and ground black pepper to taste

Steps:

  • Wrap each mozzarella ball with a basil leaf.
  • Thread a tomato half, a basil-wrapped mozzarella ball, and another tomato half onto a skewer. Repeat until all tomatoes are on skewers. Sprinkle with salt and pepper.

Fresh basil, larger leaves torn in 1/2
Sea salt and freshly cracked black pepper
Extra-virgin olive oil
Good aged balsamic vinegar

Steps:

  • Using a skewer, put 1/2 tomato, cut side up, followed by a piece of mozzarella, basil, second piece of mozzarella and finish with another tomato half. Season skewers with salt, pepper, oil and vinegar.

8 ounces bocconcini, Small Fresh Mozzarella Balls
1/4 cup extra virgin olive oil
2 tablespoons balsamic vinegar
6 thinly sliced fresh basil leaves
1/4 teaspoon kosher salt
1/4 teaspoon pepper
32 (4 inch) wooden skewers

Steps:

  • Thread 1 tomato half, 1 piece of cheese, and another tomato half onto each skewer. Place skewers in a shallow serving dish.
  • Whisk together oil,balsamic, salt, and pepper. Drizzle oil mixture over skewers. Sprinkle with basil, and salt and pepper to taste.

20 bocconcini (mozzarella balls)
1 cup extra-virgin olive oil
1 teaspoon red pepper flakes
Kosher salt and freshly ground black pepper
One 15-ounce jar plum preserves
1 cup balsamic vinegar
20 fresh rosemary sprigs
2 pints grape tomatoes

Steps:

  • Put the bocconcini in a large bowl with the olive oil, red pepper flakes and some salt and pepper. Cover with plastic wrap and marinate in the refrigerator for at least 1 hour.
  • In a food processor or blender, puree the plums with the balsamic vinegar until smooth. Pour the mixture into a medium pot and bring to a boil over medium-high heat. Turn the heat down to simmer and cook until the mixture has reduced by about half, several minutes. It should be fairly thick, but remember, it will continue to thicken as it cools. When cool, pour it into a squeeze bottle and refrigerate.
  • Trim about 2 inches of the leaves off the bottoms of the rosemary sprigs. Skewer a tomato followed by a bocconcino onto each. Arrange on a platter, cover and refrigerate until ready to serve. Just before serving, squeeze over the plum balsamic drizzle.
