- In a large bowl, beat cream cheese until smooth. Beat in milk and lime juice until blended. Transfer to crust. Refrigerate, covered, at least 4 hours. Just before serving, garnish with whipped topping and, if desired, lime slices.

Not usually my kind of recipe--I am ordinarily kind of a purist (i.e., I'd rather make REAL key lime pie with REAL key limes)--but this is simply fantastic. My friend who lives in my apartment complex made it and gave me the recipe.

- Beat milk and lime juice in large bowl with electric mixer on medium speed until smooth and thickened.
- Fold in whipped topping.
- Spoon lime mixture into pie crust.
- Cover and refrigerate about 1 hour or until set.
- Garnish with grated lime peel.

EASY KEY LIME PIE DIP
This dessert dip is a tangy twist on classic key lime pie with a buttery graham cracker crumble topping. Easier than pie.

Steps:
- Cream together the creamed cheese and the greek yogurt using a standing mixer or hand mixer on medium speed.
- Slowly beat in 1/2 cup of the powdered sugar, then 1 Tablespoon of the key lime juice. Repeat until it is all incorporated and smooth. Mix in the food coloring, if using.
- Pour the graham cracker crumble topping on top.
- Dip stuff!
- Melt the butter in 10-second increments in the microwave and allow to cool a bit.
- Place the graham crackers in a resealable sandwich bag and crush lightly with a rolling pin. I like to leave some bigger pieces intact instead of pulverizing-you do you.
- Pour the melted butter onto the graham cracker pieces and seal the bag. Shake and massage to distribute as evenly as possible until the it's well-absorbed.

- In a bowl, mix together the sweetened condensed milk and lime juice until blended; set aside.
- Beat egg whites at high speed until just foamy.
- Add sugar, 1 tablespoon at a time, beating until soft peaks form and sugar is dissolved.
- Fold egg white mixture into lime mixture.
- Pour into a 9-inch pie plate.
- Bake at 325 degrees for 25 minutes.
- Take out of the oven and stir well.
- Place in a serving bowl and cover; chill in the refrigerator for 4 hours.
- Serve with graham crackers.

- Whip the cream cheese until it is fluffy. Add the key lime juice and sugar, and then the condensed milk. Continue to mix on high speed until fluffy and combined. Will have the consistency of a thick frosting. Refrigerate, and serve with graham crackers, vanilla wafers, ginger snaps, sliced fruit, etc.
