2 ounces unsweetened chocolate, melted and cooled
Sugar substitute equivalent to 1 cup sugar
1 teaspoon vanilla extract
1/2 cup chopped pecans

Steps:

  • In a small bowl, beat the cream cheese, chocolate, sweetener and vanilla until smooth. Stir in pecans. Press into an 8-in. square dish lined with foil. Cover and refrigerate overnight. Serve chilled.

3 1/2 ounces sugar-free chocolate pudding
1 small reduced fat graham cracker crust
2/3 cup Dream Whip topping mix
2/3 cup Dream Whip topping mix
1 1/4 cups water
1 1/4 cups water
1/2 cup Cool Whip
2 tablespoons pecans, chopped
1/4 cup mini chocolate chip

  • 1.) whisk chocolate pudding powder (dry) with 2/3 cup non-fat whipping powder and 1 1/4 cup water.
  • 2.) spread over crust.
  • 3.) whisk butterscotch pudding powder with 2/3 cup non-fat whipping powder and 1 1/4 cup water - in same bowl as chocolate.

  • 5.) put in fridge to set.

1 (14 1/2 ounce) can low-fat evaporated milk
3 tablespoons powdered cocoa mix
1/4 cup light margarine
1/2 cup Splenda granular
1/4 teaspoon salt
1 teaspoon vanilla
2 1/2 cups graham cracker crumbs
1/4 cup finely chopped pecans

Steps:

  • Combine milk and cocoa in saucepan. Beat well. Add margarine, sugar and salt. Bring to boil.
  • Remove from heat. Stir in remaining ingredients except 1/4 cup graham crackers. Cool about 15 minutes.
  • Divide mixture into 32 balls and roll in remaining cracker crumbs and chill.

1 ounce unsweetened chocolate
1/8 teaspoon cinnamon
3/4 teaspoon liquid sweetener
1/4 cup water
1/2 cup evaporated milk
1/2 teaspoon vanilla
1/4 cup chopped nuts

Steps:

  • Soften gelatin in 1/4 cup water for 5 minutes.
  • Melt chocolate with cinnamon and sweetener; add milk and water slowly.
  • Add gelatin.
  • Stir until dissolved.
  • Remove from fire.
  • Add vanilla, cool.
  • When mixture begins to thicken, add nuts.
  • Turn into cold pan.

1 ¾ cups evaporated milk
3 ½ cups granular sucralose sweetener (such as Splenda®)
1 teaspoon vanilla extract
1 cup chopped walnuts

Steps:

  • Line an 8-inch square baking pan with aluminum foil.
  • Place chocolate in a food processor; pulse until finely chopped.
  • Pour evaporated milk into a microwave-safe bowl. Stir in sweetener, 1/2 cup at a time, until dissolved. Add vanilla extract. Stir in chopped chocolate.
  • Heat mixture in the microwave in 30-second intervals, stirring after each interval, until chocolate is melted and smooth, about 2 minutes total. Stir in walnuts.

1/4 c cold water
2/3 c splenda
2 Tbsp butter
1 pkg sugar free hershey's chocolate chips (9 oz)
1 tsp vanilla
1/2 c nuts (optional)
2/3 c powdered milk instant

Steps:

  • 1. Combine the water and dry milk in a medium saucepan. Stir til smooth. Add the Splenda and butter and heat on stove on medium heat stirring constantly. Stir til butter is melted and mixture is warm but not boiling. Remove from heat.
  • 2. Stir chocolate chips and vanilla until chips are melted and mixture is smooth and glossy. (1 1/2 Cups of semi-sweet chocolate chips can be substituted if you can't find the Hershey's sugar free ones.)
  • 3. Fold in nuts. Pour onto wax paper and refrigerate until firm. (1-2 hours)

  • This recipe calls for the use of a microwave. However, you could make this on the stove using a double boiler or similar method. Also, you will need a large microwave-safe bowl for cooking this as well.
  • Prepare a square glass baking dish with aluminum foil which also overlaps the sides of the dish. Grease or spray this lined baking dish to prevent sticking as well. You can set this aside.
  • I like to start by spraying my bowl with nonstick before cooking in it. Place the chocolate chips into the bowl and cook for 30 seconds on medium. Covering the bowl loosely with a microwave safe paper towel can help prevent a possible mess (at least in my kitchen). Stir in the evaporated milks and then the sugar alternative, butter and vanilla. Cook for another 30 seconds and stir again. Continue this process until everything has melted and blended together- about 4- 4 1/2 minutes total.
  • Obviously this will be hot so please take precautions. Remove the bowl from the microwave and pour the fudge into the prepped baking dish. Allow to cool at room temperature. Then refrigerate your fudge until you are ready to cut it into squares.
