SOUR CREAM BLEU CHEESE DRESSING



Sour Cream Bleu Cheese Dressing image

A friend of mine gave me this recipe more than 30 years ago. It is still the best Bleu Cheese dressing I've had.

Number Of Ingredients 7

2 ounces blue cheese, softened
1/4 cup cooking oil
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon garlic, minced (or garlic powder)
1 cup sour cream (I almost always use plain yogurt, drained of whey)
4 tablespoons cider vinegar

Steps:

  • Gradually add 2 tablespoons oil to softened bleu cheese; blend until smooth.
  • Add remaining oil and other ingredients, one at a time, blending well after each addition.
  • Store covered in refrigerator and stir before using.

1 cup mayonnaise
1/2 cup crumbled Maytag or other blue cheese (about 3 ounces), divided
1/2 cup half and half
2 tablespoons sour cream
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon Worcestershire sauce
1/2 teaspoon kosher salt
Freshly ground black pepper

Steps:

  • In a medium bowl, whisk together the mayonnaise, 1/4 cup blue cheese, half and half, sour cream, lemon juice, Worcestershire, and salt, until smooth. Gently stir in the remaining 1/4 cup blue cheese and season with pepper to taste. Use now or store in the refrigerator for up to 3 days.

6 ounces (about 1/3 pound) double cream blue veined cheese, softened to room temperature
1/2 cup heavy cream
1/2 cup sour cream
Salt and pepper
2 pinches ground cayenne pepper

Steps:

  • Mash softened cheese with fork in a bowl. Whisk in the cream and sour cream into cheese, the consistency should be smooth with an occasional small bit of blue. Season with salt, pepper, and cayenne pepper.

My family's favorite blue cheese dressing--absolutely fabulous! It is even delicious made with fat-free sour cream, low-fat mayonnaise, and fat-free buttermilk. Great as a dip for vegetables or celery sticks served with buffalo chicken wings. This recipe came from a dear friend who graciously shared it many, many years ago.

12 ounces sour cream
8 ounces blue cheese, crumbled
1/2 cup mayonnaise (Hellman's or Dukes)
1/2 cup buttermilk
1 teaspoon onion salt
2 garlic cloves, minced

Steps:

  • Mix all ingredients together, except blue cheese.
  • Add blue cheese and mix to distribute evenly.
  • (Mixture will be very thick).
  • If you like, add a little more buttermilk.
  • Pour into large container and store in refrigerator.
  • It will keep indefinitely.

And it's so simple, anyone can make it and feel like a real gor-may type chef! I usually use light (not the non-fat)mayo and sour cream and it's incredibly rich.

1/3 cup mayonnaise
1/3 cup sour cream
1 tablespoon lemon juice
1/8 teaspoon cracked black pepper
1 pinch salt
1/3 cup blue cheese, crumbled (or more)

Steps:

  • Combine the mayonnaise, sour cream, lemon juice, pepper, salt and half of the bleu cheese in food processor or blender.
  • Process until well combined.
  • Remove to storage container, and stir in remaining bleu cheese.
  • If too thick, stir in milk or water until of desired consistency.
  • On the off chance you've got any left over, store tightly covered in the refrigerator for no more than 5 days.
  • Not that it will be likely to stay around that long.

2 tablespoons olive oil or 2 vegetable oil
1/4 cup mayonnaise
1 tablespoon fresh lime juice or 1 tablespoon lemon juice
1 tablespoon red wine vinegar
1/4 cup sour cream or 1/4 cup plain yogurt
2 -4 ounces blue cheese, crumbled into small pieces
1/4 teaspoon salt (to taste)
1 dash louisiana hot sauce (to taste) or 1 dash ground cayenne pepper (to taste)

Steps:

  • In a small mixing bowl, beat together the oil and mayonnaise until completely blended.
  • Add the lime juice and beat some more.
  • Add vinegar and beat again.
  • Stir in sour cream, blue cheese, salt and hot sauce.
  • Serve over your favorite salad.
  • Will keep in the refrigerator for several weeks.

2 -3 dashes Tabasco sauce

Steps:

  • Process all ingredients except blue cheese in food processor until smooth.
  • Empty ingredients into bowl and mix in blue cheese. (You can also process the blue cheese in the food processor, but I like my dressing chunky.).
  • Taste and adjust seasonings.
  • Cover and refrigerate.
