Steps:

  • Heat the oven to 375 degrees. Spray a 2-quart shallow baking dish or casserole with cooking spray.
  • In large bowl, toss the apples with sugar, 2 tablespoons of flour, cinnamon, salt, and nutmeg. Spoon the mixture into the baking dish.
  • In a medium bowl, combine rolled oats, ½ cup flour, brown sugar, baking soda, butter, and sour cream. Mix until the dry ingredients are moistened. Crumble over the apples.
  • Bake for 30 to 40 minutes or until the topping is deep golden brown and the apples are tender.
  • Serve warm with whipping cream or ice cream.

Steps:

  • Preheat oven to 350 degrees. Make topping: In a medium bowl, combine butter, brown sugar, pecans, oats, cinnamon, and salt. With a pastry cutter or your hands, blend until butter is incorporated and mixture resembles coarse crumbs. Refrigerate until ready to use.
  • Make batter: Butter and flour an angel-food cake pan or 14-cup Bundt cake pan. In a large bowl, whisk together flour, baking soda, cinnamon, and salt. In another large bowl, using an electric mixer, beat butter and sugars on high, scraping down bowl as needed, until light and fluffy, about 4 minutes. Beat in eggs, one at a time, scraping down bowl after each addition. Add sour cream and beat to combine. With mixer on low, gradually add flour mixture and beat just until combined. With a rubber spatula, fold in apples and pecans; transfer batter to pan. Top with crumb topping and, with a butter knife, gently fold some of topping into batter. Bake until a toothpick inserted in middle comes out clean, 60 to 70 minutes. Let cool in pan on a wire rack 15 minutes, then turn out onto rack and let cool.

This addition of sour cream in this coffee cake makes it so moist and delicious! This is one of my all-time favorite cake recipes, I have even made this cake with fresh blueberries adding in 1 tsp almond extract to replace the vanilla, or you can even add it in when using apples --- this cake is fantastic without the topping and just used as a white cake --- I usually double the brown sugar topping and spread half of the cake batter in the pan then sprinkle half of the topping then top with remaining batter, the batter will not really cover the topping mix if you are using a 13x9-inch pan but not to worry it will bake together just fine and besides you will be sprinkling the remaining batter on top anyway! --- serve this with whipped cream or ice cream, *SO* delicious!

Steps:

  • Position rack in center of oven and preheat to 375.
  • Butter a 9-inch tart pan with 1 1/2 inch high sides and removeable bottom. (I use a springform pan) Set aside.
  • For crust:.
  • Blend flour, butter, sour cream, 1 T sugar, hard-boiled egg yolk, cinnamon, nutmeg and salt, till mixture resembles coarse meal.
  • Transfer all but 1/2 cup of mixture to prepared pan.

Family and the folks from church love this cake from Ann Byrn (The Cake Mix Doctor). I've made it many times and experimented with different pan sizes. I've listed my results below so you can choose to make it "moist and gooey" or with a firmer cake base (my preference). Slicing the apples takes some time, but since the recipe uses a cake mix, it goes together faster than you think! This was a "hot item" when sold at a church bake sale (sold in disposable pans).

1 (18 1/4 ounce) package yellow cake mix
1 cup sour cream
8 tablespoons butter, melted
1 egg
4 -5 apples, large, peeled and sliced 1/4 inch thick
1 tablespoon lemon juice
1/2 cup sugar
1 teaspoon cinnamon

Steps:

  • Place a rack in the center of the oven.
  • Preheat the oven to 350°F.
  • Lightly grease the pan(s) of your choice according to how moist or firm you like your cake.
  • 9x13 inch pan for a moist, gooey cake.
  • 10x15 inch jelly roll pan for a firmer, sheet cake.
  • Or 2 8x10 disposable pans for firm cakes (that are great for bake sales.).
  • In a large mixing bowl, place the cake mix, sour cream, 4 Tablespoons butter and the egg.
  • Blend on low speed just until the mixture forms a thick dough (about 1 minute).
  • Gently press the dough evenly over the bottom of your chosen pan(s) so that it reaches the sides.
  • Bake for 10 minutes.
  • Meanwhile, toss the apple slices with the lemon juice in another mixing bowl.
  • Combine the sugar and cinnamon in a small bowl.
  • Remove the cake from the oven but leave the oven on.

  • Sprinkle the sugar mixture evenly over the apples.
  • Drizzle the remaining 4 Tablespoons of melted butter over the sugar mixture.
  • Return the pan(s) to the oven and bake the cake until it is golden brown and a toothpick inserted in the center comes out clean (30 - 40 minutes for the firmer cakes), (Ann Byrn bakes her 9x13 for 30-32 minutes but this was too gooey in the center for me).
  • Remove the pan from the oven and place it on a wire rack to cool for 20 minutes.
  • This is wonderful warm but also too good to resist when cool.
  • Store covered at room temperature for 3 days or in the refrigerator for up to a week.
  • I have not frozen this cake but it says you can wrap it in foil and freeze it.

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x12-inch baking dish generously.
  • Whisk flour, sea salt, baking powder, and baking soda together in a bowl. Set aside.
  • Combine walnuts, brown sugar, white sugar, salt, cinnamon, and melted butter in a bowl. Mix until walnuts and sugar are thoroughly coated with butter.
  • Cream butter and sugar together in another bowl with a spatula until well blended. Add 1 egg and whisk until mixture is smooth, 2 to 3 minutes. Whisk in second egg until thoroughly incorporated. Add vanilla extract and yogurt; whisk together. Add flour mixture to wet ingredients; whisk just until flour disappears. Do not overmix.
  • Remove cores from apples. Cut across into 1/8- to 1/4-inch slices. Stack up a few slices, make 1 cut down the center, and dice across into cubes. Add to cake batter, folding in with a spatula until just combined.
  • Spread 1/2 of the batter evenly into the bottom of the prepared baking dish. Scatter 1/2 of the crumble mixture evenly over the top. Top with the rest of the batter in dollops. Spread carefully to evenly distribute, trying not to disturb the crumbs. Top with the rest of the crumb mixture. Press crumbs into the batter very gently.
  • Bake in the center of the preheated oven until a toothpick or bamboo skewer inserted into the center comes out clean, about 40 minutes. Let cool to room temperature, about 30 minutes, before slicing and serving.

1/3 cup (65 g) sugar
2 tablespoons cinnamon (or according to taste)
4 tablespoons (2 ounces/60 grams) unsalted butter (melted)
For the Cake Batter:
3 1/2 cups (1 pound/450 grams) cake flour ( OR 3 1/4 cups all-purpose flour, and 1/4 cup plus 1 tablespoon cornstarch)
2 teaspoons baking powder
6 ounces (1 1/2 sticks/170 grams) unsalted butter, room temperature (cut into small bits)
3/4 cup (6 ounces/170 grams) sugar
2 large eggs
1/2 cup (120 ml) milk
8 ounces (250 grams) sour cream

Steps:

  • Preheat oven to 375 F/190 C. Grease and flour a large tube pan. In a small bowl, combine cinnamon and sugar. Place the melted butter in another small bowl. Set aside.
  • In a large bowl, whisk together the cake flour (or all-purpose flour and cornstarch), and baking powder. Rub the butter into the flour until the mixture resembles breadcrumbs. Add the sugar and stir to combine.
  • Make a well in the center of the mixture. Put the eggs, milk and sour cream into the well. With a wooden spoon, slowly begin mixing the wet ingredients into the dry ingredients until the mixture is combined. (The batter will be very thick).
  • Spread half the batter into the bottom of the prepared pan. Drizzle evenly with half of the melted butter. Then, sprinkle half of the cinnamon and sugar mixture on top of that.
  • Spread the rest of the batter on top of the cinnamon and sugar. Drizzle with the remaining melted butter, followed by the rest of the cinnamon and sugar mixture.
  • Bake for 50 minutes to an hour, or until a tester inserted into the center comes out clean. Be careful not to overcook as this makes the cake dry.

1 cup walnuts, coarsely chopped
1 cup granulated sugar
1/2 cup all-purpose flour
1 teaspoon ground cinnamon

16 ounces sour cream
2 eggs, room temperature, lightly beaten

6 Golden Delicious apples (about 2 1/2 pounds), peeled, cored, and sliced into 1/4-inch wedges

Steps:

  • Make the pie dough: Combine flour, salt, and granulated sugar in a food processor, and pulse to blend. Add butter, pulsing until pea-size clumps form. With machine running, add water, 1 tablespoon at a time, until mixture just comes together. Shape dough into a disk. Wrap in plastic wrap, and refrigerate until firm, about 45 minutes.
  • Roll out dough into a 15-inch round (1/4 inch thick) on a lightly floured surface. Fit into a 10-inch pie plate. Trim edge, leaving a 1/2-inch overhang, and fold under, pressing onto rim of pie plate. Use your fingers to create a scalloped edge if desired. Refrigerate until firm, about 1 hour.
  • Make the crumb topping: Whisk together sugars, flour, cinnamon, and salt. Add butter, and combine with a fork or pastry cutter. Stir in walnuts, and press filling into large clumps with your hands; refrigerate until ready to use.
  • Preheat oven to 450 degrees with 2 racks in lower third.
  • Make the filling: Whisk together granulated sugar, flour, cinnamon, and salt in a large bowl. Stir in sour cream, eggs, and vanilla until thoroughly combined. Add apples, tossing to coat. Place apple mixture in crust.
  • Place an empty rimmed baking sheet on lowest oven rack to catch any drips, then bake pie 10 minutes. Reduce oven temperature to 350 degrees, and bake until apples are golden brown in places, juices are bubbling, and crust is golden brown, about 45 minutes.
  • Remove topping from refrigerator, and crumble over hot filling. Bake until topping is browned and set, apples are tender, and bottom crust is thoroughly baked, about 50 minutes. Let cool completely on a wire rack, 3 to 4 hours.
