Sometimes we omit the crust for a healthier treat. The filling can be doubled for a thicker dessert.

Steps:
- Mix first four ingredients together and press into a 9x13 inch ungreased pan; bake 15 minutes at 350 degrees.
- Mix remaining ingredients and pour onto crust.
- Bake 20 minutes at 350 degrees, until set.

YUM YUM PUMPKIN BARS (LOW FAT TOO!)
My mom had a big crop of butternut squash this year and my son loves pumpkin bars, so the squash became our "pumpkin" this year. These are just as good as the recipes that call for a cup of oil--and much better for you.

Steps:
- Mix 1st five ingredients (pumpkin through sugar) and blend well.
- Add the remaining ingredients and stir until well mixed.
- Pour into 13 x 9 x 2 inch pan (or jellyroll pan).
- Bake at 350 for 25 - 30 minutes or until a toothpick inserted in center comes out clean.
- Mix cream cheese, powdered sugar, and vanilla to make frosting. If not firm enough, add more powdered sugar. Add a little milk if it's too stiff.
- Cool bars and frost with frosting.
- Cut into bars and enjoy!

MOM BINNEY'S FAMOUS PUMPKIN BARS
My Mother-in-law's pumpkin bars are so delicious that I had to give you her recipe. She gave it to me in 1993, and we enjoy them in small squares on the cookie tray at Christmas. You can also bake it in a 13x9x2 inch cake pan for 45-50 minutes and cut into squares.

- Preheat oven to 350 F.
- Grease a 15x10x1 inch pan.
- Combine all bar ingredients except nuts and raisins.
- Beat at low speed until moistened.
- Beat 2 minutes at medium speed.
- Stir in nuts and raisins.
- Pour into greased pan.
- Bake at 350 F for 25-30 minutes or until toothpick inserted in center comes out clean.
- Cool completely.
- Frosting: Combine all ingredients, beat until smooth.
- Frost cake when cooled.
- Cut into bars.
- Store in fridge.

MOM'S PUMPKIN PIE
Family pumpkin pie recipe, it just wouldn't be Thanksgiving without mom's pumpkin pie. Makes 2 pies.

Steps:
- Preheat oven to 450 degrees F.
- Brush the entire pie shell for each pie with egg white, and place in the refrigerator (prevents filling from soaking into crust).
- In a large bowl, combine pumpkin, eggs, sugar, milk, cinnamon, nutmeg, ginger, and salt; mix well.
- Pour filling evenly between the two unbaked pie shells.
- Bake for 10 minutes at 450 degrees F, reduce the oven temperature to 325 degrees F.
- ,and continue baking 50 minutes or until a toothpick inserted in the center comes out clean.
- Remove from oven; cool.

- Mix the first four ingredients in a bowl (eggs through pumpkin).
- Mix the remaining ingredients in a bowl (flour through nutmeg). Combine flour mixture with wet mixture. Beat together until combined.
- Pour into two 9 x 13 inch pans. Bake at 350 for 25-30 minutes.
- To prepare the cream cheese frosting, combine the listed ingredients (cream cheese through powdered sugar). Add more milk or powdered sugar to reach desired consistency.
- Frost bars when cool. Enjoy! :-).
